I am SO excited to share this with you guys 😁. Tonight I made my very first homemade pizza! Crust and all! And to make it I used @birchbenders PALEO pancake mix. It's completely grain-free, gluten-free, soy-free, gmo-free, and dairy-free! Oh and it tastes AWESOME. Although, this might technically be along the lines of a flatbread but I'm sticking with pizza 😉

- 1 cup @birchbenders paleo mix
- 1/4 cup finely chopped kale
- 1 scoop @vitalproteins collagen peptides
- 1/4 cup water
- 2 tsp. avocado oil
- 1/2 tsp sea salt
- 1 tsp garlic powder
- 1/2 tsp pepper
- 2 tbsp @kitehill chive spread - 2 tbsp @kitehill plain almond gurt
- Sliced heirloom tomatoes
- Baby spinach - Parsley
- Sliced green onion (green part only)
- Bunch of microgreens - Pinch of salt and pepper
- 1 tsp nutritional yeast
1. Set oven to 425°. Spray pizza pan with oil spray (I used @chosenfoods avocado oil)
2. Mix all crust ingredients in a bowl and kneed until one lump
3. Spread onto pan and form round flat crust - about 1/2 cm thick or to about the diameter of your hand spread out. If you like a thin crispier crust make it thinner that this.
4. Cook on the middle rack in the oven for 10 minutes
5. While thats cooking blend kitehill spread and gurt w/ salt + pepper, and nutritonal yeast.
3. Spread kitehill sauce down and top with the remaining ingredients EXCEPT microgreens.
4. Cook an additional 10 minutes
5. Top with microgreens *Optional - drizzle with avocado or olive oil before serving
I'm a dipper myself so I skip the drizzle and dip the pizza straight in guac 🥑

I woke up (late, after some seriously glorious sleep) just CRAVING something sweet. I honestly haven't had that many cravings during my killtheyeast quest, so I wanted to honor this one.
So I came up with this absolute masterpiece of a bowl:
a little coconut water
1/2 a frozen banana 🍌
1 scoop @rootznutrition chocolate banana nut paleo protein-superfood
1 scoop @furtherfoodcollagen
1 tsp maca powder
1/2 tsp cacao powder
1/2 tbsp mctoil
Topped with coconut, cacaonibs & chiaseeds
AND OH MY GOODNESS IT IS HEAVEN! The only sugar comes from the banana and a little stevia in the protein but it tastes beyond amazing. Like the best chocolate milk I've ever had. 2/2 recommend!(because there's only 2 of us here to experience it but I'm sure 1838473 more of y'all would agree)

I'm doing this for a week to really shift my mindset and taste buds towards really enjoying veggies. However it could have the opposite effect 😱😭😬🤣. #upyours ! #veggiechallenge
When things are going as plan, that's when it's easy. It's the challenge of sticking with something when a wrench is thrown into the mix.
My mindful eating challenge has gone great for the last four days! I've been on point, drinking tons of water and am feeling great.
Today, one of the children gets sick and now is the time to be extra mindful and purposeful when it comes to eating. Being off course is one of my triggers and to recognize before it cannonballs in to mindlessness is step one!
