I remember visiting @lotusvegetarian for buffet in the span of three consecutive weekends because of the quality and array of vegan/vegetarian food just last year. Now, @lotusvegetarian have opened a new restaurant at Chinatown Point- Lotus Kitchen, which sells DIMSUM and signature dishes from the buffet of which some have been veganised too such as the laksa 🍜SAY WHUTTTT 😍😍
Fun fact for you: Before going vegan, dimsum, laksa, fish and yam paste were literally my favourite food EVER. Seriously. I could live on them all week without getting sick of them. So my tastebuds were absolutely satisfied as I bit into these dishes and GOSH, the yam paste definitely hit the sweet spot 🤤 The only disappointing part is that the menu do not indicate which items are vegan but thankfully the staff were very accommodating towards our diet and patiently pointed out which were the vegan items upon asking. Oh another downside towards the food was that I devoured them all too soon 😂 Nonetheless, the service, atmosphere and food was good ✨ .

This is my therapeutic "me" time. There's a plethora of hobbies one can have to relax. This is mine. From getting that first inspiration to the planning, shopping, cooking, creating, & photographing- I love every part of this. I love seeing what I had in my mind come together.
So, I love a good mono-colored bowl! There's a ton of health benefits that are attributed to foods in the yellow-orange family. I'll spare you all the scientific phytonutrient/vitamin/ antioxidant speech. But I will say this: incorporate at least 1 yellow-orange food a day to maximize the nutrition in your diet! I hope this bowl can give you some options!

250gr spaghetti pasta
for the balls:
1 can black beans, drained
50gr pine nuts or sunflower seeds
1 flaxseed egg (1 tbsp ground flaxseeds + 3 tbsp water)
4-5 tbsp bread crumbs (or fine oats)
1 tbsp tomato paste
1 tsp basil
1 tsp oregano
1 tsp soy sauce
oil for frying
for the sauce:
1 garlic glove
1 tbsp oil
1 can tomatoes
1-2 tbsp tomato paste
a bit sugar
for the balls, combine ground flaxseeds with water and soak for about 10-15 minutes.
meanwhile, cut onion and chop garlic and roast in a pan with a bit oil until glassy.
roast pine nuts in another pan as option and puree in a blender afterwards.

then combine mashed beans with the flaxseed-egg, pine nuts puree, onion, garlic, bread crumbs or oats and seasonings to taste.
knead everything to a dough and form about 12 balls.
Cook pasta according to directions stated on the package.
meanwhile cut onion, chop garlic and roast for about 2-3 minutes in a pan with oil.
add tomatoes, tomato paste, Italian herbs, salt, pepper and sugar to desired taste and let it cook for about 6-8 minutes.
meanwhile, fry the balls in a pan with oil until golden brown and add to the sauce finally.
serve spaghetti to the sauce with the balls and top with tomato flakes, nutritional yeast and basil. Enjoy! #thevegansclub 🍑
✧ ᎷOCHA ᏟOCONUT ᎤATMEAL ✧
After an early morning workout that had me sweating like crazy and a following much needed shower, this chocolate, coffee and coconut infused oatmeal w/ creamy coffee swirl coconut yoghurt was pure bliss ☕️🍌✨ It's been a long time since I've travelled to a place far away from Denmark, but tomorrow morning we're heading to the airport and will spend the next week on the Greek island Zakynthos!
Hopefully we'll get to see some sea turtles and I really look forward to explore the local area, the many tavernas and the breathtaking landscape! 𓆉 Have you ever been to Zakynthos? And do you have any favorite places to eat? I'd love some suggestions!
Anyways, back to this jar of deliciousness. Silently thanked myself for fueling up on oats as I came to think of I have to go a week without them! Here's the recipe 😆
> 60 g rolled oats
> 1 cup coconut milk
> 2 pitted and mashed dates
> 2 tbsp coconut shreds
> 1 heaping tbsp cocoa powder
> 1 tbsp stevia or syrup of choice
> 1 tsp instant coffee granules
> pinch of cinnamon
> tiny pinch of salt
Add the ingredients to a small pot and cook over low to medium heat until the pudding has thickened up (about 5-10 minutes). If using stevia, add this to your oatmeal in the end as it'll lose its effect if it gets too hot. Pour 1/3 of the oatmeal into a jar, add a few slices of banana and add some coconut yogurt mixed with coffee sauce (1/2 tsp coffee granules dissolved in 1/2 tsp water). Add in the rest of the oatmeal and sprinkle with more coconut and add more banana if desired. Spoon into your jar and enjoy!

Saturday morning bliss 🍓✨💕
@kinglandau sent me some of their delicious soy yogurts to try out so I created some pancakes using the berry flavour 🍓
Here is the recipe if you would like to try it yourself 👅
1 cup self raising flour
1/2 cup vegan yogurt
1/2 cup + a little more of milk
1 tablespoon sugar
1 baking powder
Whisk all ingredients together until well combined. You want the mixture to be thick but still slightly pourable, you may need to add more or less milk to achieve this. Spread 1/4 cupfuls of mixture into a pan on medium heat and cook until golden on each side. Keep in mind they are a little bit more moist than usual pancakes, but still equally (if not more) delicious, thanks to this yummy, creamy yogurt 😍👅
