What a nice day again☀️ Today's breakfast: mashed sweet potato bowl inspired by @juliasplate 😉 → Mashed Japanese sweet potato (with 1 tbs milk and a bit of cinnamon), sliced banana + pumpkin seeds, a frozen fig, frozen berries🍌🍓 and of course a spoonful of @wholeearthfoods crunchy organic peanut butter🥜 Why have I never tried mashed sweet potatoes before? It's sooooo good! This will definitely join my meal prep routines✌️

Okay here are the deets from yesterday's mermaid nicecream that I showed on my Insta Stories..... ✨✨2 capsules of @vitalproteins Spirulina (I open the capsules and pore the powder in), 4 halves of frozen (steamed) zucchini (you can't taste this - it's just for consistency), 1 frozen banana, 1/2 cup of @artisanaorganics coconut butter, handful of frozen blueberries, a few chunks of @innereco frozen young coconut meat, & a tiny splash of almond milk to get things blending in the @vitamix ✨✨ Kids think it's so cool because of the color... I'm all like MOM WIN, bc, SPIRULINA! Yasss.

Nicecream makes the world go round👅🍌🌍 this delicious bowl was made up of four frozen bananas and a handful of frozen blueberries✨then I topped it with strawberries, blueberries, a drizzle of fresh passionfruit, some puffed quinoa pops and agave flapjack bites🙌🏻🍓probably one of the best breakfasts I've ever eaten! Finding joy in the little things is important😚
Happy humpday and good evening ✨ It's already really late and I am in bed ready to sleep soon, but I wanted to share this heavenly bowl I made today with you. Who would like to have such a super thick and creamy bowl of nicecream as well? I made this nicecream with frozen cauli, frozen banana, sunflower protein powder, soy yoghurt, cacao, water and guar gum for extra creaminess 👌😇 Topped with fresh figs, which are my faves at the moment, raspberries, banana, coconut, and amaranth ❤
I felt not very good today, so I don't have to tell anything interesting, cause I tried to relax a little after Uni, cooked dinner and bought some food. Actually it's quite hard to get used to using your brain again every day after one year out of school 😂 But I guess I gonna get back into the school/learning game soon 😇 At least I hope so 😅

Love yourself enough to say no to what does not serve you.✨ This includes unproductive food and lifestyle choices that may be pulling us down. When we're stressed out and going nonstop, we so often gravitate to comfort food and sweets to soothe the soul. We feel temporarily "numbed out" and better in the moment but how do those choices impact us in the longterm? It's so tricky to navigate.
The past month has felt like one big travel whirlwind across the northeast. My heart is so full but I am also tired. And many people around me are currently getting sick!! A sign to pull back the reins and focus extra on selfcare. A healthy diet is our number 1 protector against getting sick but it is not everything! Ample downtime and rest are just as important -- these are the very things that get pushed aside when we've got too much on our plates and refuse to slow down.
Love yourself enough to put your health and wellbeing first. Today despite some plans and reunions, I've cleared out my schedule and have got a date with myself. Mainly cat naps, banana ice cream, and movies in bed😍 Tomorrow hitting the road again💖🙌
Best way to wrap up my Wednesday and smooth sail ⛵️ into the rest of the week - a cup of warm Mung Bean Tea ☕️. Real talk 💁🏻: in #traditionalchinesemedicine , mung beans are great in reducing "Huo 火” which is fire in our bodies. Think about a time you ate too much fried food for multiple days, stressed from work or haven't got much greens in your diet for a while. You may have breakouts, super painful canker sore, constipated 🙊 and more. That means your body is imbalanced inside. A cup of Mung Bean tea can help! Although not get rid of right away (#TCM believes in slow but complete healing process), I promise it will reduce the symptoms significantly. ...................
1/4 cup of raw mung beans
2 cups of water ➡️Bring to boil, simmer for 10 min then pour it out, let it cool then ENJOY!
You can put honey for a bit of sweetness 🍵
☝🏼Pro tip: the left over beans can be made into soup, frozen for smoothies.
This super healthy soup combines broccoli and kale with ginger, coriander and turmeric for a nutrient dense and low-fat dinner.🍵 Ingredients
500ml stock, made by mixing 1 tbsp bouillon powder and boiling water in a jug
1 tbsp sunflower oil
2 garlic cloves, sliced
thumb-sized piece ginger, sliced
½ tsp ground coriander
3cm/1in piece fresh turmeric root, peeled and grated, or ½ tsp ground turmeric
pinch of pink Himalayan salt
200g courgettes, roughly sliced
100g kale, chopped
1 lime, zested and juiced
small pack parsley, roughly chopped, reserving a few whole leaves to serve
Put the oil in a deep pan, add the garlic, ginger, coriander, turmeric and salt, fry on a medium heat for 2 mins, then add 3 tbsp water to give a bit more moisture to the spices.
Add the courgettes, making sure you mix well to coat the slices in all the spices, and continue cooking for 3 mins. Add 400ml stock and leave to simmer for 3 mins.
Add the broccoli, kale and lime juice with the rest of the stock. Leave to cook again for another 3-4 mins until all the vegetables are soft.
Take off the heat and add the chopped parsley. Pour everything into a blender and blend on high speed until smooth. It will be a beautiful green with bits of dark speckled through (which is the kale). Garnish with lime zest and parsley.
