Last night, I made fajitas with red onions, portobellos, king oyster mushrooms & green bell peppers. I topped it off with a quick homemade salsa - cherry tomatoes, red onions, jalapeños and cilantro.

The recipe is very simple - just be sure to use a cast iron for the veggies; it truly makes a difference!
Sautée thé onions first with a little bit of grape seed oil (or another oil of your choice). Add mushrooms (portobello and king oyster) and sautée until cooked. Add bell peppers and be sure not to overcook them. Season with pink Himalayan salt, paprika, onion powder, oregano, cumin and cayenne pepper.
For the salsa, use organic cherry tomatoes! In a bowl, mix tomatoes, finely chopped cilantro, onions, jalapeño peppers (optional), fresh key lime juice (or regular lime) and sea salt to taste.
We put the fajitas on top of a spelt tortilla. 😋

One of my babies brought me those "wishes" yesterday.. and it was a wonderful reminder of how far I've come, health wise. I would've been a sneezing mess a few years ago, but yesterday I was able to receive them and leave them in the library. .
When I first cleaned up my diet and attempted my healing, I left all grain. And it most definitely helped me. Maybe I had leaky gut? I swear I did because any and all grains would give me all types of ailments, including horrible, horrible inflammation where I wouldn't be able to use my hands for hours at a time!
Now I eat grains here and there and I'm not bothered at all. What my body now doesn't want is meat, and so I'm listening to my body in this stage, too. .
Anyway! To this book^^ it's such a great one. Everything I've made has been super yummy, and there's everything in it... crackers, biscuits, all kinds of bars.. pies, cakes, breads. It's a homey, sweet book that I enjoy curling up with. I'm currently experimenting with swapping out the sugar for maple syrup and so far so good! I loathe the effect sugar has on me when I have too much.. headaches, sinus pain, chills like I have a fever! Yuck! .
