Stuffed Sweet Potato 🍠 🥑
This is a new favorite of mine! Perfect for breakfast, lunch or dinner! (Or snack 😋) Ingredients:
• 1 Sweet potato • 1 mashed avocado • Spicy Mustard (Whole30 approved) • 1 Tbl almond butter • Left over blueberry glaze (check salmon blueberry glaze for recipe) • coconut flakes • Everything but the bagel seasoning (Trader Joe’s)
• bake the sweet potato until soft (I popped it in the microwave for 5-7 min, after I punched holes in it with a fork so it wouldn’t explode) • cut in half and scrap up the insides
• one half: Place almond butter, blueberry glaze (I know sounds strange but yummy!) , and coconut flakes • one half: mashed avocado, spicy mustard, and everything but the bagel seasoning • Enjoy 😊 • Tip: you can even spice it up more and add some protein like roasted chicken, or a poached egg 😊

A cold winter in my kitchen, a never ending 🤢🤧👾 rolling through the house, and picky pre-school eaters have all tested my patience for cooking lately but I realized circa 2009 after having my gallbladder removed at 27 years of age that my self care and nutritional habits were my responsibility, no one else’s, not my husband, not my parents, not my doctors and that gave me a renewed sense of power.
I’ve learned to listen to my body, not cover it up with prescription drugs and convoluted professional misinformation. I took my love of reading and did my own research. It wasn’t until after I lost my gallbladder, after years of diagnosis like GERD, IBS, PCOS, and seasonal depression, that I realized I had food allergies.
Stomach discomfort over the years turned into acute abdominal pain and none of my tearful cries for help left on voicemails to the doctors office were returned. They couldn’t handle a fed up Chiquitarita. I told the nurses and gastroenterologist to stick it up their own a$$. And never went back!
I went to allergists, naturopaths, chiropractors, healers in every form when healthcare insurance days were better. Allergy shots, horse size vitamins, and endless information I waded through until I landed where I am. I have ‘borderline’ allergies to dairy, bakers yeast, and cod. This meant that things that were staples to me milk, pizza, mac and cheese, and most of my eating out favorites, lasagna, bread, mozzarella sticks, all things cheese and even beef were my triggers. Lots of miserable fails, thrown out food and self pity followed but then I started to notice things. 👇 continued in comments 👇
Ok, this looks boring but tasted amazing. Best part- just warmed it up because I prepped yesterday. Brown rice, peas, and chicken cooked with 1/2 @tessemaes honey mustard and 1/2 spicy brown mustard. Mmm Mondaze 😏brought to you by meal-prep Sundays 🤩
