Super simple dinner. Using things I had in the freezer and hey, it fits my macros and turned out insanely flavorful.
Pork tenderloin made in the #instantpot with garlic salt.
Basmati rice, and #steamfresh veggie pack. Rice bowls are so fun to play with. I use half a serving of rice and load it with more protein and veggies to make it work. And it works very well!
What are y'all cooking for dinner tonight tho?!?! There's nothing really fancy about this meal because I ain't have TIME or energy the first day of school... ☝🏾 BUT it's quick and it's so yummy. And there something about cutting a piece of this chicken and coating it in these homemade garlic whipped potatoes that makes me a happy mommy.

You need: •W I N E- just to drink. You had a long day!
•Music: Trap, Gospel, or Jazz. Depending on your day.
Chicken: •2 Paper Plates •Large, Flat Cookie Sheet
•Parchment Paper or Foil
•1 LB or pack of Thin Sliced Chicken Breasts •#Mortons Nature's Seasoning (you need to get this anyway. Change your whole life)
•1 Gallon Zip Loc Bag (Take one from the kids' school supplies 🙄😂)
•3/4 cup flour
•6 oz French Fried Onions (I approve the #Kroger brand)
•2 eggs, beaten in a bowl
Garlic Whipped Potatoes •5-6 medium size white potatoes.
• 3/4 stick of butter or the whole thing 🤷🏽♀️
• 3 heaping tablespoons of sour cream
•Sea Salt, Garlic Powder, and Pepper to taste
•Electric Hand Mixer
Veggies: •1-2 Packs of #SteamFresh Whole Green Beans
Instructions: Send your kids to do their homework or to do something with their lives. Something safe 👀😂. Preheat your oven to 350.
Turn your music on.
Pour your wine.
Take a sip.
Take a deep breath.
You made it through your day, honey. It's almost bedtime. You ready? Let's cook!
Clean your chicken. Place each filet on a large plate. Season each side with natures seasoning. Place a large sheet of foil or parchment on the cookie sheet and spray with cooking spray. Set both aside.
In the ziplock bag: add flour and fried onions. Close bag, letting all the air out. Crunch with your hands and combine mixture to create a coarse coating. Pour mixture on the other plate. Season egg mixture with natures seasoning. Dip the chicken in the egg mixture. Place each filet on the flour/onion mixture and dredge (you learned a new word...it means put it up there) on both sides. Place the filets on the cookie sheet.

Had some filo, chicken and rice left over!! Made spring rolls!! Unreal!! Light, crispy and really filling!! I couldn't face breakfast (we all have them days) so brunch it is!! For a random recipe it's amazing what you can do with left overs!! Recipe
* x2 Sheets of Filo pastry for each roll * Microwave rice - (I use Birdseye steamfresh got everything in them triangles) add any vegetables or meat or fish once microwaved and let that cool to one side *Spray a baking tray with frylight to avoid sticking * Get the filo pastry ready and spoon the filling in a neat line * To do the wraps fold the long edges in first then start with the filling end and roll up make sure the fillings cool so not heats or splits at this point * Wack on the tray * 1 tablespoon of olive oil and salt to crispen up the rolls
# Bang in the oven at 200c and bosh * Inhale spring rolls with a side of soy sauce (I use Blue Dragon light as it has super vitamins in it and perfect for cooking with)

It was really tasty and the texture of the pasta was similar to regular pasta, a whole bag weighed out at 264 grams which had really great macros, especially today when I overloaded on protein pretty early in the day!
