Wir hatte gestern Abend liebe Freunde zu Besuch und irgendwie habe ich immer was mexikanisches gekocht, aber heute habe ich mich in die Höhle des Löwen gewagt und habe etwas italienisches für Italiener bzw angeheiratete gekocht. Es war glaube ich ganz okay. 😊
Außerdem lies es sich ganz gut mit einem Primitivo di Manduria runterspülen. 🍷

Ach ja, das Essen Stand im Zeichen des Büffels,es gab hausgemachte Cappelacci gefüllt mit Ricotta di Bufalla, Spinaci e Pinoli in Salbeibutter geschwenkt als Primi Piatti als Seconfi Piatti gab es Pizze al Gusto. Ich glaube es war ganz ok, zimindest waren alle pappsatt, so dass es als Digistiv noch einen Gin Tonic gab (Monkey 47  beef! cut + Fever Tree Mediterranean Tonic) 
Ich liebe es ja für Gäste zu kochen.... 🤗

Trovato grazie alla infallibile guida Slow Food, Da Lucrezia è davvero una perla rara  ed inaspettata, scovata lungo la costa jonica, quasi al confine fra Calabria e Basilicata.
Menù di pesce di grande livello, con ottima materia prima e sapienti preparazioni.
Scegliamo uno dei due menù degustazione, che prevedeva tre crudi (spada con zenzero e sale nero, tris di crostacei, carpaccio di salmone: tutti freschissimi, ma con il solo spada ad una temperatura non consona), tris di mare caldo (polpo, calamaro e seppia: tutti e tre molto buoni), delle strepitose fettuccine senatore Cappelli con genovese di tonno rosso (uno dei migliori primi provati nel 2017), una semplice ma ottima orata con peperoni ed infine una discreta millefoglie  ai frutti di bosco con crema chantilly.
Il tutto ad un prezzo davvero modico, con un servizio professionale e cortese, in un locale di una certa eleganza (che contrasta ahimè col panorama circostante).
In definitiva uno dei migliori pasti di pesce dell'anno in un locale imperdibile, e non solo per il rapporto qualità-prezzo, per chi passa in questa bella zona del nord-est della Calabria

Coconut sugar comes from the sap of cut flower buds of the coconut palm. Bundles of blossoms of the coconut tree are ‘tapped’ while still on the tree. Over time, sap flows from the cut flowers and is collected in bamboo containers that are checked by farmers on a daily basis. The sap, which is composed of about 80% water at this point, is transferred to large woks and placed over low heat to evaporate. This eventually produces a thick syrup as the sugars lightly caramelize and the water evaporates away. The sugar is crumbled by hand as it dries, assuring it is in small granules and perfect for mixing with cacao to make chocolate. 🌴🖤🍫 This sustainable artisan process is one of the many reasons we choose coconut sugar to sweeten all of our bean to bar goodies. Ingredientes: -1 colher de sopa de farinha de coco -1 colher de sopa de farinha de amendoim -3 colheres de sopa de pasta de amendoim -30 g de whey protein (sabor a sua escolha) -30g de amendoim -100g de chocolate mínimo 70% cacau -1 colher de sopa de nata 
Modo de preparo: Bata todos os ingredientes no liquidificador exceto o chocolate e a nata. Distribua a massa numa forma com papel manteiga por baixo (a consistência é meio pastosa e esfarelenta). Derreta o chocolate com a nata (prefiro fazer em banho maria) e jogue em cima da massa. Leve ao freezer por 30 minutos, corte em quadradinhos e aprecie com moderação!

This loaf was very promising the bulk fermentation felt just right finally. I found myself preshaping this loaf just at what I believe to be the perfect time. I was excited though it was very late in the day going on almost midnight. I found myself waking up a hour and a half after I preshaped this loaf. I panic'd and encountered large pancakes of dough on my bench. I shaped as fast as I could and popped them in the fridge. This is the result of those loaves. Surprising not completely bad. That's baking for you though always a mystery.

This loaf was very promising the bulk fermentation felt just right finally. I found myself preshaping this loaf just at what I believe to be the perfect time. I was excited though it was very late in the day going on almost midnight. I found myself waking up a hour and a half after I preshaped this loaf. I panic'd and encountered large pancakes of dough on my bench. I shaped as fast as I could and popped them in the fridge. This is the result of those loaves. Surprising not completely bad. Definitely coming back soon for a meal

Loaf 132 // 27% @GristandToll  Hard White (Star), T85, Giusto's, 22-hour fermentation // So, I made two "mistakes" with L132 that I've never made before. I use quotes because this loaf is delicious, the crust is sturdy but delicate, and the crumb is evenly fermented and very tender. I really like this bread. 1) I forgot to set a timer after adding the levain and waited 1:40 to add the salt instead of the usual 40 minutes. 2) I forgot to turn the oven down from 500 for the first 25-30 minutes of baking. It wasn't until I looked at the bread and thought, "Hmm, that's awfully dark for this stage," that the bulb went off in my brain and I realized the temp was too high. In terms of "mistake" 1, the dough was quite sticky and I wanted to stay on schedule so I did a couple of stretch/folds and then added in 30 slap/folds. (Per "Bread Science" - Salt tightens dough and helps it hold together instead of sticking to you. Salt ions do this by shielding gluten's positive charges from each other. There's a more in-depth explanation in the book.) I then shortened my stretch/fold window to 20 minutes which ultimately put me back on track. The dough was still a little stickier than I'm used to when it came time to shape but everything worked out . Also, I cut my cold fermentation short by a little bit since the yeast had been left home alone for that 1:40 and probably had more fun than it usually does during that stage. For "mistake" 2, I just shortened the baking time. Even though the loaf spent less time in the oven, the internal temperature was around 210 which meant the interior was cooked. I like that L132 motivated me to flip through Bread Science and give some more thought to salt's relationship with gluten. Mistakes are good. // Flour note: @GristandToll's Star flour is very nice. I've used it for bread, pizza, and 100% whole grain sourdough pitas.

Today I am halfway through the elimination phase of the #autoimmuneprotocol*. I am feeling measurably better and I don't want to hear any complaints about your #whole30 ever again, thanks.

1. I've gained a lot of compassion for people with food allergies, celiac, etc. It's exhausting and isolating.

2. I'm really grateful for this stupid diet in several ways. It's taken my mind off food as a coping mechanism and in a few instances forced me to *deal* instead of *cope* .

3. I've also been forced to prioritize the time and money to eat more local meat and organic veggies like I've wanted to do for a long time.

4. I've discovered that if you commit to adding two veggies to every meal and one to your snacks, you're eating seven servings of veggies every day. Easier than you might think.

5. I started out skeptical, but I might finish enraged. Why haven't any of my doctor's mentioned this? ?

6. I'm more convinced of the beauty and importance of eating simply, locally, healthily and aware of the many privileges (time, money, access, +++) required to do so... As well as the unsustainability of obsessing about diet criteria when you don't have to.

That said, it's worth it to change your life to change your food. Your body is priceless and slow food teaches so much, not least that our own well-being is entirely bound up with the well-being of the people and planet we depend on.
