Day 2 for my #eatasaladeveryday #saladlovers #30daychallenge. (👉🏽Swipe to see video). I’m actually going to take credit for this recipe because I made it up without reading on the internet 🤓. That counts right? LOL. This was so delicious! I sautéed red onions with cremini mushrooms 🍄 and tamari (gluten-free soy sauce) with toasted sesame oil and garlic powder. And I put that on top of my salad...Romaine mixed with spinach, red bell peppers, cucumbers, cilantr, green onions, purple cabbage and carrots. And my dressing was balsamic vinaigrette and olive oil. But truly the flavor from the sautéed mushrooms is was what made this salad the jam. Ahhhhhh. All is love and my body is feeling good! 💚 The trick to having salad every single day is to experiment and make it tasty so you don’t get bored my bunny rabbits. I’m learning too! 😴🥗👏🏽😬🌱 WE GOT THIS. INGREDIENTS

❤ QUINOA, AVOCADO & POMEGRANATE SALAD ❤
Quinoa is a great source of nutrients, healthy fats and protein. Combined that with avocado and this salad is a super healthy option. The flavor of this salad comes from the fresh herbs, a touch of cumin (my secret touch) and lime juice. The pomegranate adds great colour and a splash of natural sweetness. ..

INGREDIENTS
▪️1 cup of quinoa, cooked (I prefer mixed quinoa which adds great colour)
▪️½ tsp ground cumin
▪️½ lime ..
▪️½ cup avocado, cut into cubes (coat in lemon juice to maintain the colour)
▪️2 spring onions
▪️2 tbsp chopped coriander (cilantro) ..
▪️1 tbsp chopped mint, ..
▪️10 cherry tomatoes, quartered
▪️3 tbsp pomegranate seeds ..
▪️Salt and pepper to taste
▪️Mint leaves for garnish.

COOKING THE QUINOA
Wash the quinoa in water. Heat a sauce pan with a splash of oil on medium heat. Add the quinoa and slow fry for one minute until the quinoa becomes transparent. Add 2 cups of water and cover with a lid. When the quinoa starts to boil, turn to a low heat and cook for 30 Minutes. Remove the lid and let the quinoa cool.

In a serving bowl, add the cooked quinoa and the rest of the ingredients. Mix together to combine. .

Okay, so it's been a while since I've posted a recipe -- but I am getting back into the kitchen, and will be posting more Holiday themed recipes! This recipe is inspired by one of my all time favorite salads, the Caprese Salad!! Today's salad, I stacked up some local fuyu persimmon and d'Anjou pear and layered with some thyme seasoned goat cheese between each slice! Served over top some confetti arugula and a homemade vinaigrette with honey, lemon, thyme, and Dijon mustard!! Pair with your favorite light, crisp white wine! Super tasty, and easy to make, this would be a great salad to being to upcoming Holiday Parties! #pinkiesupapproved 👌🏻

Салат 🥗 из кукклолы с апельсинами ,  жареным миндалем и хрустящим нутом  с заправкой из авокадо, горчицы , апельсинового сока и оливкового масла. ••••••••••••••••••••••••••••••••••••••• It doesn’t look so good as it taste . I had to share it with you guys . Very easy salad: rocket , oranges, grilled almonds and crispy cheek peas with avocado/orange juice/mustard/olive oil dressing. .

