Ever heard of a Two-ingredient Gluten Free Cheesecake? The base is made with @treeislandyogurt full fat Greek Yogurt. We are taking a quick break from all the Thanksgiving preparations now to make a quick breakfast strata for tomorrow. Recipe ⬇️ #CelloSquad ☀️☀️☀️☀️☀️☀️☀️
Cello Breakfast Strata
•1 1/2 cups grated Cello Italian-Style Fontal Cheese
•2 tablespoons grated Cello Asiago Cheese
•4 cups cubed bread
•1 lb chicken sausage, prepared (we sautéed ours)
•8 eggs, at room temperature
•1 1/2 cups milk, at room temperature
•1 tablespoon dijon mustard or 1 teaspoon mustard powder (optional)
•salt + pepper to taste
1.Preheat oven to 350° F. Lightly grease a baking dish.
2.Lightly beat eggs then add milk, mustard, salt and pepper and whisk to combine.
3.Add the bread cubes, the cooked sausage, Cello Italian-Style Fontal cheese, mix gently to combine.
4.Pour into greased dish. Sprinkle with Cello Asiago cheese.
5.Bake for about 50 minutes until the eggs are set and the cheese is golden brown. Cool for about 10 minutes and serve. Happy Thanksgiving.
SOUTHWEST BAKED HAM AND EGGS POTATO HASH
1½ pounds baby red potatoes, quartered
2 bell peppers, cubed (I used a red and yellow bell pepper)
1 cup frozen or fresh corn
1 cup black beans, rinsed and drained
½ cup onion, cubed
2 Tablespoons olive oil
1 Tablespoon McCormick Chili Seasoning
½ teaspoon McCormick Cumin Seasoning
½ teaspoon McCormick Paprika
salt and pepper to taste
1 cup cubed ham
fresh chopped cilantro and sliced avocado for garnish, optional
Preheat oven to 425 degrees. Coat a baking sheet with cooking spray.
Place the potatoes, bell pepper, corn, black beans, and onion on the baking sheet. Drizzle with olive oil and add the chili seasoning, cumin and paprika. Toss to coat and season with salt and pepper. Bake for 15 minutes. Remove pan and add the ham and stir the veggies. Bake for an additional 10 minutes or until potatoes are tender. Remove from oven.
Create 5 wells in the vegetables. Gently crack an egg in each. Return the pan to the oven and bake for an additional 5-10 minutes or until eggs are to desired doneness.
Garnish with chopped cilantro and sliced avocado and serve immediately.
"Breaded and Baked Chicken with our Antipasto Calabrese" This recipe by @pinodicerbo serves up to 4:
4 skinless, boneless chicken breasts, each cut into 4 strips
1 cup all-purpose flour
1-1/2 cups Aurora Italian Style Bread Crumbs
2 teaspoons Aurora Fine Sea Salt
Aurora Antipasto Calabrese
Parsley for garnish
Preheat oven to 400 degrees
Place flour and 1 teaspoon salt into a dish with high sides and mix
Place eggs and the other teaspoon of salt in a second dish with high sides
Add 1 tablespoon of water and beat well
In a third dish with high sides, add the bread crumbs
One at a time, place a piece of chicken into the flour making sure to cover it all over
Shake off excess flour then dip into egg mixture
Again, shake off any excess then dip into the bread crumbs
Gently press down on chicken to slightly flatten (Repeat on other side)
Place onto a parchment lined backing sheet
When all pieces have been breaded, bake in center of oven for about 12-15 minutes or until chicken is cooked through
Place onto serving dish and top with Antipasto Calabrese and chopped parsley

Very true! While I do weigh myself from time to time, sometimes it can do more damage than good.
Nothing knocks the wind out of your sails like not seeing any movement on the scale.

TURKEY WITH BUTTERNUT SQUASH, PECAN STUFFING & CRANBERRY WINE GRAVY
This is my favourite recipe for turkey. I make the most delicious stuffing balls with. Butternut squash onion and herbs and a festive gravy with some cranberry jelly and wine... 1hr 30 minutes Cook Time
2kg roasting turkey
Fresh bay leaves
150ml olive oil
2 onions, peeled and roughly chopped
1 apple, peeled and grated
270g fresh white breadcrumbs
40g pecans, chopped
1 tbsp fresh thyme chopped
1 tbsp fresh sage chopped
1 tbsp chives, snipped
2 1/2 tbsp flour
149ml white wine
500ml good strong chicken stock
1 tbsp cranberry jellly
A few drops of Worcestershire sauce
1 Preheat the oven to 200C (180 C Fan) 400F.
2 Stuff the chicken cavity with half an onion, some fresh bay leaves and some sprigs of thyme.
3 Season the turkey with salt and pepper and roast in the oven for 1 1/4 to 1 1/2 hours basting occasionally.
4 To make the stuffing , heat 1 1/2 tbsp of the oil and sauté the onions for 5 to 6 minutes.
5 Add the apple and butternut squash and sauté for 2 to 3 minutes.
6 Combine with the remaining ingredients and season, then stir in the remaining oil and shape into 16 balls.
7 Arrange the balls on a greased baking sheet for 20 to 25 minutes or until golden and lightly crispy on the outside.
8 To make the GRAVY, strain some of the fat from the roasting tin. Put the fat into a saucepan.
9 Add the flour and whisk in the wine, chicken stock, cranberry jelly and Worcestershire sauce. Whisk until thickened.
10 Deglaze the roasting tin with 100 ml water and add to the gravy.
