Dinner tonight -Stirfry- one of my absolute favourite quick dinners as it only takes 10 minutes and it's a great way of using up all those old veggies in your fridge. Today I used coconut amino sauce and coconut milk for the "sauce" rather than the horrible bought sauces from the supermarket that are filled with nasties! And I must say it tastes delicious 🙌🏻 will defantly be using the coconut amino sauce for everything even salad dressing and the coconut milk is now replacing the almond milk which I used in smoothies because as I was reading the ingredients of the almond milk so many of them had a bunch of other crap mixed into it.
In this stir fry I used:
-broccoli -2 carrots
-organic beef -walnuts -cashews -pumpkin -Cucumber -spinach
-coconut aminos (no particular amount just to suit individual taste) -splash of coconut milk
This week has been all about me getting back on track with eating properly and making food for myself. I'm stoked about the truth that I'm finally getting back into the place where I was mentally before my break up and everything.
Right now I'm balancing a fine line in between eating right AND enough and eating "right" (aka I have the habit of getting almost relegiously fixated on the health aspect of foods and end up leaning towards orthorexia) and eating as few calories as possible (as I easily end up in a mindset of just restricting the calories to a ridiculous amount). But I'll finally start using my Instagram again and I think I'll just use this in a diary kind of a sence just to keep myself in check with my well being.
But hey, I'm back and here's what I had for dinner yeaterday! Tempeh and veggies ❤.

Stir fried rice with a bit of colour! 🙊🌱 during assessment period I try to find the quickest, easiest meals to make (unless I'm procrastibaking) and stir fried are most definitely one! Also if anyone from my business/marketing class is reading this, y'all had better be in today because I've basically made a cake mountain and I can't eat it all myself if no one turns up sooo (I mean I could but I wouldn't feel too great haha) 💛✨ ALSO MORE NEWS FOR TODAY! Coconut curry chicken, diced avocado, roasted sweet potato, roasted red peppers, spinach and ancient grain flat bread crackers. Doesn't get much better than that!

How to make it fluffy? Add baking powder!
This is a laborious dish and difficult to make right. But when you do, it's amazing.
The sauce is thick and not too sweet, and the batter is crispy. So yum eaten fresh off the wok! 😋
Whipped up this awesome udon noodle stir fry with mushies, boc choy, zucchini, and onion topped with shredded seaweed and sesame seeds! Soooo good, and literally only took like 20 minutes! 🍜 and I got my water and coconut water to compliment 😋 I ate it from the pan because I'm lazy but cast iron skillets look cool amirite?