Outra salada deliciosa e simples de fazer é essa que mistura laranja, tangerina e abacate, com cebolas finamente fatiadas, molho de mostarda de Dijon com mel, raminhos de hortelã  e pimenta do reino à gosto, moída na hora de servir. Rende: 4-6 porções 🥗Ingredientes:

6 xícaras de folhas de rúcula
1 manga, descascada e cortada em longas fatias
1 abacate, descascado e fatiado
½ cebola, fatiada
1 colher de sopa de suco de limão
Para o vinagrete picante de laranja:
1 colher de sopa de vinagre
4 colheres de sopa de suco de laranja, cerca de ½ laranja
2 colheres de sopa de suco de limão, cerca de ½ limão
4 colheres de sopa de azeite de oliva
½ colher de chá de cominho
2 colheres de sopa de coentro picado bem fino
1 pimenta, fatiada
Sal 🥗Modo de preparo

Coloque todos os ingredientes para o molho da salada em um pote, feche bem e chacoalhe até que os ingredientes estejam bem misturados.
Mergulhe as fatias da cebola em água quente com um pouco de sal e 1 colher de sopa de suco de limão por cerca de 10 minutos.
Lave e escoe bem as fatias da cebola.
Coloque metade do vinagrete nas folhas de rúcula.
Acrescente as fatias de abacate, as fatias de manga e as fatias da cebola à rúcula, coloque o resto do vinagrete.

Eu usei pimenta nesta receita para dar sabor e cor, mas você pode usar algo mais leve, contudo após remover as sementes da pimenta elas perdem muito da ardência. Eu pensei em usar alho amassado no lugar da pimenta, mas eu acho que tenho usado alho em tudo o que faço (de verdade as vezes eu acho que não sei cozinhar sem alho, cominho ou coentro), então eu estou dando um tempo no alho para esta salada. Eu gosto de usar a criatividade para manter as saladas interessantes, porque uma salada deveria ser muito mais do que uma tigela de folhas verdes. Quero dizer, folhas verdes são boas, mas existem tantos outros ingredientes e sabores que podem ser adicionados para fazer uma salada se destacar e ganhar personalidade.

Салат 🥗 вариация на тему. Предыстория. Как-то в одном ресторане мне довелось вкусить салат, который навсегда покорил мои вкусовые рецепторы. Скажу, что там было только авокадо, шпинат, манго и манговый соус. 
Я не знаю что было в соусе, но магия не меньше 🤤

Дома я решила поиграть с ингредиентами, сделать его более земным и сытным. ✨
Шпинат, манго, Черри, адыгейский сыр и авокадо с креветками опционально. ✨
Шпинат рвём  крупно, манго, Черри и авокадо нарезаем крупными кусочками.

Есть креветки 🍤- прекрасно, кладём целиком. Нет- идём дальше)

Адыгейский сыр с обеих сторон посыпаем паприкой, перцем, солью (или соевым соусом) и на гриль, или сковородку без масла. Вообще при приготовлении жареного адыгейского сыра используют масло, но честно говоря, я не люблю жарку на масле, да и салат сам по себе тяжелых ингредиентов не терпит. Лёгкость и фотогеничность 📸

Все ингредиенты кроме адыгейского сыра смешиваем, заправляем оливковым маслом, у меня ещё был бальзамический соус. Выкладываем на красивую тарелку, сверху крупные кусочки адыгейского сыра. ✨

Hello, my loves. So I am still here. Ugggh, they don't make it easy lol. Everything is super slow, I guess they just love me so much and they don't want me to go. Anyway, really hope to go home today. Miss my precious babies. On a good note, look at this salad. The hospital staff is understanding and trying to make my stay easier. Last night I had eggplant with breadcrumbs and tomato sauce. It was really good.And for lunch I had homemade potatoes and a mushroom burger. One more time proves, that you can be vegan in any place. No excuses. If you don't ask, if you don't demand, how will they know? Educate people around you. Lots of people are curious and want to know more, but don't know who to ask. Don't judge, just educate. At this point, I just want to sleep in my bed, and really miss my kitchen. Happy that after long 4 months, I finally got an official diagnoses, so I can take it from there. So thank you my friends, I know some of you deeply care about me.Ну что мои дороги, я все ещё пока тут. Уже честно надоело, уже хочу побыстрее домой. Тут работники конечно медленные и никуда не спешат. А я так хочу к свои деткам. Не видала их больше недели , и просто хочу обнять и расцеловать, крепко-крепко. Хорошо, что хоть с едой нет особых проблем. Работники кухни стараются приготовить вкусненькое . Вчера ела синие под томатным соусом и рис. А на обед был грибной бургер и картошечка. Ещё раз доказывает, что не сложно быть веганом. Просто надо говорить с ними, и я уверена , что нормальный человек поймёт. Вообщем, спасибо всем за огромную поддержку. Я очень рада что после долгих 4х месяцев наконец то поставили диагноз. Mushroom salad!

