Been in the reintroduction phase and my impatience got the better of me and slipped up trying all kinds of canola oil and sunflower oil ingredients. Made me feel more sleepy and bathroom trips are 'interesting'. No matter, I can change, I'm not a 🌲! WHAT a difference it makes! 🐻 with me here, I'm not one to follow recipes too much! - boil a pot of water and throw in shiratake noodles and the dried shitake mushrooms
- slice up a nice organic chicken breast in chunks and marinate with 3 tbsp of coconut aminos and a tbsp of tapioca flour for starchiness
- prep the sauce: 3 tbsp red boat fish sauce, 3 tbsp coconut sugar and reserve 1/4 cup of that shitake mushroom "umami bomb broth"
- dry fry the Shiratake noodles and set aside. Sautee minced garlic until they have the slightest hint of browning then throw in the chicken. Fry til nicely browned about 5 mins
- slice up a medium carrot into sticks and the shitake mushrooms then add to the chicken
- add the noodles, then add the sauce and simmer until slightly evaporated
- finish with sliced green spring onions and cilantro (I wish I had on hand)
- slice a lime and squeeze as desired
Roasted + Ready to eat. ❤️

Today it got knocked over by accident. The glass shattered easily and I watched it flow everywhere. Fish sauce all over me, the counter and the floor. Sadly laughing, thinking now I'll never have a chance to even sample my first bottle that I had saved for so long. Lesson of the day: don't save anything nice to use for the future...I can never own nice things. 😫😤😱

#Salads and a protein has always been my go to meal so it hasn't been that much of an adjustment for #whole30 . This is a really hearty and light throw together dish I'll be making again. It is salty, sour, sweet, spicy warm, cold, fresh, crunchy and with burnt bits. Just about everything I love.
Charred #eggplant#cucumber and #avocado Salad
4 small-medium sized Chinese eggplant, cut on the bias into 3" pieces
2 Persian cucumbers, cut about equal size
1/2 avocado, sliced
Caramelized onion, (I had about 1/2 cup pre-made)
1/2 cup loosely packed Thai basil (or Italian basil)
Parsley to garnish (or cilantro)
Coconut oil to cook eggplant
1 clove garlic, minced
1 Tablespoon #blackvinegar (or rice vinegar)
Juice of 1/2 lime
1 Tablespoon sesame oil
1/2 jalapeño, sliced
Prep the cut eggplant by soaking them in a brine of 1/4 c salt & water to cover. Place something heavy over them to keep them submerged for 20 minutes - 1 hour.
Drain and let them dry.
Heat the oil and place the eggplant with salt & pepper in the skillet on med-high and char them on as many sides possible-takes about 7-10 minutes.
When they are on the last char side, pour about 1 Tablespoon of the dressing and stir fry the eggplant until they've soaked up the dressing.
Allow to cool and assemble the salads with the other ingredients.
Add eggplant and garnish with parsley.
Add dressing and squeeze of fresh lime.
Tonight's healthy & light dinner 👉 Thai mince with peas in lettuce leaves. 🍃I used a totally gluten free fish sauce called Red Boat 🐟. It's 100% pure, first press 'extra virgin' fish sauce, using chemical-free fermentation methods. And the black anchovy (which fish sauce is made from) is from an island in Vietnam. Delish! 🏖
Day Three of @whole30. Smothered hamburger with caramelized onions and puréed cauliflower. To increase the umami in the burger, I marinated it overnight in @redboatfishsauce fish sauce, garlic and pepper. I added tomato paste and coconut aminos (again, umami) to the mushroom gravy and used some @bobsredmill tapioca starch as a thickener. #whole30#paleo#wholefood#redboatfishsauce
Dinner came together in less than 15 minutes AND was made in 1 skillet. The trick, is that 2/3 of this was left overs. On Friday I posted a recipe for sautéed cauliflower and peppers. There was enough left overs to include in this Chicken bowl. The chicken breast was left over from lunch that I had at a local restaurant. Many restaurants will have a grilled chicken dish on the menu where you can usually get it with one or two. I always get 2 chicken breasts then take one home and save it for another meal. So for tonight's dinner all I had to do was open an 8 ounce bag of snow peas. I quickly cut them with my knife, and then I sautéed them in a skillet with butter, coconut amino's, fish sauce and Tamari. I didn't measure any of those but it was just two to three shakes of each. That only took a few minutes to saute. Then I added a clove of minced garlic and a small drizzle of sesame oil. And cooked for one more minute . I removed the snow peas with a slotted spoon which left a little bit of sauce still in the pan. Then I added the leftover cauliflower and the chicken to warm them both up.

My favourite quick weeknight meal: Lemongrass chicken with vermicelli and crispy buttercrunch lettuce, julienned carrots, and cilantro, topped with fried garlic chips. The dressing is Red Boat fish sauce, fresh squeezed lime juice, and a drizzle of Canadian maple syrup. Believe it or not, this is a freezer meal. Yup, I made a large batch of the lemongrass marinade, dropped it in freezer bags, threw in some boneless chicken thighs, and froze them. The chicken marinates when it defrosts in the fridge overnight. Yum!
I finally got a bottle of #redboatfishsauce . I grew up on Squid and three crabs fish sauce (Viet Huong) and always thought those were the best brands, but they're actually overly high on salt, artificial flavoring, and unknown fillers. My uncle and aunt recommended Red Boat (pure unadulterated fermented anchovies in salt) to use in my cooking and Mega Chef for making dipping sauces, as it's a little sweeter.
