One of our favorite meals - chicken schnitzel with a side of arugula salad with quick pickled shallots and toasted pine nuts and lemon vinaigrette. The chicken is a comfort food from my childhood (thanks Maman!) and the salad I copy catted from one served at Atwood's Tavern that I'm obsessed with.

I had originally planned to make a dish called svíčková (braised sirloin with a heavy cream sauce which is traditionally served with dumplings) and although it sounds delicious it seemed a bit rich for a hot summer day. Somehow a great big ol' piece of breaded fried chicken with a side of creamy potato salad seemed a lighter choice. Despite the calorie count it was a truly delicious combo! For the record cold potato salad, to me, is the quintessential summer side.

Here we are frying up the first batch of our THIN-CUT CHICKEN BREAST FILETS and man, what a treat! Save the step of cutting them yourself...these are pre-sliced to 1/4", big, even sheets of moist flavorful pastured chicken, ready for your favorite schnitzel treatment. We mixed up a coating of panko, sesame seeds and paprika, dunked first in flour, then eggs (from the backyard, yes). Then crumbs and fried using vegetable oil and duck fat until golden brown. Thank you to everyone who has asked us for this cut, and waited patiently! The wait is over...come and enjoy.
