Made a fresh batch of my favorite seasoning, @nomnompaleo's Magic Mushroom Powder aka Umami Powder. It's dried porchini mushrooms, kosher salt, dried thyme and red pepper flakes. I don't make burgers or steak without, if I can help it. It's also fantastic in soups and stews- pretty much anything that you want to elevate flavor and add a savory (umami) level to.

There's something a little too personal about eating a pork chop shortly after processing the pigs we raise, so to use up the last package of chops from a pig we had processed last year we made this pork tomatillo chili verde stew. The recipe called for pork loin, but we cubed up the pork chop meat and slow cooked this meal in the crockpot. After a busy day, it's nice to sit down to a home cooked meal.
