Who says salads are boring?! Who says you can't have good food while eating clean?! Did you know that nutrition is 80% of the battle in loosing weight and staying fit? You could hit the gym and workout everyday but if you eat whatever you want you could see little to no results. They say you are what you eat. I can tell you when I ate crap I felt like crap 💩 
Just because I've been eating clean doesn't mean I'm eating boring! This salad tonight was delicious and I was so full at the end! And not so full like I just ate a whole pizza or a Big Mac where I feel like...yup you guessed it crap 💩 but just so full and satisfied!

Ingredients:
•Sweet Potatoes
•2 large sweet potatoes peeled and cubed
•1 tablespoon olive oil
•1/2 teaspoon salt
•1/2 teaspoon paprika
•1/2 teaspoon fresh ground black pepper
•1/2 cup quinoa rinsed
•1 1/2 tablespoons extra virgin olive oil
•1 teaspoon sea salt

•1 tablespoon fresh lemon juice
•5 ounces Baby Spinach
•1/3 cup pomegranate seeds
•1/3 cup walnuts toasted

I was lacking in the grocery department today but was able pull together this yummy salad😋🙌🏼 it's always good to have produce front and center and/or in clear drawers so that you can see it. This way you're more likely to eat more veggies or come up with a quick salad like this one:) another trick is to have cut up veggies ready to go to snack on...instead of having the candy/ cookie bowls out;) recipe: organic spinach tossed in avocado oil and pink Himalayan salt, sweet potatoes sautéed in avo oil from @chosenfoods and garlic salt, avo mash with black pepper and lime juice, topped with honey goat cheese, cilantro, and pink radish.... - 2 Tbsp coconut oil
- 1 sm Clove Garlic
- 1 Red Bell Pepper

- we left out the 6" lemongrass, sliced into coins
- we left out chopped peanuts

I made a kale salad for lunch! (And it was dinner last night.) Did you know kale has one of the highest levels of antioxidants of any vegetable, and is loaded with vitamins A&C? It has over 100% of each in one cup! It can be a little tough to eat, and can be bitter, but try this recipe and I think you'll change your mind!

4 cups chopped kale
Juice of 1/2 a lemon
2 tsp olive oil
salt & pepper to taste

My additions: candied walnuts, grilled chicken, low sugar dried cranberries. Adding something sweet balances nicely with the lemon juice. Add anything you'd like!

Put kale in a large bowl, add lemon juice, olive oil and salt & pepper, and (this is the key) give those kale leaves a massage! This process breaks down the leaves making them softer and easier to eat. Letting it sit a little while or over night is great! I can't get enough of this!

Держите рецепт: понадобится 1 сладкий перец, 2 средних помидора, брокколи (столько, сколько и помидоров), репчатый лук по вкусу, 0.5 ст.л. тыквенных семечек, 1 ч.л. подсолнечного масла.
1) Помидоры и перец порезать средними дольками, лук тонко полукольцами.
2) Брокколи бросить на 2-3 минуты в кипящую подсоленную воду. Достать, дать остыть, порезать.
3) Добавить в салат тыквенные семечки.
4) Добавить соль, перец, итальянские травы по вкусу, заправить 1 ч.л. подсолнечного масла.

There is nothing better than a combo of figs, the syrupy aged balsamic vinegar, and cultured vegan cheese. 😋 cantaloupe melon adds sweetness and juice. Washed down with a split pea soup on the side = satisfying nutrient complete lunch 👍

I've been LOVING this salad for my lunches and dinners! For my carb: Qrunch quinoa burger. For my protein: chicken breast. For my healthy fat: olive oil and goat cheese. For my veg/fruit: mixed greens, red onion, strawberries plus sometimes I'll add roasted asparagus or Brussels sprouts to make it more hearty 🙌🏼

Favorite New Salad 🌱 got this from a friend on pinterest then tweaked it a bit. 
Vinaigrette: ( I use these measurements and make a double recipe, I like the salad to have more, but you can use less. This stuff can basically go on anything, it's SO good) 
1/4 cup fresh lime juice
1-1/2 teaspoons agave 
2 tablespoons olive oil
Seasoned salt to taste 
Slaw:
2 cups thinly sliced green cabbage
2 cups thinly sliced purple cabbage
2 carrots, peeled and jukienned 
3 green onions, sliced thin on an angle ( I tend to add more) 
1 cup coarsely chopped cilantro ( you can do 1/2 cup but I like it a lot) 
1/4-1/2 cup of pumpkin seeds ( this could be optional but it adds a nice crunch)
Optional : Cup of cut mango ( I like the champagne mangos) 
Optional : 1 raw Jalapeño diced 
Directions:
Mix the lime juice and agave into a large bowl and slowly pour in the olive oil while whisking. 
Next, add in the cabbages, carrots, green onions and cilantro. You can then add the mango and pumpkin seeds on top or mix them in with the rest of the salad. Make sure it's all thoroughly mixed. 
Serve immediately.

Note: if making this slaw in advance, keep the dressing separate. Refrigerate until ready to toss together and serve.

If you guys caught my post yesterday you already know I'm super pumped about my three summer salad recipes. These salads are perfect for the summer because they feature some of my fav local fruits and veggies, and easily compliment any outdoor bbq party. This salad features all my fav things: tahini, kale and crispy chickpeas. The secret to this salad is to massage the kale and let it sit in the fridge for a bit. This trick will guarantee you a tasty salad and will surely convert any kale haters out there. ⠀

#Day4salad Today I made roasted cherry tomato salad with greens and avocado. #Lunch  INGREDIENTS: Cherry tomatoes (red & yellow), fresh thyme sprigs (if you don't have fresh use dried thyme), Arugula, baby spinach, watercress, red onion, avocado, feta cheese, balsamic vinegar, extra virgin olive oil, lemon juice, salt, flax seeds (pumpkin seeds, chia or any other seeds would work too. You could also add walnuts or blanched almonds for crunch). RECIPE : Pre heat the oven to 200 f. Cut the cherry tomatoes into half and lay them over the baking tray. Sprinkle fresh thyme, salt, chopped or crushed garlic ( 2 cloves), drizzle some extra virgin olive oil over it. You can also add a spoon of sugar to balance the flavor. Leave it in the oven for an hour and half.  Meanwhile chop the onions, round along with avocado. In a bowl, add arugula, baby spinach, watercress, onion rings, avocado. Sprinkle salt and mix gently. Now add feta cheese & oven roasted tomatoes. You may add walnuts and any seeds too. (Pumpkin works the best). Drizzle some extra virgin olive oil, lemon juice and finish it with balsamic vinaigrette and balsamic glaze. For Protein , add some boiled eggs to this !! Made my favorite broccoli, cashew, bacon salad again. It's a really simple salad, nutritionally balanced  with real ingredients and doesn't get soggy!
