Made my own tofu stir fry for din tonight 😋. This is super easy - just stir fried a bag of stir fry veggies from @publix and pan fried two squares of pre-baked teriyaki tofu for the top. Moo Goo Gai Pan, sounds complicated but surprisingly simple.
👉🏼Whisk an egg white and a tablespoon of cornstarch. Soak thinly sliced chicken in the mix for 30 minutes (this gives the meat that "takeout" texture)
👉🏼Stir fry veggies of choice in olive oil for a few minutes and remove from pan.
👉🏼Drain chicken from egg mix and stir fry in the pan with olive oil until cooked through, 3-5 minutes.
👉🏼Mix ginger, garlic, 3/4 cup low sodium chicken broth, 1 teaspoon sugar, 1 tablespoon low sodium soy sauce & 2 teaspoons sesame oil in a bowl. Whisk in 1 tablespoon cornstarch.
👉🏼Add vegetables and sauce back to pan, bring to a boil for a minute until sauce thickens.
A little dish crafted out of veggies from our gardens! The Brussels sprouts, onion, and mushrooms 🍄 came from the store but we grew everything else. @lia_mariaa grew the beet and radishes - her bed was dug straight into the ground and has been very successful with root vegetables. I grew the peppers, but she has some really good ones growing too. Those little red ones are crazy hot 🔥! Tomatoes 🍅 came from both gardens, but hers did way better being planted directly in the ground while mine struggled in pots this year. We fried bacon 🥓 in a cast iron pan then sautéed the veggies in the fat with sea salt and black pepper. Shredded raw cheddar 🧀 on top and that's a meal

Had a little personal breakdown after work today😔so I decided to make today my rest day. ~
I'm still trying to get myself to know that it's okay if I take a rest day in the middle of the week. I've been having some real trouble being okay with it and I obsess over it all night. I'm not sure how to get myself to be okay with it and stop comparing myself and putting myself down about not working out one day😞

I turned an M&S vegetable side into a full on meal.
I coated tofu in nutritional yeast, cornflour, salt and pepper, and rapeseed oil, and fried until nicely browned. I then added finger chillies and chopped chestnut mushrooms, before adding the contents of the Soy and Sesame Greens packet. Once heated through I sprinkled over the included tasty crispy onions.
I enjoyed. I am going to experiment with coating tofu in different ways as even though I messed up a little (the coating wasn't supposed to be mixed with the oil), this was delicious. Nutritional yeast is the proverbial bomb.
