One of my most simple and favourite breakfasts ❤. I prefer smoked trout to salmon here as it's less oily and has a better mouthfeel (in my humble opinion) when slightly cooked with the eggs. A dollop of crème fraiche and some chives finishes it off for me and am in love with this fermented buckwheat bread I have found at @olivebranchdeli on kloof street 👌. Recipe below
Whisk 4 free range organic eggs with a 2 tbsp chopped chives, a pinch of herbal salt and a crunch of black pepper. Add a dash of milk (optional) and heat a knob of butter in a decent non stick pan. Once melted add you whisked eggs and gentle work the eggs from the outside in with a spatula a few times. Then add 80g smoked trout cut into ribbons and keep working through until the eggs have just come together.
Serve with crunchy buckwheat bread toast and a dollop of crème fraiche 😍😘

Smoked steelhead trout is delicious y'all. I smoke it anywhere from 250 to 275 degrees until it reaches a melt in your mouth temp of between 165 to 170.
Dinner with @hangswithhenry was nothing short of incredible. InCREDible. @curtisglas has a smoker. We smoked a hefty hunk of Gouda for starters. Then two rainbow trout and a mackerel, which we brined with some of the most delicious salty/sweet sauce ever. We ate all of this with a fontina and mushroom risotto and seared green beans and a flourish of wines. So, pretty much, it was the best meal ever, right Henry? THESE.WERE.AMAZING!! Low Carb Blinis with smoked trout, sour cream and avocado! 😋😍 I didn’t have caviar, dill and Creme Fraiche to hand but I personally didn’t notice a huge difference! I made them slightly bigger and had them for breakfast 👌🏾The recipe made 5-6. n.b you could always trying replacing butter with coconut oil to make them more #wholefoods
Recipe for Blinis
2 tbsp Coconut Flour
2 tbsp Almond Flour
1/2 tbsp melted butter (approx) plus more for frying
1/4 milk (approx)
Pinch of salt
Medium pinch of baking powder
Avocado and Sour Cream or Creme Fraiche to serve.
Mix flours, salt and baking powder together.
Add egg the egg until combined
Add melted butter
Add milk until you have a thick batter consistency.
Melt some butter in a pan on a low-medium heat for frying. Spoon 1 tbsp in the pan per blini and repeat until the pan is full. Fry for a few mins on either side until they are light golden brown in colour.
Once cooked, top with the sour cream/Creme Fraiche, trout/salmon and avocado. Enjoy!
