Banana Pancake Recipe ‼️‼️‼️‼️
1 x banana
1 x cup of flour (any flour will do, I often use #glutenfree all purpose flour)
1 x tbsp. of sweetener (I use organic #stevia )
2 x tbsp. of baking powder
1/8 tsp of Himalayan pink salt (any salt will do)
1 x cup of dairy free milk (I use unsweetened almond milk)
2 x tbsp. of olive oil
1-2 drops of vanilla extract
1. In a bowl combined all dry ingredients – mix well and put to the side
2. In a blender (I use my nutri bullet) combined all wet ingredients including the banana. Blend well until all combined and smooth
3. Add the dry ingredients to the wet mixture and mix well using a spoon. Mixture will rise from the baking soda
4. In a small pan, heat up some olive oil or nuttelex #dairyfreebutter on a medium heat.
5. Add 1-2 tbsp of mixture to the middle of the pan and evenly spread until desired round size (should be roughly 0.5-1cm thick)
6. When bubbles start to form and edges have cooked slightly, flip pancake and cook other side until golden brown.
7. Repeat steps 5-7 until all mixture has been used.
For my topping, I caramelised some banana slices in #coconutsugar on a medium heat for 1-2 minutes. I also used @iquitsugar #ricemaltsyrup for a sweet drizzle.

I love snacks. I love toppings. When snacks and toppings become one, I'm a happy girl. I prefer to make my snacks myself and just fill in with fruit so I know exactly what goes into what I'm eating. Then, if I snack too much, I know roughly how much to change my meals for the rest of the day. These are a concoction of bubbling Nuttelex, vanilla and rice malt syrup mixed through oats and corn flakes, which are then put into the oven to golden up even more before placing in the fridge to get nice and sticky. I've nearly gone through my stash in a week 🙊 .
• Peanut Butter & Coconut Fudge •
▪️blend 2 cups desiccated coconut and 1 cup natural peanut butter in a food processor until smooth
▪️add 4 tbsp melted coconut oil and 2 tbsp rice malt syrup and blend again until all mixed through
▪️set in fridge - easy!!

3 ingredient flourless applesauce brownie with avacado chocolate sauce. Such a dense moist cake. Making applesauce took some time & the avacado I bought tasted like rotten egg, but believe it not, it made a decent sauce & the cake turned out well. Pretty easy to make. I used peanut butter instead of almond butter, so it's not completely sugar-free. @pureharvest Rice Malt Syrup is 👌🏼 RMS can be used as a sweetener in baking or cooking but is also doesn't go astray on top of cereal or yoghurt!
It has such a beautiful sweet flavour.
One of my favourite dressing recipe has Rice Malt Syrup. Simply combine RMS, Tahini and EVOO stir and dress. So easy, so delicious!

Chocolate Peanut Butter Protein Balls (from wholefoodsimply.com)
4 tablespoons peanut butter
2 tablespoons rice malt syrup
1 teaspoon vanilla extract
pinch of salt
1/2 cup Chocolate Protein Powder
2 tablespoons cacao or cocoa
Place the peanut butter, rice malt syrup, vanilla and salt into a bowl and mix to combine. Add the protein powder and cacao or cocoa and mix. Use your hands to work the mixture until it resembles a cookie dough consistency. Shape the mixture into balls and place in the fridge to set.
Serve. Eat. Enjoy.
To make this recipe vegan use plant protein powder.
