Usually fall/winter is the hardest time for me to stay on track with healthy eating. Setting aside a day to see what other healthy souls are eating and being vulnerable about what I'm eating has definitely helped more than I imagined! Salmon patties are one of my favorite foods right now. These are free of grain or carb binder using only 1 can of salmon (skin and bones in all because it is soooo good for you) 2 whole eggs, 1/2 cup thawed and squeezed frozen chopped spinach, and 2 chopped medium pickled jalapeños (mine are home canned) for some character. Stir well with a fork and press into about 8 patties. Pan fry in coconut oil and enjoy!!
