Sharing this simple lunch that totally hit the spot over the weekend. The idea of a salad right now sounds so unappealing with our freezing temperatures. My body is craving more grounding, warmer foods. Mixed up the best of both worlds so I could get some extra greens in this weekend by sautéing some spicy mustard greens from my @falllinefarms order in @primalkitchenfoods avocado oil to soften them up and make them more appealing and easier to digest this time of year. Added @wildearth_fermentation lemon beet kraut, persimmon, @bilinskisausage wild mushroom chicken sausage, pumpkin seeds and @deliciouslyella cashew pesto on top and lunch was served. Happy Wednesday friends. 😘

My Monday motivation goes to my sweet ballerina. 💕 She does her own thing and keeps on going. She feels all the feels and lives for the moment. She is curious and a risk taker. She is the only one to ask for a green ribbon and goes with the flow when they don’t have that colour... Yellow suits her better anyway. A little ray of light. She greets others with a smile or a wave or a happy crinkled nose that leaves everyone feeling a little lighter. ☀️
I unplugged most of yesterday + soaked up the weekend vibes. 🙌🏼 Despite spending most of my time with the girls there’s something different about the weekend. Especially when it’s just us girls. I’m more relaxed (sometimes not) and it helps that we can actually leave the house & neighbourhood. In some ways I feel more intentional with my time (someways not) I spent all of yesterday afternoon cleaning and rearranging the girls’ rooms, when I probaaaably should have been doing a dozen other things. Yet it felt productive (also, clearly nesting has already hit!) Anyone else do that when something needs to get done? 🙈 It helps me feel more ‘aligned.’ ✨ Now I’m ready to rock a new week and keep up my #tiuholidayhustle ! I can’t believe Christmas is one week away!!! #naptimehustle I’m comin for ya 😉💪🏼 For now, sliding at the park! ❄️

I’m trying to reduce animal proteins but unfortunately I really don’t fancy the chickpeas or beans texture ... any ideias on what can replace them as a vegetal protein for a daily bases (can’t eat tofu everyday) or ways to disguise the texture ... I’ve tried bean meatballs and admit I loved them!

Day 14&15/31: I decided to take a break yesterday just because it was so gloomy and I had zero motivation. Yes, I'm regretting it today. I did yesterdays arm and abs routine mixed with (most of) todays workout. I was a sweaty mess from yesterdays workout and my arms were so sore I lost the motivation to do the video from today. So in total I did yesterdays daily moves, Katrinas quick arm routine, and 4/6 of todays daily moves/ about 5 minutes of todays video. I'm bummed I didn't finish it but I need to listen to my body when it says to stop. Hopefully my 30 minute walk will make up for it! Happy #motivationmonday !!! Lord knows I need it 😂💪🏻🎄

Be a student of food and nutrition. There is SO much information out there. Some of what we think we know about food is outdated. Some of what we think we know about food isn't good for us personally.
I follow a variety of different people and pages, nutritionists, and trainers. I soak up all the different things I learn and then test them for myself to see what works best for me.
Where do you get your information about health and nutrition?
This is me and my little at a week from her 5 month mark. (Taken last week). I don’t know what my weight is right now and I honestly can’t dwell on a number to define how I feel about my body. I have worked so hard to get to where I am. It took me YEARS to get pregnant and a whole 10 months to produce this beautiful angel of mine. There is no way I can look at my body and see flaw in such a miracle. Sure, my body will never be the same again. But neither will I. I’m a mom and a damn proud one at that. I have flaws and that’s okay. They do not define me and I won’t let them. I am so thankful that I can wear my 18 pound miracle on my morning/midday/evening walks. Every single effort I make is being seen by a little girl that will one day view herself the way that I view myself and her. I can’t look for the bad when it would break my heart to see her do the same. So I choose to find the beauty in my body and myself. I am strong. I am capable. It’s almost hereeee! 🎄❤️ Normally I’m not a huge Christmas person, but this year I’m excited as I am busy. 2 more night shifts, then travelling home for a quick spell Wed-Sat, then working (👎) through the actual holidays, then witnessing 2 of my faves declare their love on NYE! But despite the crazy schedule, this will be the FIRST YEAR EVER that Dan and I are actually gonna be in the same city for Christmas and New Years, so it really all worked out in the end. 💕 I probably won’t be posting much over the next couple weeks, but I may occasionally pop up in my stories. Dinner dates and cookie baking calls for getting my greens in nice and early! Add a handful of spinach or kale to your favorite smoothie for a boost of vitamin C, vitamin A, vitamin K, and fiber.
Thank goodness for meal prep Sundays! Ⓜ️1 for today was a meal-prepped breakfast burrito. Because of my crazy work travel schedule and being on-call through Christmas, I made a big batch of 20 breakfast burritos with egg whites, low-carb/high protein wheat wraps, 🍅, spinach, ground turkey, jalapeños, onions, 🧀, and hot sauce. I cooked it all, mix it together, let it cool down to room temp, then put together the burritos and wrap it up with aluminum foil then into the freezer they go 🙌. This is easily my go-to cold-weather breakfast. Prepping freezer friendly foods means I won't have to worry about anything going bad in my fridge or wasting food if I'm called out to an emergency response for work. Back to chasing dreams and pushing strollers - and I couldn't be happier about it!! I thrive off having something to train for - do you too? And boy am I excited about the next few months of races. I'll be going for a solo half marathon PR in Feb and a super hilly stroller half in April. I tried to find a stretch of road in my neighborhood to replicate the stroller course (which had about 75 ft of elevation gain per mile for the first 6 miles and then the last half is all downhill) and didn't even come close! 🙈🙈 But I got in some killer hill repeats and my quads were burning so all was not lost! 8:32 pace for six miles with tons of hill repeats - that's how us mom's slay a Monday. 🙌🏼🙌🏼

This is my new “Uncle” Bergen. My pawrents rescued him in San Diego and decided to bring him back to MN for my grandparents. I’m sad I can’t keep him but I still get to play with him for another 2 weeks. He’s a #minigoldendoodle too but he’s white with blue eyes.. but, maybe he’ll change cuz he’s still a baby. I was hoping to wake up a little earlier than the kiddos today but, I didn’t lol. Monday’s are rough and I think even the kids were feeling it.
But I managed to get in a combo of TIU 5 daily Moves and LG’s Legs + Glutes after my little lady went off to school.
My 18 month old however, wanted to workout this morning too and mommas, you know how that goes 😑. I’m hoping to get another tiny workout in before I have to work the part time job tonight 😩
