That knobbly little gem on the right is fresh wasabi! It’s native to Japan and incredibly difficult to grow, which also makes it incredibly expensive. The light green paste usually served with sushi is often a mix of mustard, horseradish and colouring. In fact, there are estimates that only 5% of wasabi served in Japanese restaurants around the world is actual wasabi.
