Pumpkin spice season may be waaaay over but I'm still here craving these Pumpkin Pie Chai Lattes with Maple Whipped Cream. Another shining example of a recipe I test, photograph, edit and then....NOTHING. It never sees the blog or even the light of day. *sigh* the struggles of being a food blogger. I really want to develop this recipe more and share it next fall on the site. Yay or nay?

A little reminder of the day (night) to come. In box 17 I found Christmas Night tea. I’ve been to the ballett this weekend and The Nutcracker by P. Tsjajkovskij gives me the christmas feeling. So happy I managed to be there.

I’m not going to lie I ate about 4 of these cupcakes over two days it was purely for recipe testing for a wedding cake I’m making in February plus I needed the energy for a fundraising bbq! But this fluffy meringue icing was just too good to resist. Do you love the mini cupcakes I turned them upside down to ice they remind me of little plum puddings 🍬
