Thank you @awholeandhappylife for having us at your glowing goddess event in DTLA! For those who could not make it, here is her recipe for this sugar free stevia-sweetened autumn pumpkin spiced latte bread 🍂🍁 INGREDIENTS * 1 cup organic pumpkin puree
* 1/4 cup & 2 tablespoons unsweetened cashewgurt or cashew yogurt I use Forager products which are super clean ingredients
* 2 organic eggs
* 1/4 cup maple syrup sugar-free option 7-10 drops of stevia
* 1 teaspoon vanilla extract
* 1 tablespoon melted coconut oil
* 1/2 cup coconut flour
* 1/2 cup gluten-free oats Could add 1 cup & replace the coconut flour.
* 1 cups almond flour Could replace with hazelnut flour
* 2 teaspoon pumpkin spice I used the one from Trader Joes.
* 1/4 teaspoon Himalayan pink salt or sea salt
* 1 teaspoon baking soda
* 1/4 cup chocolate chips optional- but is so yummy!!
1. Pre-heat oven to 350 Use two bowls one for wet and one for dry ingredients. Add 2 eggs to bowl and whip it up. Add the rest of the wet ingredients and mix
2. Add the dry ingredients to the second bowl. Pour the wet on top of the dry and mix.
3. Pour into a bread pan or you can trick your family and yourself by pouring into a donut pan and make yourself some faux donuts!! 4. The donuts take about 15-20 min to bake and the loaf take 45-60 min to bake.
It’s latte o’clock! Start with any hot coffee or tea base, add a splash of yummy nut milk and sweeten with your favorite @omicaorganics stevia or sunroot sweetener to taste ☕️ What are you currently brewing?
Popped home a quick lunch today. Just reheated this crazy massive pizza we made on Monday (topped with masala curry sauce, leftover roast veggies, vegan cheese) and cooked up some cannelini beans with tomato passata, garlic, ginger, some old sad rocket, red cabbage, peas, oregano, salt, and paprika. Breakfast cereals are some of the worst offenders when it comes to added sugar, so ALWAYS read the label and try to go for green on the traffic lights 🚦🚦🚦 I was starving when I woke up this morning and this was exactly spot on! LET'S GET FREEKEH!!! my friend gave me some freekeh (like pasta but low fat and high protein) recently cos she's leaving the country (@bryony_miles waaaahhhhhh)!!! It's like cous cous/pasta/bulgar wheat and pretty good. This is it with coconut cream and tomato, turmeric and curry spices, plus veg and rocket. Nice n sloppy and warm for a wet grey day.

3 tbsp cacao powder
1 tbsp coconut oil (optional)
1/2 banana (optional)
a dash of sea salt

BUTTERSCOTCH PUMPKIN BREAD 🎃🍞 gf/df/paleo
2 cups almond flour
2 scoops collagen peptides
1 tsp baking powder
2 tsp ceylon cinnamon
1 tsp nutmeg
2 tsp golden turmeric powder .
1 cup pumpkin puree
1/4 cup brain octane oil
1/4 cup @omicaorganics sunroot syrup
1/2 tbsp @omicaorganics butterscotch stevia
1 tsp vanilla extract
1. Preheat oven to 350°. Line a loaf pan with parchment paper.
2. Mix together the dry ingredients until well-combined.
3. Add the wet ingredients in and mix until well-combined.
4. Pour mixture into the loaf pan and bake for 50-60 minutes or until edges start to brown.
5. Let the bread sit for at least 20 minutes to cool off. Then enjoy! 📷 by @bakedbyanintrovert

Early lunch cos I'm hungryyy!!! Vegetable soup from Sainsburys with added mushrooms and silken tofu. With a side of multi grain Ryvita with vegan cream cheese spread and rocket.
I'm always surprised at how many of the supermarket soups contain added sugar! Next time you're there just check it out. I think I only found 2 that were vegan and sugar free!

