Salmon and bacon chowder with lots of Old Bay! I made this in my #instantpot and it honestly tasted like I ordered it from a restaurant. I cooked onions, garlic and celery on the sauté function and then added chicken broth, cubed potatoes and salmon. Pressure cooked it for 30 minutes and then stirred in some half and half and well-mixed cream cheese. I cooked the bacon in the oven so that it was nice and crispy but if you want to add the bacon flavor to the broth you can throw it in with the fish and potatoes. When I tasted the broth it was pretty bland so I added old bay, plenty of salt, black pepper and smoked paprika. It was still a little bland so I realized it needed something else. I stirred in some soy sauce because I was worried vinegar would be too aggressive. I know it sounds weird, but I add soy sauce to all kinds of unexpected things and don't tell anybody about it. If you add just enough to give the sauce some salt and umami, but not enough to actually taste the soy flavor. It deepens the flavor of almost any sauce...especially thanksgiving gravy! .
