At risk of sounding like an automobile warranty, my goal was 10mi/2 hours— whichever comes first. I’m an all or nothing kind of gal; no mid-spectrumness. I’m thinking I will see how far I can take it. Stop when you drop. All gas; no brakes. I wonder what the world record is for consecutive minutes/miles on an elliptical. Or should I just Forest Gump it and run south on this shoreline?

Consistency, persistency, and time.
I didn’t climb to the top in five minutes, just as the snow didn’t pile up in the blink of an eye.
Both required those three things. If I only walked for ten minutes or it only snowed for ten minutes, you wouldn’t be looking at either picture.
I had to take breaks on the two miles up, but I never gave up. Neither should you. One step at a time.
If you have a goal in mind, no matter what it is, remember those three things...Consistency, Persistency, and Time. Stay the course.

This is a psa to everyone who feels the need to hide their bodies when they go to gym (I am trying hard not to be that person anymore) if you want to wear a vest or show a bit more skin - it’s totally OKAY to do so even if you are not exactly where you want to be yet! My arms are big and one of the things I keep hidden the most. But it’s 30 degrees today and I am hot af so I am going to wear my vest, to gym, where I feel most vulnerable, and keep living my life. Nothing bad has happened, in fact a lady actually stopped me and told me that she’s seen me around the gym and I am looking fab! Confidence (even if you fake it for a bit) breeds more confidence!
Dinner : Pork & Cider Stew with Sage & Onion Dumplings & Bread & Butter
Yes, yes the cider is a naughty addition but if you want to switch to 100% apple juice.... I just had to have a cider tonight 😁🙊 Can't find the recipe anywhere so here is a copy and paste.
2 hours 15 minutes
1 tbsp olive oil
1 large onion, chopped
500g stewing pork
1 dsp seasoned wm flour
1 stick of celery
1 eating apple, peeled and sliced
150ml veg bouillon
1 tsp Dijon mustard
1 tbsp flat-leaf parsley, chopped
1 bay leaf
1 tsp chopped fresh sage
1 small onion, chopped
80g wm self-raising flour
20g melted butter
A little cold water, if needed to mix
Heat olive oil and fry the onions until soft.
Add the pork, coated in the flour, and brown quickly.
Add vegetables and apple, and then pour in the cider and stock.
Stir in mustard and add parsley and bay leaf. Bring to boil then transfer to ovenproof casserole dish and cook on gas mark 3/170°C/fan 150°C for 1½ hours.
Mix together the dumpling ingredients and roll into 4 smallish balls.
Add to pan with a little more stock if the casserole is too thick.
Baste dumplings with stew sauce and cook for another half-an-hour with the lid on, then flash grill for a few minutes to brown dumplings just before serving. Garnish with extra parsley.
