even though the first day of fall is friday, i've already started making warm soups and pumpkin snacks. this butternut squash soup was so filling and tasty. i'm ready for fall weather and hiking!
cook some onions and garlic in oil, then add a cubed butternut squash, a can of light coconut milk, 1 cup of vegetable soup, chili paste, and sriracha. once the squash is soft, transfer to a blender. top with pumpkin seeds, green onion, more sriracha, and curry powder
