Here's another one of my favourite new dish from Excapade: Somen. These thin white noodles made from wheat flour is served with the Shoyu Sauce (Japanese Soy Sauce) and Goma Sauce (Japanese Sesame Dressing). When combined, it tastes absolutely delightful! Truly enjoyed the flavours that melts in my mouth. • Foei Gras + Aka Miso (Teppan Grilled Foie Gras, Sweet Corn Kernels With Fermented Red Miso) - This is CRAZY, melt-in-your-mouth good. No iron smell/taste at all.
• Beef Short Ribs 58degree celsius (Roasted “sous vide” beef short ribs with Japanese pumpkin puree & rainbow carrot shavings) - This is CRAZY good too!!! Look at the amount of fats.
• Truffle Hiyashi Somen (Cold somen tossed with truffle emulsion & shio konbu, topped with truffle & sakura ebi) - I love this too!!
