Yo check this out! It's @tmoms vegan chubsteak wrap. Somehow I didn't even know this thing existed until a few days ago. Man it was awesome! A tortilla filled up with seitan, vegan cheese, mushrooms, onions, some kind of spicy sauce and even some tater tots hiding in there somewhere. It's really going to be a tough decision between this and the vegan pickle fried chicken sandwich next time (added to the agonizing decision of tots vs pierogies) @tmoms has really become a can't miss spot. Their vegan options are some of the best around!
One thing I miss about eating meat is enjoying some good pastor tacos. Tonight, I might've been able to bridge that gap a little bit. I took some seitan and made a sauce from pineapple, garlic, oregano, chipotle pepper, cumin, cilantro, white vinegar, paprika, and lime juice. After blending together, I tossed in the seitan and let it marinate for about an hour. From there, I baked it at 400 for about half and hour. I pan cooked some pineapple and quick seared the seitan after pulling it from the oven, just so I could get a little bit of a crisp to it. Put on top of some jasmine rice in a corn tortilla, sprinkle some cilantro, squeeze some lime, and rock and roll. Kind of a dry heat at the end, but the pineapple helps ease it on the way down.
