A coconut and raspberry cake to celebrate a 40th birthday this weekend. Always learning and testing... I've tweaked my meringue recipe which is producing even more smooth meringue kisses. A birthday cake for a very close friend, so close he's considered family. His mum is god mother to both my girls and the three of them call each other god-brother and god-sisters. Claudio has grown up with my girls and it's so lovely to see him growing into a beautiful and kind young man (and a fantastic soccer player... hence the cake ⚽️). Cake details: an 8" tower cake with chocolate cake and raspberry Swiss meringue buttercream.

The buttercream is a raspberry buttercream flavoured with natural raspberry powder, and its delicious! My first attempt at a stop motion piece and the first time using iMovie. So much to learn about making 'mini movies', but it was quite fun. I get asked a lot what's the best way to cut up a cake. This one is a 6" cake. It is a good size cake to cut into wedges, but can also be cut into rectangle portions.
