I used 2 cans of Sweet Corn 🌽 a handful of baby Carrots 🥕 2 Jalapeños (with Seeds!!) 🌶 A bunch of yellow Potatoes 🥔 a can of Black Beans 🍽 and about 5 cups of veggie 🥦 broth cooked on low for 6 hours. Seasoned with salt, pepper, garlic powder and crushed red pepper. I served with @cholulahotsauce 🔥! Not @whole30 compliant but 🤷🏼‍♀️...

Harvest Soup Ingredients:

3 cups mineral broth

filtered water

2 tbsp olive oil

1 small yellow onion diced

3-4 garlic cloves diced

1 cup chopped sweet potatoes

1 cup chopped acorn squash

1 cup chopped carrots

1 cup chopped rutabaga

1 chopped golden beet

Bay leaf

Fresh rosemary

Parsley

Mineral salt & pepper to taste

Soup Directions:

1. Preheat oven to 350 degrees

2. Line a baking sheet with parchment paper

3. Toss carrots, sweet potatoes, acorn squash, beets, and rutabaga in 1 tbsp olive oil and roast them for 30 minutes.

4. In the meantime saute onion and garlic in 1 tbsp olive oil until translucent.

5. Add onion and garlic mixture, mineral broth, and roasted vegetables to a large crockpot or stockpot. Add enough filtered water to top off the vegetables in your pot if needed. Add salt, pepper, and herbs. (If using s crockpot simmer on low for 4-8 hours. It’s been snowing here and it’s supposed to snow for the rest of the day as well. For lunch this week I’m making some black bean soup. Heat your large pot at medium. It takes 2 tbsp of olive oil to cook the 1/2 red onion, 1 minced jalapeño, and 1 clove of minced garlic. After they’re done, add in 1 tbsp. tomato paste to coat the veggies. Then add in 1/2 tsp of cumin, 1 tsp of chili powder, salt, and pepper as desired. Once the veggies are finished, add in 1 lb cooked black beans with the juice, and 1 Qt of vegetable broth. Let it come to a boil then reduce to a simmer for 15 minutes. I suggest using a wooden spoon to mash some of the beans to thicken the soup. Top with sour cream, avocado, and cilantro. Despite my best efforts, I caught the plague that's been goin around 🤧😷 so I whipped up this ULTRA HEALING VEGGIE SOUP 💊✨with tons of ginger, turmeric, carrot juice & leafy greens. It's just a big ole bowl of comfort:
- 4 cups organic, low sodium veggie stock
- 2 cups carrot juice
- 1/3 cup lemon juice
- 2 shallots (minced)
- 2 cloves garlic (minced)
- 3 carrots (chopped)
- 2 stalks celery (chopped)
- 4-5 mini portobello mushrooms (chopped)
- 1 red bell pepper (minced)
- 2 cups spinach
- 1 cup fresh basil (chopped)
- 1/2 cup fresh dill
- 1-2 big chunks of ginger
- 2 tbsp turmeric
- 1 tbsp smoked paprika
- 1 tbsp cumin
- 1 tbsp coriander
- 2tsp cinnamon
- 1 tsp nutmeg
- 2 bay leaves (remove before serving!!)
- Salt/pepper to taste!
1️⃣Start cooking down the ginger/garlic/shallots 2️⃣Add the large root veggies (celery, carrots, bell pepper, mushroom) and thoroughly sweat them out 3️⃣Add liquids 4️⃣Add spinach and fresh herbs 5️⃣Season then simmer on med/low heat for 15-20 min

Bringing sunshine yellow into my rainy Sunday lunch today, I made this fab and oh so simple Dhal. Simmer 250g or red split lentils or yellow  lentils (I used a mixture of both as love the texture), with 1/2 tsp turmeric powder, 1 tsp cumin powder, 1/2 tsp mild chilli powder in 750ml water until they resemble mushy peas (25 mins). Whilst the lentils are cooking fry one large chopped onion in 1 tbsp ghee or oil for 5 mins, and then add 4 crushed garlic cloves, 1 tsp grated fresh ginger, 1/2 tsp cumin seeds, 10 curry leaves, 1 tbsp tomato purée and 1/2 tsp salt. Cook for a further 5 mins and then add the onion mixture to the lentils, stir to combine and add 1/2 juice of a lemon, a large handful of chopped coriander and more salt and pepper to taste. Harvest Soup Ingredients:

