Braised Beef with Polenta Cakes⠀

2 tablespoons olive oil⠀
3 pounds boneless beef short ribs⠀
1 carrot, finely diced⠀
1 stalk celery, finely diced⠀
3 cloves garlic, crushed⠀
1/4 cup tomato paste⠀
2 bay leaves⠀
1 cup red wine⠀
2 cups beef stock⠀
2 tablespoons sherry vinegar⠀
5 cups water⠀
1 teaspoon salt⠀
1 cup fine cornmeal⠀
1 tablespoon chopped fresh rosemary⠀
1 tablespoon chopped fresh sage⠀
2 tablespoons chopped fresh parsley⠀
1 tablespoon grated Parmesan cheese⠀
1 tablespoon olive oil⠀
Preheat the oven to 350 degrees.⠀
In a large, heavy-bottomed oven-safe pot, heat the olive oil and brown the short ribs on all sides. Remove and set aside.⠀
Add the carrot, celery and garlic and cook until golden. Add the tomato paste and cook for 1 minute more. Add bay leaves, wine, beef stock and sherry vinegar and stir.⠀
Return the beef to the pot and bring to a simmer. Cover and transfer to the oven for 2 1/2 hours or until the beef is tender.⠀
Meanwhile, in a large saucepan, bring 5 cups of water to a boil. Add salt and cornmeal and stir. Continue stirring until water cooks off and polenta is cooked, about 30 minutes. Stir in herbs and cheese and transfer to a parchment-lined container to cool. Chill for 2 hours. Cut into desired shapes and pan-fry in olive oil before serving.⠀
To serve, create a bed of polenta cakes and top with beef and cooking juices. Garnish with additional herbs.⠀

This is a delightful collaboration since eating organic produce is what I do and what I encourage everyone to do. There are loads of reasons why eating organic produce is a must, to name few, organic produce is loaded with nutrients, definitely more flavourful, fewer pesticides and free from GMO and most importantly let's all go green not just this Christmas but for the new year ahead for our beloved planet. Hi guys!! I have to say that out of every room in my house this room is probably my biggest nightmare to try and take pictures of🤯 The lighting pours through that window and drowns everything out during the day...and at night it just looks like I covered it with a brown tarp🤷🏼♀️ We have these tan sunscreens on all of our windows out side that I loathe but if you know what an AZ summer is like you know it’s the only thing that keeps my upstairs from catching fire half of the year!! 👹💥🔥☄️
We plan to replace them with just regular dark colored screens at some point when we paint the exterior of our home. Anyways....I feel like this room turned out so much prettier (especially with the Christmas cheer🎄) than these photos show. 😕 Some of you may remember those cool potting tables my mil gave me from her grannnys old potting shed a while ago. One of them was missing a leg and was pretty weathered so I decided to take all of the remaining legs off of her and hang her above my dining room window. It’s got the 4 cubbies that I’ll prob put greens and maybe some white plate sets in after the holidays. ☺️ I also want to add shiplap to that back wall and give it a bit more texture....heck maybe the whole room needs some shiplap🤔 We will have to see what I can talk hubby into😃

🌿Rosemary Pumpkin Risotto🎃
Oh yeah, I really like risottos of any kind 🤩 Sometimes I like to cook one with mushrooms and sometimes I cook a bit more complicated like the one with saffron and duck breast. But mostly I like it when it is ready quickly, it tastes good and I can also drink some wine next to it 🥂And that's most of the time so all good 🤷🏻♂️🙊 This risotto is a very interesting combination of sweet, salty and spicy taste, and also a lot of different textures. Like crunchy pumpkin bites and “aldente” rice. And the aroma of rosemary brings it very closely to my TOP 3 risottos of all time. 🌱You can actually "veganize" it as well. Just use vegetable stock and some kind of vegan butter and vegan parmesan cheese. 🌱The rest of the ingredients can stay as it is.