I did get some bad news today too about @nakdbars 😣 because the dates are macerated, the natural sugars act like free sugars, so these delicious bars weigh in at about 15g sugar each! Half the daily recommended max! Gutted!!!! These have been my go to snack since getting sugar smart, and now I know they're not sugar free I'll have to eat them more sparingly 😢

Haven't had a breakfast smoothie for ages, just cos it's been a bit chilly! But I fancied one today (and we got nothing in the house really...). This is frozen banana, purple kale, leftover chard, flax seeds, sunflower seeds, raisins, coconut flakes, half an apple, cashews, fresh ginger, and water. It was a bit grainy so I added a sprinkle of oats and some more banana (unfrozen) and now it's creamy and tasty!
The trick is not to put in more than you'd eat if it wasn't blended. 👌 🍎🍌🍂🍃 Anyone else lick the lid of their nuribullet and then think 'hmm this has blades maybe I shouldn't do that...' 😂

FALL CHOCOLATE DELIGHTS
Ingredients || 1/2 cup coconut oil melted
1/2 cup of brain octane oil
1/2 cup cacao powder
1/2 cup of cocoa mix
1 teaspoon of vanilla extract
A pinch of sea salt
Sweeten to taste with @omicaorganics butterscotch, vanilla or plain stevia (about 15 drops)
1/4 cup of nut butter of choice
Method || 1. In a food processor, add all the ingredients (except the nut butter) and blend until well-combined.
2. Spoon the mixture into each silicone mold to about 1/3 full.
3. Freeze for about 15 minutes or until the mixture is solid.
4. Add the nut butter to each mold, fill to about 2/3 full.
5. Top with the remaining chocolate mixture.
6. Freeze again for about an 1 hour, to make sure the chocolates & nut butter firm up.
7. Store in the refrigerator for a quick snack!
Et voila. Rice milk with cinnamon, warmed up, then add the oats, raisins, sunflower seeds, flax seeds, grated fresh ginger, 1/2 a grated apple. I also added some silken tofu cos clearly I'm feeling wild today 😂 then topped with banana, peanut butter and cacao nibs.
Not quite enough milk for my tastes, I like it super creamy but I had to save a splash of milk for my cuppa in a bit (I really don't wna leave the house do I? 😂) Easy though and so quick! Definitely worth getting outta bed for 😊 now I'm all warm in my belly n ready to crack on with some work.
Today is one of those days where I just wna be a big duvet burrito and not go outside. It's cold out there and I wna snuggle! Anyone else's office look like this??? At every birthday a plethora of biscuits and sweet things appear (although there is some fruit too!). How do we resist? Run away? Don't look at it? Go and work from home? Or change your mindset so that you actually don't want to eat that stuff. Easier said than done, of course! But we can't avoid sweet things, in daily life. We can stop buying them, but they will always be around! Don't be too hard on yourself if you do eat stuff like this. Just be aware. Maybe try not to do it every day. But because you want to be healthy, not because you'll berate yourself otherwise! This Sugar Smart campaign is not about weight or appearance. Spanish lunch with one of my fave gals! Cous cous with veg, Cauldron Mediterranean sausages, and fishless fingers (all vegan ofc!), and a lovely bottle of wine hehehehehe. Love it when lunch takes 5 hours and is filled with laughter!! The bond a girl can make with another girl is something truly special, and I'm so glad to understand that now! I always had male friends growing up and I still love them to bits, but gals are great and I love my relationships with them too now. Tried out the new vegan menu at @wagamama_uk tonight with the Big Fat Vegan Meal crew!
It was doooope, I highly recommend! I always forget how good the food is there because it's a big chain and I tend to go for the independents. But I had the gyoza and the ramen, and was super full and satisfied!!! There are only 2 vegan desserts and they're both sorbets, so I was happy to forgo pudding 😊 thanks for making the easier to be sugar smart hehe. We did go to ASK afterwards so some other peeps could get chocolate torte though... not so sugar smart 😂
