Yuuum!!! Repost from @vegan_healthspiration -  Scrumptious #RAW energy bites (nut/dairy/gluten free) --> soak 1c pitted dates overnight then blend (using @vitamix low speed) with: -1/3c hempseeds
-1 spoonful of coconut oil
-1/3c chia seeds
-2 spoonfuls of maca
-1 scoop of chocolate protein powder
-1/4c cacao powder
-1/3c ground flaxseed - 2 vanilla beans (or 2 tsp)

Place mixture in freezer until firm, then roll into small balls with your favorite superfoods! I used @foodsalive goji berries, unsweetened shredded coconut, @manitobaharvest hempseeds, cacao nibs and @matchaful matcha powder 😋Store in the freezer for a quick sweet treat packed with protein, superfoods and raw deliciousness

Mousse de Choclate de 3 ingredientes, deliciosísima!!! 🔝🔝🔝 Cómo la preparás?
Batí 👉🏼1 parte de aquafaba (líquido de cocción de garbanzos de temperatura ambiente a frío) hasta que esté a punto nieve -ó lo mejor a lo que llegues con batidora-, 👉🏼endulzalo con tu endulzante natural favorito (ej. maple syrup *) y batí un poco más para integrar. Agregale 👉🏼1 parte de chocolate amargo 🍫templado (derretido). Incorporá el chocolate con una espátula -con movimientos envolventes- hasta que esté completamente integrado. 
Volcá la preparación en el recipiente donde vayas a servirla y llevala a la heladera hasta que esté completamente fría!
Voy a probar otras variantes, como alternar de forma diferente los ingredientes, agregarle algunos otros, etc., y te cuento! 🤗

A la hora de servirla, yo la acompañé con una salsa de chocolate, crunchis de banana de @crudencioveg, nueces y frutillas frescas. 🖤

Wartet nicht bis ihr euch "bereit" fühlt, denn man fühlt sich niemals 100% bereit. Wartet nicht, bis sich alles um euch herum perfekt einfügt, denn das wird nicht passieren. Fangt an mit dem was ihr habt👉🏼solange man dran bleibt, mit allen Höhen und Tiefen, wird man es schaffen, ganz egal welches Ziel man verfolgt. Man muss "einfach" anfangen. Von jetzt auf gleich. Und der Rest fügt sich. So und ohne Magie, besonderer Begabung o.ä. habe ich vor 2 Jahren angefangen und so habe ich es heute aus meiner Essstörung geschafft👉🏼Ich habe aufgehört auf meine Ausreden zu hören und angefangen🌟

I love smoothie bowls for their health benefits as I am putting all the micronutrients and all the antioxidants in mine 🍓🍌🍋🥕 This was made with frozen bananas, frozen raspberries, some spinach and spirulina powder. Normally I also add flaxseeds, barley grass juice powder and sometimes even more but this time I was busy and wanted something quick and easy 🤗 what is your favorite flavor in a smoothie bowl? Ezen a csodás napsütéses őszi napon ünneplem a 23. születésnapomat😱😊🎉
Ez a mai szülinapi tortám magamtól magamnak+a családnak😄
Az egész egy kis improvizáció eredménye, annyit tudtam, hogy valami vegán kókuszos tortát szeretnék készíteni, aztán ahogy sült az alap, az egész lakásban kókusz illat terjengett, majd a krém készítésekor megcsapott az az igazi Raffaello illat😱😍😍És így el is készült a Raffaello torta😊
Hozzávalók a piskótához:
2 csésze (250 ml-es) kókuszliszt
1 csésze barna köles liszt
2 tk sütőpor
Csipet só
3/4-1 csésze kókuszvirág cukor
4 dl konzerves kókusztej
2 tk kikapart vaníliarúd belseje/aroma
3 ek kókuszolaj
Elkészítés:
A liszteket, sót, sütőport jól elkeverjük, majd jöhet bele a többi hozzávaló és simára keverjük.
Egy kisebb méretű tortaformát alul kibélelünk sütőpapírral és az oldalát kikenjük kókuszzsírral.
Beleöntjük a tésztát és 190C-on 30-35 percig sütjük.
Hozzávalók a krémhez:
1 marék kesudió
1,5 dl konzerves kókusztej
1 tk vaníliarúd kikapart belseje/aroma
8 ek kókuszreszelék
1 ek kókuszvirág cukor
Elkészítés:
Simára turmixoljuk.
A torta összeállítása:
A félbevágott piskóta közé kenünk a krémből és durvára aprított mandulát szórunk rá. Mehet rá a piskóta és lekenjük a maradék krémmel.
A díszítésnél mindenki kreatívkodhat😊🤗✨

I created this recipe while making the base, my house filled with gorgeous coconut smell and when I made the frosting/cream it smelled like real Raffaello😱😍😍
Ingredients for the cake:
2 cup coconut flour
1 cup brown millet flour
2 tsp baking powder
Pinch of salt
3/4-1 cup coconut flower sugar
4 dl coconut cream
2 tsp vanilla
3 tbsp coconut oil
Directions:
Mix flours, salt, baking powder.
Mix the remaining ingredients into the mixture.
Pour your batter into a greased small cake pan.
Bake for 30-35 mins on 190C
Ingredients for the frosting:
Handful cashews
1,5 dl coconut cream
1 tsp vanilla
8 tbsp shredded coconut
1 tbsp coconut sugar
Blend until smooth.
Sprinkle chopped almonds between the layers.

