paleo waffles topped with collagen-crusted strawberries and lightly sprinkled with date sugar & hemp hearts, it's a combo that (clearly) belongs in bon appetit magazine. i kid, i kid 🙆🏻 super simple to make using @bobsredmill paleo waffle mix and adding 1 tsp maca to the batter for a little extra boost 🙌🏼 to make the collagen strawberries, add 1 tsp coconut oil to a small pan, 1 tsp collagen, a pinch of cinnamon and a handful of organic strawberries—stir until a slight crust forms on the strawberries. then plate and sprinkle your creation with a little date sugar for extra sweetness and skip the maple syrup this time! although date sugar is still a sweetener, its a much better option than regular sugar, which is highly processed and virtually devoid of any vitamins and minerals. at least date sugar contains fiber, minerals and antioxidants, just like whole dates! happy wednesday! #bobsredmill#ad

I made these cookies for a friend back in Dallas who can’t have gluten… because everyone should be able to enjoy homemade chocolate chip cookies! My go-to flour for gf baking has always been @bobsredmill Gluten Free Baking Flour (which you can substitute it in a 1-to-1 ratio for regular flour without having to worry about adding xanthan gum). So this is my usual chocolate chip cookie recipe just with the gf flour, and they are still delicious! Gluten Free Chocolate Chip Cookies
1 cup @bobsredmill Gluten Free Baking Flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chocolate chips
1/2 cup unrefined sugar
3 tbsp milk of choice
2 tbsp oil
1/4 tsp pure vanilla extract
Preheat oven to 325 F. Stir together first five ingredients in a bowl. Add remaining ingredients. Stir to form a dough – it will be dry at first, so keep stirring to get a cookie-dough texture. Scoop into balls with a cookie scoop, then roll each ball in your hands after scooping, because it will be crumbly so you want to press it together firmly with your hands. Place balls on a greased baking tray. Bake on the oven center rack 11 minutes. They will look undercooked when you take them out of the oven. Let cool on the tray 15 minutes, during which time they will magically firm up.
Caramel Heavenlies is their name. A little dorky sounding, but really, the name is so fitting.
Whole graham crackers and marshmallows make up the base, with a cinnamon-loaded caramel spooned over it. After a sprinkling of almonds and coconut, it’s baked until golden. The result is both crispy-crunchy and ooey-gooey in texture, with flavors that play so very well together!

Chocolate & Dulce de Leche Fudge⠀
1/2 cup condensed coconut milk⠀
2/3 cups cacao butter⠀
1/4 cup coconut butter (creamed coconut)⠀
1 tbsp peanut butter⠀
1 tbsp almond butter⠀
1/2 cup raw cacao powder⠀
1/2 tsp vanilla extract⠀
3 tbsp tahini⠀
3 tbsp coconut butter⠀
3 tbsp cacao butter⠀
2 tsp agave syrup⠀
1/2 tsp vanilla extract⠀
Time: 25 minutes. Yields: 16 generous fudge bites⠀
Use two saucepans, add all the ingredients to the two different blends in each saucepan.⠀
Melt all the ingredients in the saucepans on low heat until it's liquid.⠀
Pour the chocolate mixture into a mold with baking paper.⠀
Pour the tahini mixture in uneven spots over the chocolate layer and take a toothpick or chopstick to make swirls.⠀
Put the fudge mixture it in the freezer for 20-30 minutes or until the fudge solidifies.⠀
You're all done! Cut smaller pieces with a sharp knife and enjoy! Store it in the freezer for longer shelf life. It will last in the fridge for about 1 week. #letcookvegan
