This is the citrus cured salmon with lemon curd and lavosh, one of the many dishes we feasted on at lunch yesterday ... Beyond the overly broad rules of thumb of wine and food pairings of whites goes with fish and reds goes with meats, I don’t really understand the complex charts and classifications of food and wine pairings. But that changed yesterday when I attended a lunch event hosted by @brownbrothers with their ambassador, celebrity chef and host of @sbsfood 's Destination Flavour @adamliaw ... Not only were we treated with a delicious lunch at @4fourteen_restaurant , which recently acclaimed one hat from the Good Food Guide but I learnt the theory of how we taste food and what makes food delicious thanks to the talk Adam Liaw gave at during lunch. Firstly, I learnt that taste and flavours are different. Taste comes in five forms that’s sweet, salty, sour, bitterness and umami. ‘Umami’ is a word that’s only recently come into my vocabulary. It’s the indiscernible savouriness that makes a dish so good ... and wine adds to the savouriness of a dish in the same way as sake adds to the savouriness of Japanese cuisine. Awesome lunch event yesterday both the deliciousness of the food and new information I learnt. Thank you for the invitation @sodacommunications
