Who says salads are boring?! Who says you can't have good food while eating clean?! Did you know that nutrition is 80% of the battle in loosing weight and staying fit? You could hit the gym and workout everyday but if you eat whatever you want you could see little to no results. They say you are what you eat. I can tell you when I ate crap I felt like crap 💩
Just because I've been eating clean doesn't mean I'm eating boring! This salad tonight was delicious and I was so full at the end! And not so full like I just ate a whole pizza or a Big Mac where I feel like...yup you guessed it crap 💩 but just so full and satisfied!
Would you eat this? 🌱Double tap if you need some greens in your life🌱

I was lacking in the grocery department today but was able pull together this yummy salad😋🙌🏼 it's always good to have produce front and center and/or in clear drawers so that you can see it. This way you're more likely to eat more veggies or come up with a quick salad like this one:) another trick is to have cut up veggies ready to go to snack on...instead of having the candy/ cookie bowls out;) recipe: organic spinach tossed in avocado oil and pink Himalayan salt, sweet potatoes sautéed in avo oil from @chosenfoods and garlic salt, avo mash with black pepper and lime juice, topped with honey goat cheese, cilantro, and pink radish.... I wasn't sure about it but YUM 👅 so good😍 Happy Friday, have a beautiful weekend🤗

I made a kale salad for lunch! (And it was dinner last night.) Did you know kale has one of the highest levels of antioxidants of any vegetable, and is loaded with vitamins A&C? It has over 100% of each in one cup! It can be a little tough to eat, and can be bitter, but try this recipe and I think you'll change your mind!
4 cups chopped kale
Juice of 1/2 a lemon
2 tsp olive oil
salt & pepper to taste
My additions: candied walnuts, grilled chicken, low sugar dried cranberries. Adding something sweet balances nicely with the lemon juice. Add anything you'd like!
Put kale in a large bowl, add lemon juice, olive oil and salt & pepper, and (this is the key) give those kale leaves a massage! This process breaks down the leaves making them softer and easier to eat. Letting it sit a little while or over night is great! I can't get enough of this!
How do you eat your kale?
Edamame, radish, & romaine salad jar 💚 Approximately 265kcal, this salad feels super summery! It starts with a delectable buttermilk dressing (1 tablespoon of buttermilk, 1/2 teaspoon of sugar, 1 tablespoon of mayo, a few drops of olive oil, a squeeze of lime, and seasoned with salt and a good crack of pepper). Next comes a handful of chopped mixed peppers, some cucumber sticks, a quarter cup of edamame, a half cup of cooked pasta, some thinly sliced radish, and then filled to the top with crispy romaine lettuce!
Fresh Vegan Autumny Salad! 🍀🍠🍓🍁 This salad contains mashed sweet potato, fresh strawberries (+ cherry tomatoes hidden underneath)Salad leaves dressed with Tangy creamy tahini dressing and topped with roasted ground peanuts.
Strawberries and sweet potatoes went very well together! It's like the best of summer and fall in one plate! Super satisfying and tasty!
I think I'm gonna add sesame seeds and shredded carrot next time :)
Salads can be so boring, am I right? I like lots of crunchy stuff, splash of dressing and a little raisins for sweetness. If you're trying to add bulk to your meals, a delicious salad is the way to do it 🥗
This INSANELY DELICIOUS 🍃Spinach, Kale, Goat Cheese & Walnut Salad🍃recipe is up #ontheblog 🥗 The link to the recipe is in my bio! The perfect quick to make salad to get your healthy eating back on track!🙌🏼🍃 #indulgewithoutbulge
🌽Being back in South Africa reminds me how much I love BBQ corn but I actually grew up calling it Mielie’s. If you’re from South Africa you’ll know what I mean. My Mom would always stop and buy them on street corners.... One of my favourite corn dishes is the traditional creamy stamp Mieles 🇿🇦🙌🏽
I've been LOVING this salad for my lunches and dinners! For my carb: Qrunch quinoa burger. For my protein: chicken breast. For my healthy fat: olive oil and goat cheese. For my veg/fruit: mixed greens, red onion, strawberries plus sometimes I'll add roasted asparagus or Brussels sprouts to make it more hearty 🙌🏼
Simple mid-week fuel 🌱 Wild rice, chickpeas, spinach, avocado, basil, sun dried tomatoes and kalamata olives. Mixed with a simple olive oil and balsamic vinegar dressing. SIMPLE 🌿 // Simple summer salad: romaine lettuce, cucumbers, tomato + leftover corn cut off the cob, all dressed with basil infused olive oil, lemon juice, salt and pepper 🥒🍅🍋 So easy and SO so delicious! 👅
Favorite New Salad 🌱 got this from a friend on pinterest then tweaked it a bit.
Vinaigrette: ( I use these measurements and make a double recipe, I like the salad to have more, but you can use less. This stuff can basically go on anything, it's SO good)
1/4 cup fresh lime juice
1-1/2 teaspoons agave
2 tablespoons olive oil
Seasoned salt to taste
2 cups thinly sliced green cabbage
2 cups thinly sliced purple cabbage
2 carrots, peeled and jukienned
3 green onions, sliced thin on an angle ( I tend to add more)
1 cup coarsely chopped cilantro ( you can do 1/2 cup but I like it a lot)
1/4-1/2 cup of pumpkin seeds ( this could be optional but it adds a nice crunch)
Optional : Cup of cut mango ( I like the champagne mangos)
Optional : 1 raw Jalapeño diced
Mix the lime juice and agave into a large bowl and slowly pour in the olive oil while whisking.
Next, add in the cabbages, carrots, green onions and cilantro. You can then add the mango and pumpkin seeds on top or mix them in with the rest of the salad. Make sure it's all thoroughly mixed.
Note: if making this slaw in advance, keep the dressing separate. Refrigerate until ready to toss together and serve.
BEST SALAD EVER 🌱👍

