SALAD BOWL (not so BUDDHA BOWL) 😉
As much I would like to call it a Buddha Bowl, like most restaurants do, I somehow dont feel right in doing so. For one, its not Saatvik and secondly, just the word "Buddha" to be associated with modern non-saatvik food doesnt feel right.
Yeah yeah ... I know what a Buddha bowl is ... but nah .. 😶
So anyway ... made this to finally put a period to all the heavy Diwali mithai and khana. Starting from top, clockwise, the bowl has...
1. Pan grilled pumpkin
2. Shredded boiled chicken, tossed in some sautéd onion and garlic salt
4. Grated carrot with toasted black sesame & black olives
5. Purple cabbage
6. Cherry tomato
7. In the centre is homemade hummus- tahini (sesame paste), chickpeas (boiled n blended), lemon juice, garlic, olive oil, paprika, parsley. .

About last night... and its salad: Local greens, romaine and yellow tomato, roasted chicken, avocado, Wake Robin Farm Pepper Jack Cheese, sprinkle of corn, homemade Ranch dressing seasoned with Dinosaur Bar-B-Que Cajun Foreplay. 😋 👍 🌱 🧀 🍅 🐓
Alright so obviously I don't know how to plate like an Insta pro.
Check out my salad, guys🥗! I couldn't get the angle right, but this thing is a mammoth. It fucking huge. There is so much on this plate, it it piling upwards.
Alright, so we got:
- a shit load of romain lettuce (I don't measure, just pile it)
- 28 grams worth of croutons (a satisfying amount, trust me)
- 28 grams of shredded parmesan cheese (a GLORIOUS amount)
- THE MAIN EVENT: 272 grams of CHICKEN BREAST
- 64 grams of my Botlhouse Farms creamy roasted garlic dressing ommmggggg
All I did was cook the chicken and measure. The amount of actual work for this is very minimal, and that's just what a #lazy lady likes. 🤗💞

Haven't done this in a while but this salad is too sexy not to share. I hate spending $$$ on food besides at the grocery store. I don't eat fast food, not a fan of frozen items and I'd rather cook than waste money on questionable food at a restaurant... I always grab random stuff out of the fridge in the mornings and create my lunch at work. It's cheaper, safer, and more satisfying. Today's salad is grilled chicken on a bed of baby kale, featuring avocado & mango chunks with a lemon vinaigrette and sunflower seeds. I win!
I was super bummed when I came home from MMA tonight and realized my meal plan for a Tri-tip steak salad was a no-go. I ran out of prepped steak 😩... but Shrimp in a can was to the rescue! I discovered this @chickenoftheseaofficial Medium Shrimp the other day and realized I had a can on hand. Super convenient! I warmed it in a pan with #MrsDash Extra Spicy seasoning, and some Garlic Powder. Threw down some spring mix, chopped romaine, 1/2 cup prepped sliced cucumbers, about 2 tablespoons crumbled Queso Fresco and 2 tablespoons raw #Pepitas . Topped it all off with 2 Tablespoons @bolthousefarms Cilantro Avocado dressing and @tapatiohotsauce. Let me tell you, BEST IMPROMPTU SALAD EVER!!!! 😍🙌🏼 it seriously tasted like a Shrimp Cocktail Salad 😍 BombDiggidy.Com This meal packs 31g Protein, 12g Fat and 13g Carbs 😬
