Sticky Lime and Ginger Veg and King Prawn Special Fried Cauli-Rice 🍤⠀
Another Fakeaway for the weekend! A healthy twist in Asian flavours ⠀
Chop and sauté veg of choice (I used mushroom, red peppers and aubergine).⠀
Mix 3 tbsp lime juice, 1 tbsp tamari soy sauce, 1 tsp crushed ginger, 1 tsp chopped garlic, 1 tsp sweetener (stevia or honey), black pepper ⠀
Add it to veg and simmer until thickens.⠀
Blend cauliflower to make rice consistency and sauté in a pan.⠀
Add peas, diced spring onion and 1 egg white (30g), chopped chilli (optional) and salt and pepper. ⠀
When almost cooked, add cooked king prawns and mix thoroughly.
Foodie therapy😂👍🏻 I'm a super average baker, especially trying to make things low sugar and keeping it healthy but THESE COOKIES are the best I've ever made! @rachaelsgoodeats recipe was a success! Only sweetened with 3 Tbsp of honey and I used @thecarobkitchen choccies for chocolate chips! May have inhaled 3 as soon as they were done baking.

When making sweet treats, I like to have a good mix of protein, healthy fats, & of course, refined sugar-free sweetness. These peanut butter chocolate oatmeal bars stay true to these standards 🥜🍫 The bottom layer is a mix of gluten-free oatmeal, powdered peanut butter, & a stevia maple syrup. Here, I chose to use powdered peanut butter to keep calories lower... I'm by no means against real peanut butter (obviously, since it's in the next layer), but if I can find a way save some calories in desserts, it's just an added bonus 👍 The middle layer is a mix of peanut butter & collagen peptides (for that hidden protein). And the top layer is a stevia sweetened dark chocolate! A yummy afternoon pick me up snack😋
