This is one of my absolute favorite Sake and also one of my most popular. It's made in the ancient Kimoto style that's all the rage these days but they've been doing it long before it got popular. It's also aged at the brewery 3 years before release (uncommon). Swipe to learn more.

Not much to see, but I am excited nonetheless.
For this new batch of sake, I am trying a split batch again, where one part will be extracted by gravity, and the other part will be pressed from the remainder. I am expecting the sake from the gravity extraction to have a cleaner, and maybe less bitter taste than its pressed counterpart. We'll see!
