These pumpkin spice roasted almonds have become one of my new favorite snacks! All you have to do is coat your raw almonds with a little bit of olive oil and as much pumpkin spice (recipe in my last post) as you want, and then roast at 425 degrees F for 15-20 minutes, depending on how brown you'd like them. Be sure to mix them around every 5 minutes! Happy snacking 🎃

The original recipe is by @superhealthykids 😀Nat & Amy made a delicious chocolate chip version but if your kids have a gluten sensitivity check out what we did to make it #glutenfree
🔹2 cups gluten free oats
🔹1/2 cup glutenfree flour (I used @bobsredmill)
🔹1/2 cup unsweetened apple sauce
🔹1/4 cup honey
🔹1 tsp vanilla
🔹1/4 cup dried fruit (dates and goji)
🔹1/4 cup seeds (pumpkin seeds, sunflower seeds, chia seeds)
🔹1/2 tsp cinnamon
🔹1/2 tsp Himalayan salt
🔹1 tsp baking powder
1️⃣preheat oven to 350F
2️⃣mix all wet ingredients and add in all your dry ingredients
3️⃣line a 8x8 baking dish with parchment paper and press your granola mix into the dish
4️⃣bake for 25 minutes or until edges are golden brown

4 tbsp agave syrup
a small handful of frozen fruit mix

#ROTW | Recipe : Muesli Bircher. (8-10 servings)
200g. organic oats
200g. 0% Greek yogurt
250ml. almond milk (unsweetened)
400g. red apple (grated)
1 tbsp. organic honey
1 tsp. cinnamon
100g. mixed seeds
80g. dried soft apricots (finely diced).
1. Finely dice apricots and grate 2 large red apples.
2. Place all ingredients in a bowl &a stir until mixed.
3. Leave covered in fridge overnight or for 2 hours.
4. Spoon into a serving bowl and top with fresh berries or sliced fruit.
----- . 💡try variations: grate pear with or in place of apple, use different nuts and seed options and varied combinations of fruits *optional add 2 scoops of organic whey protein.

🍫Brownie Batter Bites🍫
2 cups raw walnuts
4 Tablespoons 100% dark cocoa powder
1 cup pitted dates
Unsweetened shredded coconut flakes
1. Process the walnuts in a food processor.
2. Add the dates & cocoa powder, & process again until a "dough" forms.
3. Place the dough in the refrigerator until it is chilled.
4. Once chilled, roll the dough into balls of whatever size you would like, & toss in a bag of unsweetened coconut flakes. Store in an airtight container, & keep refrigerated for up to 1 week.
