My daughter helped her daddy cook tonight. She cut up the veggies to help contribute to this beauty vegan teriyaki stir fry. If she keeps this up, I told her that she can make us dinner one night and I'll be her assistant. It's amazing how much our kids love to assist us big people if we let them:)
Stir fried red curry rice noodles with seared Argentinian shrimp. Tried something I’ve been kicking around for a while.
I like to get the Argentinian wild caught shrimp for their lobster-like flavour. The raw shrimp is actually red in colour, so don’t get fooled thinking it’s cooked if you do buy it!! I marinated it a couple hours ahead in a mix of sambal (red chili paste), lime juice, and soy. Simply seared in the cast iron in a little bit of peanut oil.
The noodles are simple rice ones. I sautéed them in onion, garlic, red curry paste, and coconut milk.
First attempt, pretty good. Definitely needs some sort of garnish. I’m thinking a “salad” of chopped up cilantro, green onion, and jalapeño.