3 cups mineral broth

filtered water

2 tbsp olive oil

1 small yellow onion diced

3-4 garlic cloves diced

1 cup chopped sweet potatoes

1 cup chopped acorn squash

1 cup chopped carrots

1 cup chopped rutabaga

1 chopped golden beet

Bay leaf

Fresh rosemary

Parsley

Mineral salt & pepper to taste

Soup Directions:

1. Preheat oven to 350 degrees

2. Line a baking sheet with parchment paper

3. Toss carrots, sweet potatoes, acorn squash, beets, and rutabaga in 1 tbsp olive oil and roast them for 30 minutes.

4. In the meantime saute onion and garlic in 1 tbsp olive oil until translucent.

5. Add onion and garlic mixture, mineral broth, and roasted vegetables to a large crockpot or stockpot. Add enough filtered water to top off the vegetables in your pot if needed. Add salt, pepper, and herbs. (If using s crockpot simmer on low for 4-8 hours. 🍅🥕 Trying the 'just like Heinz' tomato soup for lunch next week. The texture isn't quite there but it tastes lovely! I followed the two chubby cubs recipe, but forgot to add worcestershire sauce 🙊 also halved the quantities in case I wasn't keen.

Basically it's just beans, tinned toms, carrots, veg stock and a few pickled onions blended together. I know people have been making this for ages but I've never tried it as I wasn't expecting it to actually taste like Heinz. Lunches for the week made in 15 mins! Ready to just heat and serve! Roasted Poblano Soup
Yesterday’s shrimp dinner was accompanied by some salad and a Roasted Poblano Soup. Recently my friends and I had a girls night and we went to @hearsaylounge for dinner. I had their Poblano soup and fell in love. I’m sure their version wasn’t Keto so I had to make my own. It was SO good. I always gauge whether a dish is a hit by if my kids love it. My son said over and over again “oh my god Mom I love this soup!” So yea. It’s a hit. 
Roasted Poblano Soup- 
3-5 Poblano peppers
1 Jalepeno
Half onion
4 cloves garlic
Salt 
Pepper
Chicken broth
Cream

Oven at 400, roast all the vegetables until the peppers are blistering. Remove as much skin from the peppers as you can. Heat up some chicken broth and add all veggies and let come to a boil. Reduce to simmer and add salt and pepper to taste. Blend the soup and add cream. If it’s too spicy just add cream until it tones down the spice. .

Just made a wholesome butternut squash soup for 4/5 people with just 2 squashes, 4 small onions, 2 vegetable stock cubes(without e numbers!) and three table spoons of Jethro’s Red Chilli & Garlic sauce. We hope to be sampling this at tomorrows Oxford Vegan show, as long as we don’t eat it all😋. Recipe is so simple just chop the butternut squash, toss and soak in our Red Chilli sauce then roast on a baking tray gas mark 6/200’c for approx 25 minutes. Chop the onion and fry gently in a little oil to soften before adding the vegetable stock and water. Add the roasted butternut squash and simmer for 10 minutes before blending and serving with your choice of garnish and bread. Oh and remember to save the seeds - wash, dry and roast them at the bottom of the oven. I added a fine coating of Jethro’s Naga Fire to mine for a fiery snack.

