Salted chocolate tart (gluten free, refined sugar free, vegan, low fodmap, no dates and no nuts). Find the recipe below 💛
Things you'll need: 9 inch loose bottom tart tin, food processor or high speed blender
1/2 cup desiccated coconut
1 cup oat flour (oats blitzed in a food processor until they reach a floury consistency)
2 tsp Cacao Powder
3 Tbsp Coconut Oil
2 Tbsp Pure Maple Syrup
1 tsp vanilla extract
Small pinch of Sea Salt
Add all of the base ingredients to a food processor and mix for a few minutes until everything is combined and sticky to the touch.
Very lightly grease the tart case with a little coconut oil then press the mixture into the bottom and up the sides of the tin until it's evenly distributed and there are no gaps. Pop it into the fridge while you make the filling.
4 Tbsp Coconut Oil
1 Full-Fat can of Coconut Milk (use set part only, you can save and add the water to a smoothie)
4 Tbsp Maple Syrup
6 Tbsp Cacao Powder
1 tsp Vanilla Extract
A small pinch of good quality sea salt flakes or Himalayan salt
Gently heat the coconut oil, coconut milk, vanilla, and maple syrup in a small saucepan over a low heat until the coconut oil is only just melted and the mixture is smooth. (Do not let the mixture come to a simmer or boil). Immediately remove from heat and whisk in the cacao powder and salt until smooth.
Pour the filling into the prepared base and leave to set in the fridge for a few hours or overnight.
Decorate with fresh berries, starting from the outside working in towards the center.
Once it's fully set, to remove the tart from the tin, sit the tin on top of a can or jar and apply a gentle bit of pressure to help the outer ring come away. Leave the tin base on and transfer to a serving plate.
Serve in modest portions, this is beautifully rich, a little goes a very long way...and people can always come back for seconds.

Dark Chocolate Pistachio Protein Fudge Bites by @rachlmansfield

Serves: About 10 pieces
⅔ cup creamy almond or cashew butter
¼ cup liquid coconut oil (or melted and cooled)
2 tablespoons maple syrup (can sub honey)
1 tablespoon coconut flour
¼ cup REBBL Dark Chocolate Protein (Reishi Chocolate REBBL would be good too)
⅔ cup cacao powder (cocoa powder works)
⅔ cup pistachios, shelled and roughly chopped
3 tablespoons cacao nibs
Add nut butter, coconut oil, REBBL, maple syrup, coconut flour and cacao powder to food processor and blend until smooth (takes about 2-3 minutes)
Once its all smooth, fold in pistachios and cacao nibs and mix with a spatula or spoon (don't over mix)
Line a bread pan with parchment paper and pour mixture into the tray and use a spatula to spread evenly (or use a baking dish of choice or ice cub tray!)
Freeze for at last 50 minutes and then allow to thaw for a few before cutting
Use a sharp knife to cut fudge into small squares and leave them out for 3-4 minutes before enjoying them
*Store in freezer for best quality for up to 1 month!

Today was another cold and wet one! ☔ so it called for two things.. wearing PJ's all day and eating this hot baked sweet potato loaded with yummy goodness! 🤗
I've topped it with coconut yogurt, fresh blueberries, raspberries, cashew butter and @blissfitfoods activated granola 👌👌 How to bake the perfect sweet potato? 🍠🍠🍠 Wash and pierce your potato with a fork, lightly grease potato with coconut oil. Wrap very loosely with foil and bake for 45-1 hour 200c 👍

(Español al final) 🇬🇧Sweet Saturday today! Always so grateful to @deliciousmartha for her amazing recipes. This is an awesome raspberries & pomegranate cheesecake free of refined sugar and guilt!
Ingredients for the base:
-140 gr. dates (soak them in water for a while and them drain)
-100 gr. raw nuts
-30 gr. oats
Grind them all and place in the bottom of the mold, press well; refrigerate.
Ingredients for the cheesecake:
-3 & 1/2 gelatine sheets
-135 gr mascarpone cheese
-235 gr milk kefir
-150 ml plant-based milk
-1 tablesoon raw honey
-150 gr. raspberries
Soak the gelatine in water for a while. Drain and mix with hot veggie milk.
Blend marcarpone, kefir, honey, pomegranate and raspberries. Add the milk with the gelatine and pour over the base we prepared. Refrigerate for a few hours and enjoy!!! so delicious!!!!
🇪🇸Adoramos las recetas de @deliciousmartha, esta de tarta de queso de frambuesas y granada nos ha robado el corazón, está riquísima, sin azúcar refinada y libre de culpa! Con su permiso os vamos a hacer un copia y pega de su receta:
Para la base:
- 140 gr. de dátiles
-100gr. de frutos secos crudos
- 30 gr. de copos de avena
Para el relleno:
- 235 gr. de mascarpone
- 235 gr. de kéfir
- 3,5 hojas de gelatina
- 150 ml. de leche vegetal
-1 cucharada sopera de miel
- 150 gr. de frambuesas
- 1 granada
Para prepararlo: Ponemos los dátiles y las ciruelas deshuesados en un bol con agua caliente, escurrimos bien y ponemos en la batidora con los frutos secos y la avena. Trituramos y pasamos a un molde desmontable con papel vegetal en la base. Extendemos y presionamos con una cuchara. Refrigersmos.
Para el relleno, ponemos la gelatina a hidratar en agua fría. La introducimos en la leche caliente y removemos para que se disuelva. A parte, batimos el queso, el kéfir, la miel y la fruta. Añadimos la leche con la gelatina disuelta, ya templada.
Vertemos la masa en el molde, decoramos con frambuesas y granada... Y a bailar!💃

If you haven’t been there yet, I highly recommend you get down there! Everything is vegan, gluten free & organic. What’s not to love about that?! 😇😇😇