1 pack baby Bella mushrooms sliced
Pack tomadoes halved
1 purple onion sliced
5 tbsp toasted sesame oil
1/4 cup teriyaki sauce 
3 tbsp soy sauce
3 tbsp brown rice vinegar (white vinigar is fine too)
4 tbsp sugar
Juice of one lime

In a sautee pan heat up 5 tbsp sesame oil  with a little olive oil.
Add the sliced mushrooms and let sweat add the soy sauce teriyaki sauce and brown rice vinigar and sugar let simmer for 3 min (till more syrupy) 
Cut up lettuce tomatoes onions add mushrooms with all the juice(sauce) from the mushrooms squeeze in lime juice and enjoy!

‎ریحان تازه ۵۰ گرم
‎کاهو پیچ ۲۰۰ گرم
‎فلفل دلمه ای رنگی ۱ عدد
‎جوانه شبدر نصف پیمانه
‎آناناس خرد شده نصف پیمانه
‎زیتون اسلایس نصف پیمانه
‎نان کروتان نصف پیمانه
‎تربچه ۳ عدد
‎روغن زیتون ۲ قاشق سوپخوری
‎آب لیموی تازه ۲ قاشق سوپخوری
‎پودر پنیر پارمزان ۲ قاشق سوپخوری
‎نمک و فلفل و آویشن به میزان لازم ‎طرز تهیه
‎فلفل دلمه ای رو باریک و بلند برش بدید‫.‬ کاهو پیج رو خرد کنید‫.‬ تربچه رو حلقه ای برش بدید!
‎همه مواد بالا رو در یک ظرف مناسب بریزید‫.‬
‎در یک کاسه جداگانه‫,‬ روغن زیتون‫,‬ آب لیموی تازه‫,‬ نمک و فلفل و آویشن رو اضافه کنید ‫و هم بزنید تا سس یکدست بشه!‬
‎‫سس رو به سالاد اضافه کنید و هم بزنید و روی اون پنیر پارمزان بپاشید و سرو کنید.‬ ‎‫نکات‬

نان کروتان ‬به نان برشته دوباره پخته شده گفته میشه که در کنار یا ترکیبات انواع سالاد های کامل‫,‬ کروتان یا نان تُست و برشته شده هم وجود داره‫!‬
‎‫
‬کروتان ها استفاده های زیادی دارند‫.‬ در ترکیبات سالادهای گرم و سالادهای سبزیجات استفاده میشن، روی سوپ ریخته و یا در ظرفی کنار سوپ سرو میشن‫.‬ در کنار انواع خوراک های سبزیجات یا پوره ها هم میتونید کروتان سزو کنید‫.‬

‬کروتان معمولا با نان حجیم درست میشه و برای تهیه اون بهتره که از نانهایی استفاده کنید که کمی بیات یا سفت شده باشن‫!‬

Made a peanut soy dressing and topped it over a big bowl of lettuce and zuchini noodels 😍 (dressing: Peanut butter, red paprika, coconut aminos, onion, cucumber mixed in the blender, lettuce, zucchini noodles, cucumber, tomato, carrot, seaweed and a little bit of hot sauce). My mom got me this beautiful perfectly sized big wooden bowl. I’m very happy with it! ❤️😘 Workout this morning was inside on the treadmill. It went well 😊👍🏻🏃🏼‍♀️ didn’t mind running inside today although it can get a little boring.
