Hacienda La Claudina, Colombia -honey process*
A full-bodied cup with medium acidity. Notes of nuts and clementine in the taste with a caramelly undertone. The character of the coffee is round and complex.
The Farm is located in Ciudad Bolivar, a traditional, colombian coffee-town, about 100 km southwest of Medellin. Almost 60 plantation workers are in charge of picking the ripened berries from the plants singlehandedly during the crop season. *After coffee is harvested, it undergoes a processing method in which the coffee beans are removed from the raw fruit. There are various techniques of processing coffee; each technique impacts the final flavor of the end product.
Honey Process leaves pulp on the coffee beans which make them sticky, in the same way honey is sticky. The types of honey process are identified by color: white, yellow, golden, red and black. Each color indicates a different level of pulp, called mucilage, left on the coffee bean and drying time. The mucilage left on the bean impacts the flavor and sweetness of the brewed coffee it will produce.

This event was SO fun. We have so many amazing people who give of their time to make Sunday gatherings and other events a possibility. So Sunday afternoon, after the second service, we took a little time to show them our appreciation. "What you do does not define who you are; who you are will determine what you do." Awesome service last Sunday at @focuschurch ! Amazing turnout, more like we would expect on an Easter or Christmas Sunday. Please pray for our team as we navigate how to accommodate our recent growth. It's an amazing problem to have! But we definitely don't want seating issues to become something that deters visitors. I can't believe that just 11 months after starting a second service each week, we're now throwing around the possibility of a third!
