Turmeric oatmeal with persimmon, banana, dried cranberries and pumpkin seeds for breakfast today. 😍😍 I added a 1/2 teaspoon of turmeric along with 1/2 teaspoon of cinnamon as the oats cooked. Ground ginger would have been nice too. I didn’t have any on hand but picked some up at the store today. 😉 Tomorrow’s breakfast will be better!

A note about persimmons: In the States, there are only two main types of persimmons. Hachiya, the larger pointy-tipped ones and Fuyu, the smaller, shorter, tomato-looking ones. Hachiyas are downright nasty if you eat them before they are ripe. They need to be soft and squishy like a water balloon before you eat them. Fuyu, on the other hand, can be eaten hard or soft, with no nasty aftertaste.

Now I’m pleasantly surprised to learn that sometimes persimmons that look like Hachiya might not be Hachiya afterall 😱 meaning you can eat them right away! We found giant persimmons in the shop, which look like Hachiya but are actually another variety entirely: Rojo Brillante! I’m glad the persimmons were sold with a little label sticker, otherwise I wouldn’t have figured out the variety name!

Tonight simple but yummy dinner ~ Pesto & Buckweat Pasta 💚
To make pesto sauce I blitzed roughly 2 cups fresh basil, 3 garlic cloves, 3 tbs nutritional yeast, 2-3 tbs olive oil, Himalayan crystal salt & pepper and a dash of lemon juice. Toss through your fav pasta, I used buckwheat spirals 😊.

Happy Sunday, lovelies! For dinner today we had Lisa's @vegannomadchick veggie marinara with spaghetti 😄😋! This is my third time trying her sauce, but this time I used frozen veggies because I was just too lazy to peel and cut fresh ones 😆😁. The veggies I used were: carrots, peas, green beans, corn, red & green bell pepper and mushrooms (these were canned) 🙈😋. To season I added tomato paste, ground cumin, oregano, granulated onions and garlic. We served our marinara with whole wheat spaghetti, fresh lemon and nutritional yeast. Such a delicious meal!😄😋

The three of us had such an amazing weekend together as a family 🙈. I must say, I am desperately in love with this little family of mine 🙈❤! We spent some quality time together, enjoying every minute of this weekend 🙆🏼. We decorated our tree, we went shopping, we listened to music, we danced, we played, we laughed! My batteries are so full right now 😄! This morning I gave Elena persimmon for breakfast and she loved it! ❤

Boiled potatoes and chili for lunch today. 🥔🥔🥔 Simple and delicious!

To make this chili I used one bag of frozen veggies (chopped corn, peppers, onion, green beans, and kidney beans) • a handful or two of sliced mushrooms • a can of diced tomatoes • a few spoonfuls of tomato paste • bay leaf • 1/2 teaspoon ground cumin • 1/2 teaspoon ground coriander • 1 teaspoon dried oregano • black pepper • half a lemon juiced.

First, cook the mushrooms in a small amount of water (like half a cup) and add all the seasonings. Once they shrink down, add the frozen veggies, diced tomatoes, and tomato paste. Let simmer until it’s heated through, and then stir in lemon juice at the very end. You can add chili powder or any veggies you like.

This gave us plenty of chili for lunch and dinner. We served it with these boiled potatoes for lunch and spaghetti for dinner. 🍝😋 So good!

My only regret is that I didn’t have any nutritional yeast to sprinkle on top.

Turmeric oatmeal with persimmon, banana, dried cranberries and pumpkin seeds for breakfast today. 😍😍 I added a 1/2 teaspoon of turmeric along with 1/2 teaspoon of cinnamon as the oats cooked. Ground ginger would have been nice too. I didn’t have any on hand but picked some up at the store today. 😉 Tomorrow’s breakfast will be better! . A note about persimmons: In the States, there are only two main types of persimmons. Hachiya, the larger pointy-tipped ones and Fuyu, the smaller, shorter, tomato-looking ones. Hachiyas are downright nasty if you eat them before they are ripe. They need to be soft and squishy like a water balloon before you eat them. Fuyu, on the other hand, can be eaten hard or soft, with no nasty aftertaste. . Now I’m pleasantly surprised to learn that sometimes persimmons that look like Hachiya might not be Hachiya afterall 😱 meaning you can eat them right away! We found giant persimmons in the shop, which look like Hachiya but are actually another variety entirely: Rojo Brillante! I’m glad the persimmons were sold with a little label sticker, otherwise I wouldn’t have figured out the variety name! . I’m so glad I can eat these as they are. They’re like a winter version of a peach. Delicious! . Look for persimmons labelled with a Bouquet sticker. That’s the brand name of this type of ready-to-eat persimmon. 😉👌. . I can’t wait for breakfast tomorrow! I have four more giant persimmons waiting for me. They might not survive the night though...😂. . . . . . DINNER TONIGHT!!! Super simple to make! 😊  Half and scoop out the insides of the zucchini. Brown the lean ground beef and add a can of Italian diced tomatoes, dash of garlic powder, and Italian seasoning. Fill the zucchini with the meat mixture and sprinkle with shredded mozzarella. Cantonese Noodles, Beef Broth, Crimini Mushrooms, Dried Japanese Chili. Very basic, but good. Cantonese noodles are a firm, stretchy, somewhat eggy noodle. Not a traditional preparation with this broth. 
#recipe : boil noodle until just short of al dente, rinse, plate into bowls along with diced green onion. Simmer beef stock, cumin, black pepper, garlic, bay leaf, green onion sliver of butter, and crushed, dried Japanese chili to taste. Boil, pour over noodles. Serve.

With a quick blitz of chickpeas and other ingredients I've made fresh hummus. The wraps are 99.5% corn tortillas (0.5% sea salt) found at my organic shop warmed briefly on a griddle pan. Plus some organic cucumber, tomato and radish found in a sad fridge. Cycle syncing that's gluten, dairy and soy free doesn't always need to be fancy feasts. I relied on a vegan 🌱 Pea Protein Burger 🍔 from @traderjoes for the first time and I will recommend it! It was simply delicious, stacked fat in between all my veggies on a whole 🌾 wheat bun. I didn’t have to sacrifice nutrition, taste or time.  I didn’t stray from my nutrition plan or goals. I didn’t have food guilt.  I was a girl enjoying her day off in 80 degree ☀️ so Cal winter ❄️. .

I cut up and cooked some sweet potatoes in butter.  Cut up some chicken apple sausage from Sam’s (nitrate/nitrite free, but not paleo) and stir fried it first in coconut oil.  Then removed sausage and sautéed cut up asparagus, broccoli, cabbage and zucchini.  Added some coconut aminos and put the sausage back in the pan and voila!  Dinner is ready!!

I sent this menu out to my friend a few days ago for our holiday party tonight. With everyone’s food allergies and special diets I thought it was a good idea to make sure this menu would work. (Have to avoid walnuts, shrimp, seafood, and high fodmap Foods, plus my own food intolerances!) .

It’s easy to make, you need bread, tomato sauce, smoked salmon, mozzarella and emmenthal (as extra cheesy toping 😊)! Put garlic and olive oil on your bread => bake 5 minutes
Take out of oven and add topings on your bread 
Add some thyme, and ginger powder if you wish ;) pour a bit of olive olive and bake 10 minutes again !mmmm😛#tadaaaaaaaa👍🏾
