Chinese style stir fried zoodles with @panpacificsingapore garlic pork sausage, shrimps, enoki mushroom, and the remainder of this morning's sweet potato pork mash.. hahaha. Everything in!
STIR FRY ZOODLES
Spiralized zucchini, lightly blanched
4 garlic minced
1/2 onion minced
Handful of enoki mushroom
1 garlic pork sausage
Handful of shrimps
(Leftover sweet potato pork mash)
Coconut aminos TT
Sesame oil TT
Sea salt TT
Stir fry garlic and onion in a wok with olive oil util fragrant. Add in diced sausage and shrimps, stir fry till half cooked. Add in mushrooms. Season with coconut aminos and sesame oil. Add a little bit of salt. Add in sweet potato pork mash and go crazy until it's all cooked and separated. Turn off heat and add in zoodles. Mix well. Taste and season more if necessary. Add some kick with cut chilis
Felt like I needed a big serve of greens! 🌿🍃🌱 So I stir-fried a whole head of broccoli and a baby buk choy (oil-free of course 😉) with a miso & rice wine vinegar sauce, and served it on a bed of quinoa ✌🏼

We ate dinner late so the colors don't quite get to shine here but this #vegan stir fry definitely felt summery. Details: sugar snap peas from the farmer's market, carrots and ginger-y pan fried tofu over brown rice.

Meatless dinner tonight! Tofu stir fry bowl. Base of Farro with stir fried asparagus, cauliflower, and carrots topped with crispy tofu and a honey ginger dressing.