If you feel a winter sniffle👃coming on then you need this 🌶SPICY SUPERFOOD CHILI VERDE🌶!!
Created by the best soup maker I know, my hubs @blatz75, this soup will getcha back on ya feet and put a bounce in ya step 💃. Made w/ lots of spicy peppers to help clear your sinuses, bone broth to support a healthy gut + all those veggies packed with immune boosting nutrients!
Ingredients:
2 lbs chicken breasts or thighs
2.5 tbsp ground cumin
2 tbsp dried oregano
1 tsp sea salt
2 tsp coarse black pepper
2 tbsp olive oil
2 med yellow onions (diced)
5-6 cloves garlic (roughly chopped)
4 green chiles (w/ seeds, coarsely chopped)
4 poblano peppers (seeded, coarsely chopped)
3 med jalepenos (seed 1, leave 2 with seeds, coarsely chopped)
1 bunch kale (stemmed, finely chopped)
2 lbs fresh tomatillos (paper husk removed, quartered)
32oz chicken bone broth
Toppings:
1 bunch cilantro (chopped)
4 radishes (julienned)
2 avocados (sliced or diced)
Tortilla chips
Greek yogurt
Shredded cheddar cheese or Mexican blend
Limes (cut into wedges)
Directions …
Chicken:
1) Heat oven to 375°, bake chicken, lightly seasoned with salt & pepper, 35-40 minutes.
2) Remove from oven, let cool for 5-10 mins & then shred with two forks or chop into 1/4"-1/2" pieces, set aside. 
Soup:
1) On stovetop put a large soup pot or Dutch oven on med-low heat. 
2) Add cumin thru pepper & lightly toast spices until fragrant, ~1-2 minutes. 
3) Add olive oil & mix with spices.
4) Turn heat up to medium & immediately add diced yellow onion & garlic. Allow to cook until softened, ~8-10 min.
5) Add green chiles thru jalepenos & allow to cook ~10-12 minutes until everything is softened. 
6) Add tomatillos & kale, cook 12 more mins until tomatillos begin to breakdown.
7) Add broth, cover & allow to simmer over medium heat for 10 min.
8) With an immersion hand blender, blend soup in pot until smooth. If you don't have an immersion blender ladle soup into regular blender in batches, blend until smooth, return everything to pot.
9) Add chicken & simmer on low for 10 min.

🚨✨Recipe alert!✨🚨 If you feel a winter sniffle👃coming on then you need this 🌶SPICY SUPERFOOD CHILI VERDE🌶!! Created by the best soup maker I know, my hubs @blatz75, this soup will getcha back on ya feet and put a bounce in ya step 💃. Made w/ lots of spicy peppers to help clear your sinuses, bone broth to support a healthy gut + all those veggies packed with immune boosting nutrients! Ingredients: 2 lbs chicken breasts or thighs 2.5 tbsp ground cumin 2 tbsp dried oregano 1 tsp sea salt 2 tsp coarse black pepper 2 tbsp olive oil 2 med yellow onions (diced) 5-6 cloves garlic (roughly chopped) 4 green chiles (w/ seeds, coarsely chopped) 4 poblano peppers (seeded, coarsely chopped) 3 med jalepenos (seed 1, leave 2 with seeds, coarsely chopped) 1 bunch kale (stemmed, finely chopped) 2 lbs fresh tomatillos (paper husk removed, quartered) 32oz chicken bone broth Toppings: 1 bunch cilantro (chopped) 4 radishes (julienned) 2 avocados (sliced or diced) Tortilla chips Greek yogurt Shredded cheddar cheese or Mexican blend Limes (cut into wedges) Directions … Chicken: 1) Heat oven to 375°, bake chicken, lightly seasoned with salt & pepper, 35-40 minutes. 2) Remove from oven, let cool for 5-10 mins & then shred with two forks or chop into 1/4"-1/2" pieces, set aside. Soup: 1) On stovetop put a large soup pot or Dutch oven on med-low heat. 2) Add cumin thru pepper & lightly toast spices until fragrant, ~1-2 minutes. 3) Add olive oil & mix with spices. 4) Turn heat up to medium & immediately add diced yellow onion & garlic. Allow to cook until softened, ~8-10 min. 5) Add green chiles thru jalepenos & allow to cook ~10-12 minutes until everything is softened. 6) Add tomatillos & kale, cook 12 more mins until tomatillos begin to breakdown. 7) Add broth, cover & allow to simmer over medium heat for 10 min. 8) With an immersion hand blender, blend soup in pot until smooth. If you don't have an immersion blender ladle soup into regular blender in batches, blend until smooth, return everything to pot. 9) Add chicken & simmer on low for 10 min. 10) Eat! The How-To: .
1 tablespoon butter
1 small onion , diced
1 cup diced carrots
3 cups fresh broccoli
2 cups chicken broth
1/2 teaspoon each thyme and garlic powder
salt & pepper to taste
2 tablespoons flour
1 1/2 cups light cream
1 cup sharp cheddar cheese
1/3 cup fresh parmesan cheese

