I'd been looking forward to trying the Linguine with Crab, Tomato, Chilli, zucchini and bottarga at Surry Hills' FLOUR EGGS WATER. I have to say I was disappointed with this. I found too much going on here which made the individual flavours of the ingredients conflict. The sauce was too thick and didn't allow the elements to shine. It was overblown, the crab was there but lost in this dish. The other ingredients also felt a bit thrown together. The bottarga - no idea if that was there at all. A crab pasta dish is far better treated simply in my book, often best with garlic, olive oil, white wine and a touch of chili. This should have been so much better #surryhills#pasta#linguine
