Vegan chikn teriyaki stirfry with couscous and fresh lettuce from the garden. I actually didnt even plant this lettuce, a seed was hanging around from last spring and randomly decided to grow through a crack on the insulation, nature will not be stopped apparently. Did alot more winter planting today as well, because of using aquaponics I'll have more lettuce in 4 short weeks. Tomatoes are actually thriving in this weather, thankfully the water is warm enough to prevent frozen roots. Chives and strawberries are out of control. Celery has shot up as well. Very blessed and grateful for the abundance of food. Can't wait to have my own space to cultivate one day, until then I'm so thankful to have this system to use.

Beans, onions, garlic, carrots, zucchini still tiding me over from last summer's garden til next, only things I didn't grow here were the green and purple cabbage, and the coconuts in the oil. Or the Himalayan sea salt & organic fresh ground pepper. Served over quinoa (Which I could grow in this climate but haven't in any great quantities yet.) Also featured: garden beets with coriander preserved in apple cider vinegar, homemade spiralized kimchi with extra probiotics added for supreme gut health, and pesto made from garden basil. Yum! 🥕

A dear friend who was in town for the marathon gave me these beautiful mushrooms, with instructions for immediate consumption. As if I needed any motivation 😂
Anyway, so I wanted to make something simple to bring out their earthy flavours. I heated some oil in a wok, added lots of chopped garlic & sliced onions, cooked till it started changing colour. Then I quickly added the mushrooms followed by broccoli florets & stir fried them. Flavoured this with soya sauce & freshly cracked pepper, topped it with seasame seeds & a squeeze of lime. Voila, dinner was done!
