😋💚Crispy Almond Kale💚😋
When I’m wondering what to do for a green (but not green-tasting) side, my go-to is this crispy kale! It’s crunchy, savory, and packed with nutrition—a perfect superfood side, without the bitter-green taste. 👌🏼 And when you didn’t think it could get much better...it takes less than 10 minutes to prep! Say whaaa? 😲 Tim and I eat this as a side, snack, or topping for soups, like tomato or butternut squash soup!
Total time: less than 10 minutes
4-5 kale leaves (or 3 large handfuls of bagged kale)
1/2 T coconut oil (or olive, avocado oil)
1 good handful sliced almonds
Himalayan pink salt, to taste
Rinse kale, dry well, and tear leaves into smaller pieces.
Put coconut oil and almonds into a skillet on medium heat and sauté until almonds are just starting to brown.
Then add dry kale and salt.
Stir kale and almonds on med-high heat for 3-4 minutes.
Turn off the skillet and let sit until the kale is crispy and the almonds are browned (about 2 minutes).
Each stove and skillet is different, so cooking times will vary.
Eat as a snack, side, or soup topping!!
