#TGIF ! Here’s something you can make for your loved ones over the weekend. Recipe from @morethanveggies using our veggies!
Braised Mixed Veggie Noodles:
-1 serving wheat noodles, undercooked slightly to package instructions
-2 strings of long bean, chopped
-1/4 of a red onion, chopped thinly
-1/3 of a zucchini, chopped thinly
-3 pcs of bak choy
-4-5 pieces of tau kwa (beancurd skin)
-1 cup water/stock
-1/2 tbsp oil
-1 star anise
-1/2 stick of cinnamon
-1/2 tbsp high quality soy sauce
-Chilli sauce, to taste
In a wok or pan with cover, sauté the onions with star anise and cinnamon until onions are transcluscent. Add long bean, zucchini and tau kwa, stir fry quickly for 30 seconds. Add cooked wheat noodles, stock and soy sauce. Mix and ensure noodles are just covered by liquid. Simmer covered over low-medium heat for 5mins or until liquid is almost absorbed. Add in bak choy and stir till cooked and liquid is gone. Remove from heat, add chilli and more soy sauce to taste if preferred. Recipe is very versatile and can work with most veggies, mushrooms and block type plant proteins like tofu, seitan and tempeh.

Sweet & Sour Seabass. Hubby's all-time favourite. And my sister's too. Had a lot of this when she was growing up 😄

500g seabass fillet- cut into bite-sized pcs
1/2 green capsicum- cut smaller
1/2 red capsicum-cut
1 cup fresh pineapple- cut
1 clove garlic
2 stalks spring onions- sliced
Batter for fish:
1 cup flour
1/2 cup cornstarch
1/2 tsp baking soda
1 egg - Mix together and add fish. set aside
11/2 tbs tomato ketchup
1 tsp plum sauce
Juice of 1/2 lime
1 tsp sugar/ salt
2 tbsp water+ 1 tsp cornstarch
1) Deep fry fish in batches.Drainand set aside
2) prepare sauce: Heat oil, add garlic then add capsicum & pineapple.
3) Stir fry to soften a bit. Add sauce. As soon as sauce thickens a bit, transfer fish and stir well.
4) garnish with spring onions
Japanese brown rice with sweet pineapples, quinoa, diced carrots, raisins, roasted cashew nuts and chestnuts. Sprinkled with ground black sesame, smoked paprika, turmeric, salt and pepper. .
This one-pot meal takes 30 minutes max to prepare. Keep it simple so that homecooking remains a joy and never a chore. .
Sardine Puff. Craving for sardines after reminiscing with my sisters. 😍Brings back memories of growing up in Penang. I dont hv it often here cos no one eats except me at home. 🙁 #yummy
These were made with #fairprice#rotipratha and #ayambrand#sardines in tomato sauce. #singaporehomecooks
1 small can of sardines -mashed
1/2 onions- chopped
Juice of 1/2 a lime
1 tbsp sambal
2 pcs roti pratha
1 egg +water= egg wash (optional) .
1) Saute onions in a little oil till translucent.
2) Add in sardine, sambal & lime juice.
3) Thaw the paratha slightly, then fill in the sardine. Leave some space to seal with a fork.
Brush on the egg wash.
4) Baked in a 200deg C preheated oven till skin is brown about 15-20 mins.
Feeling a little disappointed that some who came to get our bakes were faced with a sold out sign. I'll cut down on the pre-orders next time in shaa Allah 😊
