Super quick dinner when I got home from netball (I roasted the sweet potato this afternoon) of a soft boiled egg with sweet potato and avocado. Cooked the sweet potato in organic ghee with rosemary and turmeric. Simple, but these flavours are 👌 together!
I've had people ask me for some mid-week inspiration. So here's one fail-safe, easy-peasy dish that everyone will want seconds of. 🌴 Sweet potato & Coconut Soup
4 medium sized sweet potato, cut lengthways
2 tablespoons of Virgin Coconut Oil @livethecocolife
Sea Salt (read Catie's recent Insta about supporting Australian-made salt @thestaplestore )
400ml can Coconut Milk @teamgoodness 600ml veg stock @passionfoods
2 stalks of lemongrass, halved & bruised 5cm piece of ginger, skin on & sliced into disks 6 Kaffir Lime Leaves 2garlic cloves
1 medium sized onion, quartered.
1. Place your halved sweet potato in a 180 degree oven . Bake until soft - about 20 mins. Remove from oven & leave to cool.
2. Meanwhile gently cook your onion & garlic in Coconut Oil for 5 mins. Add the lemongrass, kaffir lime & ginger and cook for another 3 mins. Cover with coconut milk & stock and bring to the boil.
3. Turn the heat off and leave to steep for about 20mins.
4. Strain the liquid into a separate pot & add the scooped flesh from the sweet potato. If you're up for it put the onion segments back into the liquid too. Blend it all together with salt and pepper to taste.

Frango à Brás!
Frango do campo desfiado;
Cebola cortada às fatias fininhas;
Zoodles de batata doce polpa laranja;
Numa frigideira grande põe a refogar a cebola e um fio de azeite, depois quando ficar douradinha juntas a batata doce e deixas a cozinhar por 10'. Juntas agora o alho francês e o alho picado e deixas a estufar mais 10' no fim juntas o frango desfiado (sobras de frango do campo assado no forno) e os ovos batidos. Temperas com sal rosa, pimenta e noz moscada!
É uma óptima opção para aproveitar os restos de frango 😉

I was on the run from myself
I thought that everything was wrong with me
I thought that people hated me
I wanted to be someone else

I thought that external pain would reduce the pain I felt in my heart
But it did not
Instead it made me feel even worse
And after a long time I tried something else instead
I started to take care of myself and my body
And that is the best thing I have done, ever
Because it made me happier
And it gave me life again.
But now I am glad that I have been through these things
Even if it is painful
Because it has made me stronger
And I have realised so many things
And one of them is:
"I do not only hurt myself by hating myself, I also hurt people around me."
I promise you, this is 100 % true.
So please, start to take care of yourself instead.
