My December has been crazy with work and our move and my blog is on hold for a few more days. But we still gotta eat. Here is a super simple zucchini recipe because zucchini really don’t need a lot to taste great. The only ingredient worth mentioning is my new jar of Aleppo pepper - it’s so gd good! I found it at World Market and I love the milder heat but full pepper taste. Check out the recipe below for 2.
1. Slice 2 zucchini into thicker rounds.
2. In a bowl, add 1/2 tsp Aleppo pepper, salt/pepper to taste, and 1 tbsp olive oil. Toss the sliced zucchini in this mix.
2. Heat pan to medium high heat (I had mine at 6). Add zucchini and spread them out as much as you can.
2. Cook on one side for a full 5 mins. Flip individually and cook for another 5.
