Rice noodles, 1 package
Butter, 2 tbsp
Garlic chili oil
Small onion, diced
Red bell pepper, diced
Coconut milk, 1 can
Chicken stock, 6 cups
Juice of one lime
Cook rice noodles according to package directions.
In a large soup pot, melt butter and add garlic chili oil to taste. Heat shrimp until pink. Set aside.
Add garlic, onion, and bell pepper to soup pot and sauté until tender. Add ginger and heat until fragrant. Add tomato paste and curry powder.
Whisk in coconut milk and chicken stock. Add fish sauce to taste. Heat to boiling. Reduce heat and simmer until soup thickens. Add shrimp, noodles, and lime juice. Garnish with cilantro and scallions.
