🌮 PESTO & PULLED JACKFRUIT TACOS 📷 by @green_evi 🚨🚨Recipe: For the pulled jackfruit
1 can of jackfruit
1 red onion, chopped
⅓ cup of vegetable broth or water
2 tbsp soy sauce or tamari
2 tbsp maple syrup
2 tbsp tomato paste
1 tbsp Sriracha (or other hot sauce)
1 lime, juice
dash of liquid smoke
1 clove of garlic, minced
1 tsp fresh, grated ginger
½ tsp chili powder
For the pesto
½ cup of toasted pine nuts
1 lemon, juice
½ zucchini, roughly chopped
2-3 cloves of garlic, minced
3 tbsp nutritional yeast
2 tbsp tahini
½ cup of fresh basil
4 cups of spinach, roughly chopped
For the tacos
8 corn tortillas
½ green bell pepper, chopped
1 avocado, thinly sliced
½ cup chopped kale
Drain and rinse jackfruit. Remove its seeds, then using your fingers, a knife or a fork, shred the jackfruit into smaller pieces.
In a large bowl mix together broth, soy sauce, maple syrup, tomato paste, Sriracha, lime juice, liquid smoke, garlic, ginger, chili powder, salt and pepper. Add jackfruit and chopped onion, toss to coat evenly.
Let jackfruit marinade for at least 10 minutes, but the longer the better.
Heat up a large pan over medium high heat. Add jackfruit mixture and all the marinade. Cook for 15-20 minutes or until sauce completely thickens. Stir occasionally.
Place pine nuts, lemon juice, chopped zucchini, garlic, nutritional yeast, tahini, basil and spinach in a food processor and blend until creamy. Adjust consistency with water (or if you prefer with oil), and season with salt and pepper.
Chop kale and bell pepper, slice avocados thinly.
Heat tortillas in a pan over medium heat for 20 seconds on each side. Cover with a damp cloth to keep soft until serving.
Fill each tortilla with 2-3 spoons of pesto and jackfruit, then top with kale, bell pepper and avocado. Serve with leftover pesto and lime wedges on the side. Enjoy! #thevegansclub 🌮

"Veganism is so expensive"
I hear this excuse all the time, and I laugh because I've saved SO much going vegan. It's all about making smart decisions on what exactly you buy. Obviously, buying all those superfoods and all those mock meats will cost you a lot. It's the same thing as how certain animal products, like steak or lobster is also a luxury. But somehow, no one seems to be making a big deal out of that?
Fresh vegetables, fruits, potatoes, beans, rice. These are all nutrient dense food some of the oldest civilizations thrived on 🍠🍚🥔🌿
It's also all about choosing where you shop that will make a big difference. Whole Foods can be pretty expensive at times and so I always make sure to stop by the farmers market not only to support the local community, but because it's so cheap! I got all of this produce for $25!
Besides, I'd rather invest in my health now then pay more for it later on through pills and hospital bills 🤓👌🏼
Buckwheat cashew cheese pizza with a pesto drizzle by @bjonr 💚
1 C raw cashews (soaked and rinsed)
1 tsp tapioca flour
1 tsp nutritional yeast
1 tsp sea salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp pepper
1 C unsweetened plant milk
half a squeezed lemon
3/4 C walnuts
1/2 C spinach leaves
1/2 C basil leaves
juice from 1 lemon
1 tbsp nutritional yeast
1 tbsp garlic
1 tbsp unrefined melted coconut oil
1/2 tbsp coconut sugar
pinch salt & pepper
add water to thin out consistency (or use less if you want thicker pesto)
1. add cashew cheese ingredients to blender and mix
2. heat cheese mixture on low for 8-10 minutes until thick, and youre done!
3. add pesto ingredients to a blender and mix
4. add water to get the correct consistency of your choice and you're done!

HOW TO MAKE👇🏻
1 cup @bobsredmill garbanzo bean flour
1 cup filtered water
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp maple syrup
1/2 tsp sea salt
1/4 tsp oregano
Fresh chopped basil
Mix the flour and water together thoroughly until it is smooth, add the spices. Heat your @lodgecastiron skillet, on your stove on high, with a little olive oil in it, once the pan is hot, pour your batter into the pan, add the cheese, (I just chopped up 1 slice of the "Gouda", )then add tomatoes, remove from heat and place under your broiler until it gets slightly brown! It's delicious and easy! Happy brunching!
nothing says fall like pumpkins, and these 🎃 VEGAN PUMPKIN SCONES 🎃 dipped in maple 🍁 glaze and topped with chopped pecans are the perfect snack or dessert when the weather has me thinking about crisp leaves 🍂, cozy fires 🔥, and sweater weather ❄️ of course// pumpkin and pecan anything floats my boat ✌🏻 i kind of love how simple these are plus how they’re doused in glaze, like wow 😱 so worth the time and effort it took to bake from scratch 😉// and honestly even tho i dont think halloween is only meant for kids, i would rather spend my time catching up on netflix and baking/cooking up something delicious 👅
These veggie skewers were inspired by one of my favorite Greek dishes--Souvlaki. These are eggplants, cherry tomatoes, portobello mushrooms, bell peppers, and red onions. I seasoned them with olive oil, paprika, salt, and homemade pesto before grilling them. Had them with both basmati rice and on ezekiel tortilla wraps (because you can have both, right?). Garlic and herb twists ❤😁 I'm actually so stoked about homemade vegan puff pastry. Spending time on something and then watching it puff up with the magic of science is just fab. I used most of my current batch of pastry experimenting with a vegan vanilla slice that I'm not 100% happy with yet, but with the rest of it I made these delicious af pastry twists that store for ages and are awesome for parties or just to absentmindedly snack on 😍 they're also so easy I haven't even included ingredient ratios because you can just put whatever you want in as thickly as you like and make as much as you like. ----------------------------------------------------------------------------------------- Ingredients
Puff pastry sheets, sliced into long, 10cm-wide strips
Chopped fresh herbs - rosemary, parsley etc
Salt and cracked black pepper
A little plant-based milk (almond, soy) to glaze
Preheat oven to 200*C. Line some oven trays with baking paper.
Spread whatever you want on your pastry - minced garlic, a smudge of pesto, some herbs - then roll each strip up lengthways. Once rolled, twist it into a rope shape and place on the baking tray, glaze briefly with plant milk and sprinkle with poppy/sesame seeds. Repeat with the rest of your pastry sheets until you have as many as you like.

I had this lovely #glutenfree chickpea pancake with a cornucopia of salads 🥗 including this red coleslaw, black rice with beet salad --(sooo good!)Thursday and had been meaning to post. 👌🏼Spence's falafel plate today though was absolutely 🤤🤤🤤🤤drool worthy. Oh my days. 😋Anyways if you haven't been to BC you're so missing out. Chilled out atmosphere, lovely staff, amazing soundtrack --we heard the Hollies, Easybeats, Who, Kinks and some more groovy tubes...AND such yummy food! Plus you gotta love a workers coop! 🙌🏼💕
Anyways we ended up at Broadway Market after, had some tea and now headed home. What a lovely afternoon exploring our borough 😍🚶🏻🚶🏻♀️♥️ There's so much to do and see, I doubt I'd ever get bored of London 🇬🇧....What is your favourite place to go in your neighborhood/town? 😄

"Maharagwe Ya Nazi" from The Palace International. The kidney beans are cooked in coconut milk and seasoned with cayenne pepper and ginger. The greens are bomb and the rice is a winner too 👌🏾
