Preheat oven to broil. Roast sweet potatoes, Brussels sprouts, broccoli and cauliflower with olive oil and s/p. Roast until crispy edges and tender. Mix ground turkey with your choice of hot sauce and herbs s/p. Form into patties and cook on the stove until each side is browned and cooked through. Sauté some kale with evoo, s/p and any other spices you like. Put everything together and squeeze lemon over the top. A healthy and delicious meal now awaits your taste buds!

Who needs a little food inspiration for lunch!? :) We have changed our Health Tip Tuesday to Health Tip Thursday!:) Every Thursday you can expect a healthy tip, a recipe or superfood spotlight! Today is featuring my (Tiffnee Wertenberger, Health Coach) lunch! 🥗 I like to call it the Ultimate Kale Salad! There is a good amount of prep work that goes into this so I like making 3 servings and portioning them for 3 days worth of ready made lunches! 
1. Start by roasting your favorite veggies! (I like yellow onion, Brussels sprouts, cauliflower, broccoli and/ or asparagus. Roast with some olive oil, sea salt pepper and some paprika) 20 min @ 400 
2. While the veggies are roasting chop up your favorite greens! Mine are kale and romaine lettuce! For kale you can remove the stems. 
3. Mix dressing: 6tbsp apple cider vinegar or balsamic vinegar or even lemon/grapefruit juice, 3 tbsp olive oil, sea salt and black pepper (makes 3 servings)
4. Divide greens into 3 bowls, add roasted veggies AND you are free to add 4-6oz protein(grilled chicken is my go to), then divide dressing onto salads evenly. Put lid on and shake! 👍 •
The vinegar and/ or citrus juices help to break down the kales fibrous texture and pungent flavor! •

#celeriac (celery root) is an ugly looking root vegetable with its knotty exterior. Celeriac has a celery flavour and can be eaten raw or cooked. It is often used as a flavouring in soups, stews, gratins and baked or mashed dishes. Celeriac is a good source of vitamin C, vitamin K, phosphorus, potassium, dietary fiber, vitamin B6, magnesium and manganese. 
I love this kind of #salad, this is a delicious and easy way to use celeriac. Raisins add a nice sweet taste to this lovely salad, but #horseradish more health benefits.

1 can organic chickpeas
1/2 cup chopped pecans
3/4 cup cooked quinoa
1 medium sized carrot, shredded
1 cup chopped artichoke hearts
1/4 cup chopped green onion
3 Tbsp olive oil (I used Blood Orange Olive Oil from @carmodymcknight 
Salt and pepper to taste

Is there anything like a decadent salad? This one tastes delicious and is so easy to prepare. Start by cleaning some lettuce leaves. I used iceberg and romaine. Then chop a tomato, a branch of celery and a quarter of avocado. I had grilled chicken leftover from the Taste of Music City event, so I threw some chopped chicken, roasted garlic croutons and some Monterrey Jack shredded cheese. Top it with your choice of salad dressing, mine is Italian vinaigrette. I just came up with this simple salad today using ingredients I picked up yesterday at the store. It is SO delicious! 🙌 It's also now easily one of my favorite dishes. Here's how I made it:

Mixed greens (spinach, kale, chard, mizuna) on the bottom, followed by peeled carrots, diced tomato and green bell pepper, and spiralized cucumber and zucchini. To make the dressing, use a small blender to blend lemon juice, lime juice, spicy garlic chili (same brand as Sriracha), a small amount of coconut (or any alternative) milk, around 3 tablespoons of peanut butter, and pink Himalayan salt. Drizzle on top or underneath. Top with crushed peanuts. 👌

If you're going to be eating raw (either occasionally or more on regular basis), I highly recommend getting a spiralizer. It's a whole lot of fun turning your veggies into noodles! 💚 The beautiful thing is, eating this way is super affordable. It actually costs more to have meat and dairy in your diet. Did you know humans aren't even omnivores? We're frugivores, like orangutans and other monkeys. "Let food be thy medicine and medicine be thy food." -Hippocrates ~L.O .V.E.

Don't worry, I didn't eat the whole thing in one sitting! I had just a palm-sized piece of this hen 🤚🏽with loads of greens🌿 every day for the week and it was 👌🏽👌🏽
I think there's a bit of a mis-conception sometimes with how much protein we need.
We definitely need a protein source with every single meal, but I often find that people are split half way on this topic: either they're consuming way too little protein and not even thinking about how much they need and why, or they're majorly over-thinking it and consuming way more protein than their body can handle at one time. 
The key is moderation. We definitely want to consume a protein source with each meal to maintain muscle function, mood balance, and so much more, but what about the greens? We often forget that this should be the part that takes up the most room on our plates! 🥗 Actually, about 1/2-3/4 of our plate should be green veggies. Why?  Because we need that fibre to help with digestion and elimination and to maintain blood sugar balance. And why else? Because animal proteins are acidic in nature, and consuming it with tons of greens helps to alkalize the overall meal.🍗🌿🌿
So no need to eat this whole hen at once to get your protein needs. Split it up, load up on the green stuff, drizzle a healthy oil over top, and you have a complete meal.🍗🥗🥑 #acidalkalinebalance #bloodsugarbalance #proteins #organic

Today's lunch, kale salad with dried cranberries, and lemon pepper scallops. 🙌🏽 I went to Aldi this weekend to see if they had organic eggs at a good price, and I found a huge bag of scallops for $10!!!! This probably would have been at least $20 at Kroger or publix! So it looks like scallops will be part of my meal prep life going forward 😬PS. Aldi did indeed have organic eggs at a good price 🙌🏽😌🙏🏼🍳

This refreshing and healthy Summer Salad with Feta makes a quick summer lunch that the whole family will enjoy.

3 medium cucumbers
3 medium tomatoes
8 radishes
1 cup feta cheese crumbles
1/2 cup chopped scallions
2 tbsp. extra virgin olive oil
2 tsp. white vinegar
salt and pepper, to taste
1. Start by washing and cutting the vegetables into bite-sized pieces.

2. Add in the rest of the ingredients and mix well.

3. I love a good salad for dinner on a hot day and I honestly think mine rival anything you could get in a restaurant. This one has romaine lettuce, cucumber, tomato, Quorn (meat substitute- use chicken, it's better), a quarter of an avocado, and a tablespoon of goat cheese. And here's a tip - love croutons but hate the grease and fat? I just toast a slice of light bread, chop it up, and throw it in the salad before adding some homemade dressing. And another tip - to make your own single serving of dressing just use the orange container. I add a little Dijon mustard, some seasoning, 1/2 TBS extra virgin olive oil and 1 TBS red wine vinegar to the container, put the lid on, and shake it up. Counts for whole salad - 2 green, 1.5 blue, 1 red, .5 yellow, 1 orange. Fresh, filling, and delicious.

Second summer salad of the season- this time in response to a mini-glut of radishes! Fennel, radish, apple, walnuts and mint. Had mine with fishcakes, but could work on it's own with crusty bread and a glass of something nice. Also, to sate my home economic tendencies, you can make a really nice soup out of the radish tops (onion, potato, radish tops, stock, add cream or yogurt)
