‘Tis the night before Christmas and dessert is in the house. A selection of little tarts, flavours inspired by some of my favourite chefs and their cookbooks. The chocolate and salted caramel tarts inspired by @darrenpurchese’s recipe in @lamingtonslemontart (I decorated these with salted caramel popcorn, recipe from @thecookandbaker’s cookbook). The other chocolate tarts dusted with cocoa were baked from the recipe in Sweet cookbook by @ottolenghi and @helen_goh_bakes. This one is now a new favourite when I want a chocolate tart! It is seriously yummy! My lemon curd tarts are an old favourite recipe. All baked in my short(bread) pastry! Inside: layers of Thai iced milk tea butter cake filled with condensed milk buttercream.
Lemon cake made with my own candied lemon peel dotted through the cake batter. Layered with vanilla bean Swiss meringue buttercream and my citrus curd swirl. Decorated with fresh flowers, the marigolds grown in my edible flower garden.

A coconut and raspberry cake to celebrate a 40th birthday this weekend. Always learning and testing... I've tweaked my meringue recipe which is producing even more smooth meringue kisses. A birthday cake for a very close friend, so close he's considered family. His mum is god mother to both my girls and the three of them call each other god-brother and god-sisters. Claudio has grown up with my girls and it's so lovely to see him growing into a beautiful and kind young man (and a fantastic soccer player... hence the cake ⚽️).