It was national pasta day yesterday, I suppose it was a day to celebrate one of our favourite foods, but let's be honest it can be pasta day every day. I found these rainbow beauties at my local shop and they are made with brown rice and corn flour if I remember well, no eggs and gluten-free. I'll be using them in an upcoming 'rainbow' recipe. I'm so happy when I can take time and make some good treats over the weekend & not to take anything at work just because I'm hungry (not always my lunchbox is ready to go with me 🙄). Today after very extensive yoga classes came back super hungry! Quickly blended green smoothie for the first course 😆 & these sandwiches for the second! This is my fav millet roll with chia, sesame & flax seeds. Put inside green peas paste (1/2 of green peas can, handful of roasted pistachios, 4-5 spoons olive oil, 2 tsp tahini, garlic clove, handful of kale, 1/2 lemon squeezed juice, bit of salt & pepper), smoked tofu, kale leaves, zucchini & sweet potato baked fries with herbs. I love this time of year, the wind is howling outside, there's a threat of rain (ok so that's every season in Ireland) and all I want to eat is comfort food (ok so I don't need a seasonal change excuse either 🤔). This is one of the first recipes I posted to my blog just over two years ago. It follows the traditional bolognese recipe I learned during a culinary trip to Italy nearly ten years ago, as part of the @slow_food_italia movement, except for one major thing: #nomeat #noeggs #nomilk The béchamel is creamy and full of that nutmeg flavour, the meat has been replaced by lentils & the pasta is home made. Ive used @violife cheeses inside & on top with added nooch. This is truly one of my favourite dishes EVER!! I must work on some new shots and styling but for now, you can get this recipe on my blog.

Green & gold Buddha bowl 🌿✨
Today's bowl was so delicious & comforting! I finished it with a syrupy balsamic reduction drizzle. 👌🏼 Easy recipe for the turmeric roasted cauliflower below!
🌱 arugula, baked sweet potato fries, peas, garlic pearl couscous, an avocado rose with sesame seeds & turmeric roasted cauliflower
💛 turmeric roasted cauliflower:
• 1 head of cauliflower, cut into florets
• 3 tbsp olive oil
• 1 tsp turmeric
• 1 tsp cumin
•  1/2 tsp garlic powder
• sea salt & pepper to taste
- Preheat oven to 400 F.
- Line baking sheet with parchment paper.
- In a large bowl, mix olive oil, garlic and spices.
- Add the cauliflower and mix well to coat the florets.
- Spread the cauliflower on your baking sheet.
- Bake for approximately 40 minutes, turning over halfway through baking time.

Made orange strawberry popsicles. Easy recipe and only 4 ingredients 👌🏻

👩🏻‍🍳 Recipe (4 popsicles) 
1 cup freshly squeezed orange juice 
1/2 cup strawberry 
3 tbsp fresh lemon juice 
2 tbsp maple syrup. 
Add the strawberries, lemon juice, and maple syrup into a high-speed blender and blend on high until smooth. First, pour the orange juice evenly into each popsicle mold (about 3/4 full). Then, using a spoon, add the strawberry mixture into each mold. Place into the freezer and freezer for at least 1 hours before inserting the popsicle sticks into each mold to help them stay straight. Freeze for at least 12 hours. To serve, take  popsicle out, run hot water over the molds briefly and they should be easy to pull out. Enjoy. .

Mexican style spicy chick pea and pineapple salad 🍍
Salad:
Roasted pumpkin, potato, carrot and sweet potato on a bed of baby spinach with tomato and avocado. Dress with a balsamic vinegar and place chickpeas on top. 
Marinated chickpeas and pineapple:
Drain and rinse one tin of unsalted, organic chickpeas.
Add in two cloves of chopped garlic, one whole chopped chilli, onion powder, paprika, salt and pepper. Add in pineapple (as much as you like, I love lots!) and olive oil, let it marinate for 2+ hours (this step isn’t necessary but it’s a lot tastier if you do

That's the phrase that I have set up on my lock screen for over a month now, so that each time when I use my phone, I'll think about it and set all my excuses aside and start planning for the things I want to achieve.

For the scenario that was given of me not having any greens, which resulted me to not feel great, it's because there was a presence of excuse, me being lazy, and when there are excuses, I failed to plan to get my groceries which caused me to set myself up for facing the negative side effects mentally & physically.
So the take home message today is if you want to succeed in anything, have a plan, stick to it and do what's needed to help you get closer to it each day💛

Recipe (for a 22cm round tart pan).
Base: 125g whole grain spelt flour. 50g oat flakes. 50g millet flakes. 80g grounded almonds. 1 pinc of salt. 100g coconut oil, melted. 75g almond butter, unsweetened. 30g erythrit. 2-3 tbsp almond drink, if needed.
Streusel: 20g coconut oil. 1 tbsp Erythrit  50g whole grain spelt flour. 20g millet flakes.
Additional: 2 tbsp peanut butter, crunchy & unsweetened. 2 big apples.

