It was, honestly, the best meal I've had at an upscale restaurant/steakhouse, period. Layton is super personable, staff is attentive, seriously, give them some love! Well worth every penny❤

I confess! I guess I needed extra caffeine today ☕️
On my way to my last client of the day I stopped and splurged!
I used to spend SO much money at Starbucks but now it is VERY rare that I give in to the craving.
But when I do I now have it down to keep the sugars, fat and empty calories to a minimum.
I always get non-fat and only 1/4, or less, of the added flavoring for a particular drink 😉 and lastly, I get a "tall" (the smallest size).
Hey, it's all about balance, right?! 😆🤷🏼♀️

This was my first time ever making lasagna that didn't come frozen in a box and it was a lot easier than I expected (but it still took a while ⏳) ~ it would have been a good two-person project 👭
I used this recipe that I found on Pinterest and it was amazing! The only thing more amazing is having it for leftovers over a bed of spinach with roasted Brussels sprouts and Swedish meatballs. 🌱
It boasts layers of buttery mushrooms, bright spinach, and protein rich low-fat cottage cheese (I swapped out the ricotta) as well as mozzarella and parmesan! 🍄
I didn't think lasagna could be healthy, especially white lasagnas like this one that replace tomato sauce with a milk based sauce, but this one is a nice compromise of healthy and indulgent. And making it yourself makes you conserve it with tiny portions since you know how much effort it took!!!
