I’ve made so many this past week that I think I’ve got the right ingredients down just the way I like them. Not to mention my rolling skills are improving. 🙃 I used to never enjoy homemade spring rolls and have spent too much money ordering spring rolls for take out.
And there are so many different possible dipping sauce choices but never one that pleased my tastebuds until I found the right one.

🍫🥑Chocolate Avocado Pudding with Toppings Bar🥑🍫
Day 11 of #12daysofbettertreats Make this healthier chocolate treat even more fun and festive with a muffin tin filled with delicious toppings. A great dessert for a holiday party or family get together. Both kids and adults can get involved with this interactive treat. 🎉
If you haven’t made chocolate avocado pudding or mousse yet...you need to try it ASAP! So creamy, naturally sweet, and so decadent tasting (but filled with so much healthy fat). There are lots of recipes out there for this chocolatey treat, but I’ll include my easy go-to recipe below.
❤️💚Topping bar: raspberries, chopped pistachios, mini chocolate chips and cocoa nibs, pumpkin seeds, toasted coconut flakes, and pomegranate arils.
❓What would you top yours with??❓
Makes 6-8 small servings
3 large, ripe avocados
1/2 cup cacao or cocoa powder
6 tablespoons milk (I used almond milk but coconut is also great)
1/4 to 1/2 cup maple syrup
Pinch of salt
1/4 tsp vanilla powder
Add everything to a food processor or blender and blend until smooth. Stop to scrape down the sides a few times. Taste and adjust sweetness to your liking. Pipe or spoon into small bowls or ramekins. Chill until ready to serve. 🍫❤️

2/3 cup rice malt syrup
1/2 cup cacao butter, grated
1/4 cup coconut oil
2/3 cup raw cacao powder
1/4 cup tahini
2 Tbsp peanut butter (or more tahini)
1/4 tsp salt
2 Tbsp maqui powder
2 cups of fruit and nut mixture, including
goji berries, golden berries, chia seeds, pistachios and activated almonds
1. Add grated cacao butter and coconut oil to a heat proof bowl. Set over a simmering pot of hot water, and stir until melted. Turn off the heat, the add rice malt syrup, tahini and peanut butter. Stir until well combined.
2. Remove bowl from the heat. Sift in remaining ingredients, and stir until uniform.
3. Add in fruit and nut mix, mix well, then pour into your desired mould (we used a silicone banana bread mould). Set in the freezer for atlas 4 hours.
4. To serve, remove from freezer and allow to defrost for 20 minutes. Use a hot, sharp knife to slice into serves.

Homeward bound after a challenging but really rewarding semester in Bath. Final year is literally flying ✨. A girlfriend of mine recently let me try her home made coconut milk and it was delicious! It inspired me to make my own coffee/tea creamer, that is naturally sweetened by dates and only has three ingredients, all that you’ll be familiar with as opposed to some things you might read on a store bought creamer. It’s delicious and you can make it as sweet as you like by adding more or less dates. I hope you enjoy it as much as I do ☺️. Happy Friday everyone!! .
Coconut Vanilla Coffee Creamer
3 cans organic full fat coconut milk
6 organic dates
3 Tbsp vanilla extract
Soak dates in a bowl of warm water for 30 minutes or so. Once dates are soaked, remove pits. Boil canned coconut milk with dates and add vanilla. Stir until well combined and warmed all the way through. Once warmed through, transfer milk mixture to a blender, blend until well combined and smooth. Feel free to strain at this point, although I don’t mind little bits of date goodness in mine 😋. Store in glass jars or any container that works for you and refrigerate in between use. .

Here's a confession: yesterday I felt so sorry for myself (for being sick) I decided to eat ALL THE FOOD. And all the candy. And all the chocolate. I thought "I can't workout anyway so why care about what I eat?" So I decided it was a good idea to stuff my face with literally everything.
Even tho I have come a long way in my health journey, I still have days when I slip, when I overeat, or eat to satisfy my emotions and not an actual craving. But that's part of the journey! Part of life. I'm just human. And today is a new day 🌟
