The kids went blackberry picking this afternoon and the youngest cooked up this fantastic compote which we served with ground rice. Yum

Wrap and roll. "Pancakes" made with atta flour, gram flour and rice flour mixed with soya milk and bicarb.
Saturdays are for mid morning breakfasts. Oats, cornflakes, banana and soya milk.

Vegetable balti, garlic greens, sweet n sour tofu, lentil daal and rice with kachumba, soya yoghurt and cucumber salad
Cooking for 7: rice, vegetable jalfrezi, kale in coconut milk with garlic, lentil daal and fried tofu with soy & ginger
Noodles! Served with coconut curried vegetables and sweet n sour tofu with green beans.

Time for lunch. Soup, bread and croutons. It amazes me how such a huge pan of soup can disappear so fast! This soup seemed to induce laughter. Nothing better than sharing Saturday lunch with the family.

Finally a healthy family lunch after a chaotic week
Coconut milk based green soup with spinach, spring greens, carrot, mushroom, garlic, onion, ginger and stock. Half blended with chick peas.
I love this Indi Grand make of curry sauces which I picked up at my Mum's 💗 They are available from Home Bargains, I haven't seen them elsewhere. This one and the Balti, my favourite, are #accidentallyvegan I don't know about the others. It has a lovely tangy taste and you can add to any veg or if you're feeling super lazy you can just serve the sauce with rice or chapati because it's nice and thick.
When I made the Katsu curry sauce the other week I froze some into blocks. Great to be able to just throw them into some veg like you would a packet, jar or other processed convenience food without all the bad stuff.

Meanwhile, the leftover Birds trifle from Christmas is under construction. The jelly in birds trifle is #accidentallyvegan as is the custard if made with non dairy milk. Avoid the sponge fingers and Dream topping however, and the sprinkles contain palm oil and shellac
My other half keeps making bread. A bit of a temptation at this time of night!
Second day back at school and the kids were exhausted emotional wrecks at pick up. After a hearty meal and a movie it's all giggles again thankfully 😅
Healthy start to the new year. Butternut squash, sweet potato and carrot soup (basically those veg plus an onion, a stock cube and seasoning boiled and blitzed) served with a dollop of Tesco freefrom plain yoghurt, black pepper, pink salt and olive oil plus a couple of cheeky croutons, or a mountain of them if you're one of my kids
Somehow found space for pudding! Christmas pud with custard and ice cream!
