My version of "Crazy Meat" my favorite dish from The Thai House in Orlando. A pineapple red curry with lots of vegetables and vegan chicken strips. I'm doing a broke vegan week since I spent a little extra this month for my birthday party. I was able to make all this with stuff I had leftover in my fridge, freezer, and pantry! This homemade red curry from @saltandlavender makes me wonder why I ever order takeout 😍 I've been slacking on my #foodprep game but I think this is starting to make up for it.

Added chicken and mushrooms, used Thai Kitchen's red curry paste, subbed coconut sugar for brown, subbed water for broth and added cayenne, curry powder, salt and red pepper flakes in the final stage. So. Good.