In a large saucepan, cook butter, onion and carrots over medium heat until onion softens (about 3 minutes). Add chicken broth, broccoli and seasonings. Simmer until broccoli is softened, about 8 minutes.

Remove 1 cup of vegetables, coarsely chop and set aside. Using an immersion blender, blend remaining vegetables and broth. 
Place flour in a small bowl. Add in cream a little at a time stirring until smooth. Bring blended vegetable mixture to a boil and whisk in cream mixture. Continue whisking until thick and bubbly, about 3-4 minutes.
Remove from heat, stir in cheeses & reserved chopped vegetables and serve immediately. INGREDIENTS
-Your choice of oil to brown sausage
-4 large garlic cloves minced
-5 cups vegetable broth (low sodium)
-2 large yellow onions
-5+ cups chopped kale
-2 (14.5 oz) cans of diced tomatoes
-1 (20 oz) can cannelloni beans, drained/rinsed
-2 cups baby carrots cut into coins
-1.5 c sweet potatoes cubed
-1 lb chicken sausage 
DIRECTIONS
-Brown sausage, large pan, 5 mins
-Add garlic and onion
-Add sweet potatoes, 5 minutes
-In soup pot, combine sausage, garlic, onions, sweet potatoes with broth, kale, tomatoes, carrots and simmer for 5 mins
-Add beans
-Cook for 1+ hours, stir occasionally

Hey 👋 hey 👋 hey party people! It’s “souper” Friday and it’s cooling down here in Sol Cal. Now...we can’t compete with the east coast or mid-west (10 or 5 degrees F)....❄️.... but’s it’s going to get down to the 30s and 40s at the beach😳—yikes! Wherever you are, fresh hot vegetables soup with certainly warm your soul!  In any pot you have sauté onion, garlic, carrots and celery in a little olive or grape seed oil. Allow them to cook on low till soft. Then turn up the heat 🔥 and throw in a bunch of chopped veggies that you love. Add a bay leaf, 1-2 tbsp cumin and fill your pot with water. Bring to a boil for 20 minutes , then reduce heat and simmer for 40 minutes. If you’d like, add 3 oz of tomato paste for a richer broth. Then serve it up and enjoy!!! This simple detox-friendly recipe is a great addition to a clean eating regimen. 1. In a large saucepan, heat oil over medium.
2. Add onion and cook until soft and translucent.
3. Add garlic and cook for one minute.
4. Add broccoli and cook for 4 minutes until it is bright green.
5. Add water (or vegetable stock), salt, pepper, and thyme.
6. Bring to boil, then cover and lower heat. Cook until broccoli is tender, around 8 minutes.
7. Carefully transfer the soup into blender & add arugula, blending until smooth. NOTE: Be careful if you are using a blender, start slowly, place the lid on top of the blender but don’t press the lid down and work in batches if necessary.
8. Add the lemon juice and serve.

🥘👩🏻‍🍳 🙌🏻🥣 This is hands down, the most amazing chicken tortilla soup I have ever had AND bonus, it is absolutely impossible to screw up. Trust me, it was supposed to go into a crockpot until I forgot to buy the chicken 🐓 🙈🙈 so I improvised and turned it into a stovetop soup recipe!