If you guys caught my post yesterday you already know I'm super pumped about my three summer salad recipes. These salads are perfect for the summer because they feature some of my fav local fruits and veggies, and easily compliment any outdoor bbq party. This salad features all my fav things: tahini, kale and crispy chickpeas. The secret to this salad is to massage the kale and let it sit in the fridge for a bit. This trick will guarantee you a tasty salad and will surely convert any kale haters out there. ⠀

SALADS (any day!) 💚🥗🌱🍃🌿🍠🌱
#Pumpkin and #broccolini are both in season now in Aus. Make the most of it with this salad:
➖Broccollini (oven roasted)
➖Pumpkin (oven roasted)
➖Dressing of orange juice, seeded mustard, and EVOO
#Day4salad Today I made roasted cherry tomato salad with greens and avocado. #Lunch INGREDIENTS: Cherry tomatoes (red & yellow), fresh thyme sprigs (if you don't have fresh use dried thyme), Arugula, baby spinach, watercress, red onion, avocado, feta cheese, balsamic vinegar, extra virgin olive oil, lemon juice, salt, flax seeds (pumpkin seeds, chia or any other seeds would work too. You could also add walnuts or blanched almonds for crunch). RECIPE : Pre heat the oven to 200 f. Cut the cherry tomatoes into half and lay them over the baking tray. Sprinkle fresh thyme, salt, chopped or crushed garlic ( 2 cloves), drizzle some extra virgin olive oil over it. You can also add a spoon of sugar to balance the flavor. Leave it in the oven for an hour and half. Meanwhile chop the onions, round along with avocado. In a bowl, add arugula, baby spinach, watercress, onion rings, avocado. Sprinkle salt and mix gently. Now add feta cheese & oven roasted tomatoes. You may add walnuts and any seeds too. (Pumpkin works the best). Drizzle some extra virgin olive oil, lemon juice and finish it with balsamic vinaigrette and balsamic glaze. For Protein , add some boiled eggs to this !! Note : Watercress has a nice pepper flavor so I have skipped adding pepper. You may add it if you like while roasting the tomatoes. #Saladrecipe#portioncontrol#ketogenicdiet#saladdays#eatraw
Lettuce be thankful for food that heals both our bodies and souls ✨. I've been trying lately to figure out how to make a salad that doesn't suck, and this one took the cake. It's fresh romaine topped with red peppers, broccoli, baby portobello mushrooms, goat cheese, kalamata olives, and a chicken burger sliced. Think about what kinds of foods you think are powerful enough to heal you... now think about what you actually eat. Try to make some healthy swaps this week - for example, instead of chips or pretzels, try carrots and ranch made w/ Greek yogurt! It'll still give you that satisfying salty crunch without possibly inducing inflammation, lipidemia, or a blood sugar spike. Tomorrow's my first day of actual med school, that's right peeps, orientation is DONE! See y'all on the flip side 🌚 #carolinecooksclean#foodismedicine
Made my favorite broccoli, cashew, bacon salad again. It's a really simple salad, nutritionally balanced with real ingredients and doesn't get soggy!
I usually make a mayo salad dressing with it but this time I used greek yogurt and it was just as good.
You can see the ingredients in my instastory
