My husband started the breakfast this morning before I got out of bed. He comes to the room and asks if those sausages on the counter were for breakfast. I said yes and he asks if he should make all of them as if that's so many. I said yes, there's about 2 for each person. When u get to the table I'm thinking wow, these are pretty big sausages. I didn't think they tasted that great and I'm thinking Costco changed their recipe or something. After breakfast I'm cleaning up and I come across the container of breakfast sausages I had taken out the night before...um, why didn't you use these ones?... and then i remembered I had taken out 4 packs of Italian sausages to make a big pan of soup with. 😂. Tonight we had the fat-burning chicken noodle soup and it was delicious! I made brown rice for the kids to eat on the side with some liquid aminos. Everyone really liked it! I honestly love thm. First time making Pearls Chili from the first cookbook. Everyone liked it! I cut back on the amount of chili powder because my step-daughter hates anything spicy. I added extra to mine though. #trimhealthymama#thm#thms
Chia-Seed Chocolate Pudding *2 servings*
2 cups unsweetened almond milk
3 TBSP peanut powder
2 TBSP cocoa powder (this makes it very dark! Use less if you don't want dark chocolate!!)
4 packets of stevia
2 scoops of collagen powder
1/2 cup chia seeds
Put everything besides the collagen powder into a saucepan, heat until chia seeds make it thick.
Add collagen powder.
Serve hot or chilled.
I ate half hot and saved half for breakfast tomorrow!
This is so very yummy! Because the sauce stays very thick, the lasagna stays set vs. every other non noodle one I have tried.
My Adaption of THM Lazy Lasagna
1 pound ground sausage (I prefer hot!)
1 pound ground beef
1 package 1/3 less fat cream cheese.
1 cup low fat cottage cheese.
1 16oz bag frozen spinach
2 cups mozzarella cheese. Grated.
1 jar of your favorite pasta sauce (depending on what type you get, you may want to add spices to it.) Place spinach in paper towel lined colander. Pour a bit of hot water over it and wring out water. Let drain.
Dice onion, cook with meat in large pan. Add Garlic and salt.
Drain in paper towels on plate.
Put meat/onion mix back into pan, mix in sauce. Let simmer.
Whip together eggs, cream cheese, and cottage cheese.
I used my cast iron pan, but any casserole dish, etc would work.
Layer half meat/sauce, half cottage cheese mix, half spinach, and cheese... Repeat.
Bake at 350 for 40 minutes or until bubbly hot.
THM's - this is an S. I served it with green salad. Husband said he didn't even miss the noodles!
Back on plan after a mostly off plan weekend. I finished off my almond crusted cheesecake for breakfast and plan on altering a pumpkin swirl cheesecake recipe to be THM compliant later tonight.
