Fudgy brownie cacao cake. Inspired from @iquitsugar this is a refined sugar free lunchbox option (or for the adults a great morning/afternoon tea choice) Ingredients #dark chocolate (I used 85%) #butter#spelt flour (you can sub almond meal) #rawcacao#cinnamon#eggs#ricemaltsyrup#vanilla . Raw cacao is no longer a hard to find superfood and it has some #amazingbenefits . For those on a plant based/vegan diet, cacao is a great source of iron! Cacao is also high in the mineral #magnesium 👏🏻 handy given our soils are deficient in it. And it’s a great natural mood elevator - think seratonin 😊 and tryptophan chemicals - they invoke those awesome feelings of wellbeing and happiness and help to alleviate depression! Did you know that cacao has 40 times more antioxidant value than blueberries (source: bestsuperfoods.com) - now that’s impressive! Be choosey with the chocolate you consume as commercial cocoa (and the chocolate made from it) is made from cocoa beans which have been roasted at high temperatures, thereby lowering the beans nutritional value. So besides this yummy cake what are some other ways to enjoy raw cacao? Think smoothies with added raw cacao and cacao nibs sprinkled on top or a hot chocolate made with your choice of milk. How festive are these Rocky road bliss balls from @wholefoodsimply ? I’ll be making these for Christmas for sure but substituting honey with @pureharvest rice malt syrup.
Rocky Road Bliss Balls
14 medjool dates, seeds removed (185 grams)
2 cups walnuts (200 grams)
1/3 cup cacao (30 grams)
1/2 cup pistachios (70 grams)
1/2 cup cashews (70 grams)
1/2 cup goji berries (50 grams)
1/2 cup cranberries (70 grams)
1 tablespoons water (15 grams)
1 tablespoon honey (60 grams)* 1 teaspoon vanilla extract (5 grams)
Place the ingredients into your processor and blend at high speed until the mixture resembles a sticky, textured crumb. The mixture is ready when it does not crumble when you use your hands to press and shape it into a ball. It should be easy to work with.
Rub your hands with coconut oil and firmly press and shape the mixture into balls. Place the balls in the fridge to set.
I've been meaning to try out this nut butter chocolate recipe for ages from one of my favourite cookbooks; "My Petite Kitchen" by @eleanorozich. 🙇🙌 As per usual, I "Swedish chef'ed" the recipe to use what I had on hand. The nut butter used was @mayversfood coconut peanut butter (So yum!) and rice malt syrup in lieu of honey or maple syrup.
