So whilst I enjoy and eat meat/fish, I’m a strong believer that it’s pretty easy to make a few changes to our diet in order to better the environment. By cooking at least a few vegetarian/vegan meals a week, I can easily cut down my intake of animal products without really realising and not only could it be beneficial for my health, it could also make a small difference to the environment. 🌏 (ps. I don’t want to delve too deep into this subject, but it’s completely up to you as to what food you choose to put into your body, whether you’re vegan/vegetarian/meat-eater/anything in between) ✌🏻
Fry onions, garlic, carrots and mushrooms in a pan on medium heat.
Meanwhile, cook spaghetti (or any other pasta) in another saucepan.
When veg is soft, add vegan mince of your choice. Cook until browned.
Add chopped tomatoes and tomato purée to the pan, along with a small cup of water.
Season with salt, pepper and basil and leave to simmer until most of the liquid is gone and sauce looks thicker.
Serve with the pasta and ta daaaa! (In all honesty, tastes pretty much the same as sag bol made with beef mince) 🤷🏼♀️ Enjoy 🍝