If you love peanut butter, get yourself some at the link in our bio and make these stat! The perfect combo of chocolate biscuits with vanilla filling and a nice thick slab of smooth @byronbaypeanutbutter 👌 
Filling:
180g soaked cashews
1/4 cup lemon juice
1/3 cup coconut oil
1 can coconut milk - using only the cream from top of the can
1 tsp vanilla
4 tbsp @byronbaypeanutbutter
Biscuits:
1 cup macadamias
50g coconut sugar
1 tsp cinnamon
1 tbsp cocoa powder
1 organic free range egg white or chia/flax egg for vegan
Blend all filling ingredients excluding peanut butter in a processor until smooth and creamy. Pour into a lined square tin, size will depend on how thick you want the filling to be. Place in freezer for 1 hour.
Place all biscuit ingredients excluding egg white in a processor and blend until fine. Place in a bowl and combine with egg white. Spoon individual scoops onto a lined baking tray approx 1 tbsp and flatten into roughly a 5cm circle. Bake for 12 mins 170c. Cut through filling with a 5cm circle cutter, construct your ice cream sandwich adding a thick layer of peanut butter in between and enjoy!

Another Buddha bowl with love ❤️ roasted cauliflower and baked sweet potatoes. I’ve been making pots of slow cooked meals in the beginning of the week to save time and prevent overeating. In the middle it’s rice slow cooked with sweet potatoes and dried shitakii mushrooms🍄 I love spices, so there’s turmeric, coriander, ginger, garlic, cumin, thyme, and rosemary. They are great anti inflammatories and awesome digestion aids. For the raw veggies, I added @michellesrawfoodz Japanese joy dressing. It’s vegan and gluten free. Healthy and yummy!!! My second fav is the Greek dressing. Cookies N’ Cream ‘Cheesecakes’ 😋 who wants one? Recipe as follows, which I’ll also upload to my website (link in bio) 😊
Base:
1 cup almond meal
6 medjool dates
2 tablespoons peanut butter
1 tablespoon maple syrup 
1 teaspoon water
3 original oreos 
Filling:
1 cup of cashews (soaked for 4+ hours, then drained and rinsed)
1/2 cup of soy milk
1/4 cup of maple syrup
1 tablespoon of lemon juice
1 tablespoon of melted coconut oil
1/2 teaspoon of vanilla bean paste
Method:
1. Combine the base ingredients (excluding Oreos) in a high-speed blender.
2. Add the Oreos and pulse until mixed through, then press into the bases of a silicone cupcake mould. Roll any remaining mixture into bliss balls and place in the fridge until the cakes are ready to serve.
3. Combine filling ingredients in a high-speed blender until smooth and creamy. 
4. Fill the moulds, then place in the freezer for 6+ hours or overnight.
5. Remove from the freezer and allow to thaw for about 15 minutes.
6. Top with the bliss balls and enjoy!

New week, New challenges, New opportunities! ➡➡ I'm going to share some #meatlessmonday thoughts which might make people angry. But the excuse "I can't go vegan because I love meat&dairy too much" isn't a good enough excuse according to me. I understand that not everyone can and will go vegan, but that doesn't mean you can't minimize your intake of animal products. Luckily I've never liked red meat however when i was treatment for my eating disorder suring 2010-2012 i was forced to all types of meat. However after that i went back to not eating red meat.
➡Just 2 years ago I ate 1,5kg chicken, c.a 500g egg whites & more whole eggs, c.a 6kg quark, 500g cottage cheese A WEEK. And on top of that there was protein powder almost daily, fish, chocolate, protein bars etc first off my protein intake was crazy high and second "damn I ate alot of animal products".
➡ I didn't go vegan because I didn't like the taste of meat or dairy and not because I think a vegan diet is the healthiest but because once I was aware I couldn't contribute to the meat and dairy industry with a good conscious. ➡just because someone is vegan doesn't mean they don't like the taste of meat and dairy... but their ethical values are so much bigger than just taste and what they think tastes good, but about what is ok or not. It's not hard to cut down and find alternatives you just need to be willing to make a change and realise saving a life is so much more important than whether meat tastes good or not.

Happy hump day everyone! Spicy chocolate cinnamon buckwheat with kiwi and coconut cream on this grey and rainy morning. I saw the buckwheat the recipe on @thefeedfeed.chocolate yesterday and I just had to give it a try. It was super tasty too🙌🏻And silver linings and all that, although it’s tipping it down outside I’ve been meaning to experiment more with dark photography (of a sort!) and I got to wear my new raincoat on my cycle to work. Can you tell I’m a glass half full type of gal! Which one are you?
