Food prep saved the day 😵🤗 Today was a stressful day as I shared earlier but thankfully our nutrition didn't suffer and it's all because of food prepping.
I pulled individually sealed salmon out of the freezer (thanks @aldiusa ) along with frozen mixed veggies cooked in butter. That was lunch with a random slice of toast with pb and banana. The salmon thaws quickly when you run cold water over it so it was a 10-minute meal.
Dinner was taco night. I pulled a pound of ground meat I had cooked and seasoned out of the freezer then dumped diced peppers that I also had in the freezer in the frying pan with sliced onion and a spoonful of garlic. It was another 10-minute meal.
