Thankful my fridge was stocked with ingredients to make a one-pot veggie Italian soup. I've been in bed the past two days not feeling well & a bowl of warm goodness is just what I needed.
Makes 1 small pot, serving size varies
-4 c. organic vegetable broth
-1/4 c. organic purple onion, chopped
-1 organic garlic clove, or 1/2 tsp minced garlic
-Organic brocolli, carrots, kale, zuchinni, green beans
-1/4-1/2 c. organic marinera (I used @muirglen Fire Roasted Tomato)
-Fresh organic parsley & cilantro, chopped
-Cooked organic brown rice
-In a small/med saucepan, sauté onion & garlic in a splash of broth 1-2 min or until onion is translucent over med heat
-Add veggies, broth, marinera, & herbs
-Bring pot to boil, then reduce to low & cover, cook at least 20 min or longer for more distinct flavor (the longer it cooks, the more flavorful it'll be)
-Add in cooked rice at the end to warm up
-Topped with @traderjoes Organic Hummus

I haven't been the healthiest girl of late, and it needs to change!!I can feel the difference in my body and I'm not enjoying the effects of eating too many treats. Any tomato basil soup lovers out there? Made a pot of this delicious bisque this morning and it took almost no time! Once you pour everything in the pot it pretty much takes care of itself. Recipe there 👇🏻, easy and healthy. 🌿 🍅 🍅 🍅 2 Tbs olive oil
1 yellow onion
2 gloves garlic
14 oz crushed plain tomatoes (1/2 large can)
1/2 cup of heavy cream
2 cups chicken broth
2 tsp dried basil leaves or 1/2 bunch of fresh basil 🌿 -sauté minced onion and garlic with olive oil until golden. -add tomatoes and chicken broth, bring to a boil and let simmer for 5-10 min.
-pour everything into a blender, if you have an immersion blender even better you can blend everything in the pot, gotta get me one of those babies. -pour everything back into the pot then add cream and basil. Let simmer for at least 15 min. Add salt and pepper to taste.

Sometimes in our busy lives we need to stop, breathe, slow down and take a minute to reassess our lives. Remember busy is a choice. Just because we're busy, it doesn't mean everything we are busy doing is necessary. Prioritise what is MOST important.
When I'm busy doing so much my body will tell me to slow down by feeling achey, rundown, tired and I'll begin to feel blah! When I'm a little under the weather I like to have a big bowl of vegetable soup. If I was in Auckland I'd be coming around your place with some of this nutritious soup I just made with some homemade garlic bread @shanillereynolds 💖
