I always make a few changes here and there and it's probably no surprise that I made it way more spicy than the recipe called for. The other changes: instead of Swiss chard I used purple kale, I added peas, radish & radish sprouts from my garden and instead of sugar I subbed kecap manis. I absolutely loved this dish! 😋

Asian Dumpling Soup
All Ingredients from Trader Joe's except my Tamari
1 container Miso Ginger Broth
1 container Chicken Broth
1 Chicken Breast, sliced thin
1/4 cup Tamari, soy sauce or coconut aminos
1 teaspoon Umami
1 teaspoon sesame oil
1 teaspoon fish sauce
3 green onions, diced
1 cup shredded carrots
1/2 bag sliced cremini mushrooms
1 zucchini, spiralized or sliced
Raw shrimp (I used 6 per person tonight)
Trader Joe's Potstickers (I used 4 per person)
1/2 teaspoon ground pepper - Pour the 2 broths, Tamari (soy or ánimos), Umami, Sesame oil and fish sauce in a large pot and bring to a boil. Thai Style Mussels with Coconut & Lemongrass from #dinnerthecookbook by @clarkbar
I've really been enjoying this month's #rainydaybitescookbookclub selection. This recipe is another fantastic one from the book, lemongrass, fish sauce, chilies, lime, garlic and more blend together with the mussels and coconut milk to make a delicious and light dinner. I served mine with basmati rice and way more chilies than it called for 🌶🔥🌶

I have been #mia a bit. School is sucking up my life. An accelerated accounting class is no joke. Seriously. I spend every free minute studying. It's hard. At the tail end now. 2 weeks and this week we are off for the holiday weekend. Trying to get back to the healthy eating and exercise before the next class. 👩🏻🍳Sunday Night Thai! I modified this one a little and it was fabulous 🙌🏼This has NO: nightshades, gluten, grain, sugar, dairy, eggs, nuts, seeds or dried spices - not even salt or pepper! 🚫
🍲Gently brown ground grass fed beef over low heat. I used @dakotagrassfedbeef. Sprinkle with several TB #coconutaminos and a couple tsp. @redboatfishsauce Fish Sauce. Sprinkle with salt.
🍲Add 1/2 - 1 cup grass fed beef #bonebroth with fat. Add sliced lemon grass. Simmer gently 1/2 hour.
🍲Add large bunch chopped fresh basil and 1/4 - 1/2 can coconut milk and keep gently simmering while you do the next steps.
🥕Put 2 cups @calorganicfarms pre-shredded tri-color carrots plus a large handful of shredded basil in a bowl. Squish juice of 1 lime over carrots. Add 1/4 cup olive oil and stir.
🍈Add 1/4 cup coconut aminos to a second bowl. Add 1 TB Fish Sauce. Add 1/2 squished lime juice.
🍚Put 3 TB bacon grease in a pan. Cook 1 bag @365bywholefoods thawed frozen organic riced Cauliflower. Add coconut aminos and fish sauce. Sautée until browned. Sprinkle with lime juice and serve into bowls.
🍲Top Cauliflower Rice with fresh shredded basil. Scoop meat out with a slotted spoon and serve over Cauliflower Rice. Squish more lime over meat. Dump carrots & Basil over meat and rice. Drizzle Sauce over the top. Serve!

Grass fed beef red curry bowls with zoodles #paleo#foodismedicine#foodnotdrugs#healthyeating#homegrown @thaikitchen #thaikitchenredcurrypaste#slowcooker 1lb. Grass fed stew beef, 1 onion, 1 inch grated ginger, 3 large garlic cloves & 2 tablespoons @thaikitchen red curry paste added to slow cooker with 1/2 cup water. I turn it on warm before work. Let it cook all day. About 30 minutes before serving add 1 can coconut milk and 1 tablespoons fish sauce #redboatfishsauce and serve over zoodles. Sometimes I add roasted eggplant to my bowls and shiitake mushrooms to my slow cooker if I can get them. Also, I add cilantro on top but it was raining too hard to go pick some from the garden .

What a PERFECT Sunday! 👌🏻 The sun was shining ☀️, ran some errands 🏃🏻♀️ meal prepped and had dinner ready [recipe below] all by 5:30 🍽 Now time to enjoy the remaining weekend hours with my boys. 👨🏻🐶 .
2 chicken breasts, diced ▪️ 1 red pepper, sliced ▪️ 1 yellow pepper, sliced ▪️ 1/2 red onion, sliced ▪️ 1 bag of TJs Riced Broccoli ▪️ 4 Tablespoons sesame oil▪️ 4 teaspoons Thrive Market Coconut Aminos ▪️ 1 Tablespoon chili garlic sauce ▪️ 3 dashes Red Boat Fish Sauce ▪️ 1 teaspoon garlic powder ▪️ S&P to taste
Heat 2 T of sesame oil in a pan ▪️ Add peppers, onions & rices broccoli ▪️ Sauté for 5-7 minutes, then add 2 t of coconut aminos ▪️ Transfer veggies to a plate/bowl ▪️ Add the remaining 2 T of sesame oil to the pan, add the chicken ▪️ sauté until fully cooked ▪️ add the remaining 2 t of coconut aminos, chili garlic sauce, garlic powder and S&P ▪️ cook for an additional 2-3 minutes, then mix chicken with the veggies
